I’m glad to see that you are all as excited about my Chocolate-Caramel Apple Cookies as I am! I’m tellin’ ya…it is not easy having these babies in the house. :shock:
I have a pretty good workload ahead of me this evening, between school work and house work (it never ends!) so tonight’s post is gonna be a quick one.
I never ended up snapping any photos of breakfast today, but I can tell you that I enjoyed a big ‘ol hunk of my Cranberry Apple Bread, a banana, and a big handful of these goodies.

Today’s lunch was simple but fantastic, thanks to my little combo of Pumpkin Yogurt:
I combined a vanilla flavored Chobani with about 1/3 cup pumpkin, cinnamon, and pumpkin pie spice. I definitely ended up making a “yogurt mess” out of it by adding in some Quaker Oatmeal Squares too. It was decadent. :-P
I also included a little more of the usual suspects…
Workout
After work, I hit up the gym for an awesome workout. I started out by doing 20 minutes of HIIT on the treadmill, using the following intervals:
20 seconds @ 9.0mph
40 seconds @ 4.2mph
It was short (which is what HIIT should be) but intense! I followed up my HIIT with a BodyPump class which definitely has my muscles sore already. Our instructor switched around a few of the tracks today, some of which were tougher than I anticipated. :shock:
Dinner
Done and on the table in 20 minutes…LOVE IT!
I cooked up a box of Annie’s Shells & White Cheddar according to the directions on the box. Once the mac & cheese was prepared, I added in:
- 1 can solid chunk tuna
- 1 can Italian-style diced tomatoes
- 1/2 bag frozen peas, cooked
This was really a killer combo! And really, there’s a ton of possibilities for this dish: just pick a protein and some veggies, and you’re good to go. I’m so excited that I have some leftover for lunch tomorrow. :-D
Alright folks, it’s time to get back to work…and don’t be surprised if a cookie or two gets consumed in the midst of it all.

You can’t really go wrong with a snack called “Powerberries.” I love simple yet scrumptious dinners! I really should try one of Annie’s pasta products.
