Back to Work

Good Morning!  It’s back to work for me this morning…after 11 days off!  UGHH!  Hey, gotta make the best of it, right?  Breakfast this morning didn’t turn out as yummy as I had hoped.  I somehow got a little heavy-handed with my liquids in my bowl o’ oats.  I typically like my oatmeal thick and goopy, so when you look at it, you can imagine it sticking to your ribs!  Mmmm mmmm mmmmmm!

In today’s mix: < 1/2 cup oats, 1/2 cup light vanilla soy milk, < 1/2 cup water (there’s my mistake!) 1 super ripe mashed banana, 4 strawberries, cinnamon.  Microwave oats just don’t compare to stovetop!  Note to self: MAKE MORE TIME IN THE MORNING!  Along with my oats is my FIRST batch of morning iced coffee!  Spring is HERE! 8)

Afternoon posts will probably be nearly impossible during the work week, so luckily I snapped a quick photo last night while making today’s lunch

Mixed romaine with leftover chicken, diced pears & cranberries, some carrot and celery sticks with hummus, and a yogurt.  I also have an orange with me too.  I’ll probably split all of this into 2 mini meals throughout my afternoon.  Then after work, it’s off to the gym!

Change of Plans

So I had a pleasant change of plans this afternoon!  I did get all of my grocery shopping done, and actually feel pretty confident with having some meals planned (ahead of time!) for the week.  We’ll see how that goes!  As I was trying to unload all the goods, my crazy kitty Cody decided he wanted in on the action.  He is always able to find an empty bag!

So on my way home from the grocery store, I got an invite from Mom & Dad to head to their house for some “grillin food”.  I honestly wasn’t in the mood to cook that turkey today, so this was my ticket out!  Dinner was YUMMY at M & D’s tonight!  On the menu was italian marinated chicken, fresh tossed salad, roasted potatoes, mixed veggies, & rice.  Here’s my plate:

It was SO good!  I ate about 3/4 of my piece of ginormous chicken, and saved the rest for lunch tomorrow!

Once I found out dinner was going to be at M & D’s, I knew it was a good excuse to make some dessert! YUM! :-P  I forgot to take a pic of the whole pie, but I ended up making a white chocolate fudge pudding pie.  SUPER easy, and low fat to boot!  I had to improvise with the pudding mixes to go with what I had.

White Chocolate Fudge Pudding Pie

Ingredients:

Crust:

5 reduced fat honey graham crackers

2 tbs. light butter

1/4 cup sugar (I probably used about 1/6)

Filling:

2 boxes fat-free, sugar-free Jello pudding (I had 1 white chocolate & 1 chocolate fudge)

2 cups skim milk

1 tub (8 oz.) fat free whipped topping

Mix pudding & milk together until smooth.  Fold in whipped topping.  Pour into pie crust.  Chill for 4 hours or until set.

It turned out really good!  For being “healthy” all of the family approved…even my picky brother Dan who likes to tease me for my “healthy baking alternatives” ;)

I had a small slice of my pie, along with a small slice of a delicious Apple Raspberry pie that my brother’s girlfriend, Meg, brought to share.

It was a nice evening to get away and relax with the fam. :)  Now I’m trying really hard to psych myself out for getting back to work tomorrow.  I am DEFINITELY suffering from the Sunday evening blues right now!  Relaxing for a little while then heading to bed.  Hope you had a great weekend! :)
