I tried so hard to resist but…I…just…couldn’t.
So let’s not fight it! We’ll just roll with that big “give me everything pumpkin” cliché that everyone is all about right now and use it as an opportunity to check out 10 of my absolute favorite pumpkin recipes. All courtesy of Yours Truly.
For Breakfast…
Creamy Pumpkin Custard Oats – warm, creamy, filling, and full of pumpkin flavor. The best way to start your day!
Pumpkin Pie Smoothie – for those warmer days when you’re still craving a little pumpkin.
Pumpkin Banana Bread – absolutely delicious warmed up with a little bit of butter on top.
For Lunch/Dinner…
Creamy Pumpkin Pasta Sauce – perfect over pasta, spaghetti squash, veggies, or even mixed in chicken/tuna salad.
Pumpkin Black Bean Soup – an absolute favorite. Make a big batch over the weekend and have it for lunches or dinners all week long.
Homemade Pumpkin Butter – this stuff is good on basically anything. Put it on cardboard and it’ll still taste like magic.

For Dessert…
Pumpkin Spice Cupcakes & Honey Cinnamon Cream Cheese Frosting – one of my favorite pumpkin desserts of all time. The frosting just makes these things amazing.
Pumpkin Spice Cake Roll – a great dessert to bring to your next family party or group gathering. A real crowd pleaser for sure.
Pumpkin Spice Rice Crispy Treats – a fun twist on an old favorite!
Pumpkin Caramel Chocolate Chip Cookie Bars – these things take decadence to a whole new level. Woah.

I love pumpkin bread! My favorite pumpkin item is anything baked good related because I love all of the warm spices that are paired with pumpkin. Yum. In my opinion, it’s never too early for a pumpkin round up!

Other than a late-night slice of pumpkin pie this weekend, I haven’t had any pumpkin yet this season. Last year, I made a skinny pumpkin poke cake for Thanksgiving that was to-die-for and not all that skinny. Have you ever made a poke cake? So easy … happy Thursday! :)

I can’t wait for pumpkin everything! All year long I substitute pumpkin for applesauce in your baked oatmeal recipe and it’s super yummy! I also add a sprinkle of nutmeg and cloves to go along with the cinnamon.
