Last night’s’ Cinco de Mayo festivities were SUPER fun! We started off with this good stuff…hey, what’s Cinco de Mayo without a margarita??
We got this margarita machine off of our bridal registry!

More festive decor…
I had a couple of these throughout the evening…the mango was my FAVE!
Although as yummy as they were, I think I decided tonight that I like my margaritas better “on the rocks”!
We had LOTS of yummy eats!
Mal made her special fruit salsa with homemade cinnamon sugar pita chips. SO GOOD!
Sarah & Andrea made homemade guacamole & salsa (the guac is AMAZING…I heard the salsa was too, but I wimped out because I heard it had quite a KICK!)
Kate made a PHENOMENAL dish, Chilaquiles Casserole, which she got from Eating Well. I’m definitely making this SOON!!!
I also did my share by breaking out a box of frozen taquitoes, poppin’ them in the oven and served them hot along with everything else! Hey, I made other goodies
I ended up having a piece of Kate’s Chilaquiles casserole, LOTS ‘O GUAC w/ some baked scoops, and some fruit salsa with 2 pita chips. It’s a good thing that everyone was not hanging out near the food, because I’m sure my consumption would have been a lot heavier! To square out my Mexican fiesta meal, I ended with a little big piece of margarita heaven. (I obviously was a little anxious to dig in…)
The cake turned out so moist, with the perfect hint of margarita flavor…all paired with those candied pretzels on the bottom…Mmm Mmm Mmmmmm! Salty + Sweet = The Perfect Pair
It was a beautiful night so we were all able to sit outside and enjoy the weather with good food, good drinks, and awesome company!
For breakfast this morning, I actually woke up craving eggs, which rarely happens! But I went with it and decided to make myself this lovely egg sandwich.
I nuked a 1/2 cup of Egg Beaters (with a dash of dried basil) and topped it with a nice big tomato slice and 1 slice of deli turkey. I also added a smear of the Laughing Cow light Swiss cheese, all on an Arnold’s sandwich thin. I LOVE these sandwich thins, they’re great!
YUMM!
I’m headed to a conference today, so I’m not sure what’s on the agenda for lunch. In case I get hungry mid-morning (which I’m sure I will because that always happens to me when I’m just sitting…) I threw together some fresh cantaloupe, strawberries, and raspberries.
Boy, it is a dreary day here this morning! I want my sunshine back!! 8)
