I just had the most Veg-tastic lunch!
Last night, while making dinner, I planned ahead and also made myself some lunch for today…love when I’m smart enough to think ahead!
I started with a La Tortilla Factory 100 Calorie Whole Wheat wrap. I gotta tell you guys, these things are AWESOME! Most of the time, a wrap can be a hidden calorie bomb, but with only 100 calories, 8 grams of fiber, and tons of flavor, these babies are top notch! Inside, I smeared about 1/2 a wedge of The Laughing Cow Light Swiss Cheese, and then filled the rest with some of my roasted veggies from last night.
This veggie wrap was SO GOOD – I felt like I could have eaten 3 more!
I also had some red bell pepper & hummus on the side.
My lunch was kinda boring to phtoograph this morning, but it was totally yummy to eat! I’m saving my yogurt and orange for a little later today, since I’m feeling pleasantly full and usually like to split my lunches into 2 anyways.
I was so excited yesterday when I saw that I received THIS in the mail!
I totally forgot that when I registered my beloved KitchenAid Mixer back in January after we got it from our wedding registry, that I was also going to be receiving a complimentary subscription to Food & Wine magazine! I’m spending the rest of my lunch hour minutes skimming through to try to find some yummy recipes for next week.
Hey, did you guys know that today is Free Iced Coffee Day at Dunkin Donuts?!? I think I know where I may be stopping on my way home from work today…

I LOVE reading cooking magazines. However, I don’t think I have looked at Food & Wine magazine. Strange because I really enjoy both food and wine:)
I think my husband would kill me if I brought home another magazine. But maybe he would forgive me since the topic is grilling!
Mmm your wrap looks JUST like one of my go-to lunches; i alternate btwn veggie wraps and reduced-sodium veggie soup during the week. I use hummus on my wraps instead of cheese b/c i’m lactose intolerant.
I usually go the hummus route too, but decided to switch it up today. Both are equally yummy!
