The rest of my Sunday ended up being pretty relaxing and enjoyable! Mid-way through the day, I started to get a little antsy, feeling like I should get myself moving, but I wasn’t in the mood for just a regular run. Sooo, I consulted my Shape magazine, and found a challenging, 30 minute workout – just what I was looking for!
This workout was jam-packed full of sculpting moves and intervals, in order to keep the body “on its toes” so to speak. It was definitely a challenge, but I LOVED it! :-D For the intervals, I ran a moderate pace of 6.2mph, a fast pace of 7.2, and an easy pace of 5.5mph. If you’re looking for a little something to switch things up, I would recommend giving this quick workout a try!
By the end of my 30 minutes I was sweating buckets!!! Although, maybe the fact that it’s about 95 degrees in our house had something to do with that too.
After showering, I started to get things ready for dinner. I was able to convince Jay on some soft serve tonight (:-D) so we decided to keep dinner on the lighter side with some fresh grilled chicken salads! Jay got to work with marinating and grilling the chicken, and I through the salads together. I also decided to attempt something new – Homemade Croutons!
First, I cubed up a few slices of my whole-wheat bread I bought on Saturday.
Then, I drizzled it with a little Garlic Oil, S&P, and last minute, decided to add a sprinkle of some of this bread dipping seasoning that we had in the pantry.
I placed them on a roasting pan, and threw them in a 400 degree oven.
15 minutes later, they came out lookin’ like this!
In my salad, I had romaine, cukes, grape tomatoes, red onion, green pepper, broccoli, shredded carrots, and dried cranberries. (If you haven’t noticed, the more veggies, the BETTER for this gal!)
It was actually cooler to eat outside, so Jay and I decided to take the meal out to the back porch, where we dined with some pretty flowers. Yes they’re fake, so they’ll always look 100%.
And here it is with the finishing touches! We ended up splitting one piece of chicken for the two of us because the pieces I bought at the store today were ENORMOUS. I probably had a little more than 1/3 of it.
Jay is definitely my Grill Master. He marinated the chicken in some Italian dressing for about 30 minutes before grilling. This chicken was so moist and flavorful…GOOD JOB HUBBY!
So, as I had been anticipating, our evening ended with a trip to one of my fave ice cream places, The Snowman! :-D And I actually FORGOT my camera! :( But, I will tell you that I completely indulged myself tonight and ordered up a nice big ‘ol Flurry! Vanilla soft serve with caramel & cookie dough…it was heaven in a cup. :) And I ate every.last.bite. I debated on letting myself feel guilty about the extra indulgence, but then decided that 1.) I ate well balanced, healthy meals today, 2.) I fit in a challenging workout this afternoon, and 3.) It’s Sunday, and I deserve it!
