So I was feeling a little lazy this afternoon, and about halfway through the day, I was debating on whether or not I wanted to just skip the gym and head home early. Then, I had one of co-workers come and bring me THIS…

I must say, however, that I tried to keep mindful eating in check, and decided I only needed to eat half. I savored every last morsel of my half, then I gave the other half to a friend. That was NOT an easy task for me! Pat on the back
Nonetheless, my extra treat helped make up my mind to stick with my plans for the gym.
Tonight, I attended my usual Tuesday evening BodyAttack class. I know there’s a large following of BodyPump in the blog world, which I’m also a HUGE fan of, but this is also one of my faves. According to the Les Mills website, “BODYATTACK™ is a simple, high-intensity group exercise-to-music class that’s fully optioned to cater for all fitness levels. You’ll experience high-energy sports training moves for cardiovascular fitness, along with upper and lower body conditioning exercises.” It’s a 60 minute class, that keeps you moving the entire time. It’s a GREAT cardio & strength workout, and helps switch things up from the typical running cardio. If you’ve never tried it, I would highly recommend checking it out!
After getting home and showering, I was feeling pretty ravenous, but Jay and I hadn’t planned anything for dinner (guess I’m off my game from last week?!). So after looking through the fridge, I decided on “Breakfast for Dinner”!
I’ve always LOVED breakfast for dinner, whether it be pancakes, waffles, omelets & toast, home fries…you name it! I was craving some fresh veggies, so an omelet it was!
I started by chopping up a bunch of fresh veggies – spinach, tomato, red bell pepper, red onion, & broccoli. I steamed them in the micro for about a minute just to get them a little soft. I love how the colors get so nice and bright!
To make my omelet, I sprayed a pan with some cooking spray, and added in 1/2 cup of Egg Beaters, about 2-3 tbsp reduced fat shredded cheddar, a sprinkle of dried basil, & my steamed goodies
When I make my omelets, I always like to continue scraping down the sides of the pan, to almost form a “lip”. This helps keep the veggies inside, and also helps keep things sturdy in preparation for the “flip”! (I’ve eaten a lot of SAD looking omelets in my day…the flip is not always pretty!) Luckily, today’s was a success!
Along with my omelet, I had a couple pieces of my whole-grain bread (there’s still a TON left since Jay doesn’t like it) with my beloved Blizzard Butter and some strawberry jelly. I’m a big fan of this stuff!

It’s a pretty safe bet that there will be another soda cupcake consumed later this evening too!

Way to balance out the sweet with a healthy meal! I love breakfast for dinner, too. Breakfast is my favorite meal but I don’t always have time to eat yummy eggs and stuff in the morning.
I agree! I wish I had time for a nice big omelet every morning!
