Catching Up

Hey guys, did you miss me? 😉

Last night ended up being a later night that I expected, and by the time we got home, I was pooped!  So let me fill you guys in a little with the rest of my Friday…

Yesterday’s lunch went undocumented…we had a “Teacher Appreciation” lunch at school, so I was eating in the cafeteria with about, ohh I don’t know, 100 people??  So I didn’t quite feel comfortable whippin’ out the camera, if ya know what I mean. 😉  BUT, school provided us with a delicious, hot buffet lunch…totally not what I was expecting!

For my lunch, I chose a big helping of salad, some eggplant parmesan, a mini pork medallion with apples & caramelized onions, and some bread & butter.  It was all totally yummy!  THEN I took a trip to the dessert table…

I’d say it was kind of like on tv when somebody stumbles across something like like, everything starts to glow, and you can hear the angels singing, “Ahhhhhh” 😀  Yes, it was that amazing.  I indulged my sweet tooth BIG TIME with a mini pieces of carrot cake, a scoop of some chocolate mocha creamy dessert, 2 chocolate chip cookies, and a bite of a lemon tart.  I was no joke! 😉

For dinner, Jay and I headed out to one of my favorite restaurants that I mentioned on Monday, Lanie’s Cafe!

I love coming to Lanie’s all year round!  When the weather gets warm, they have an awesome outdoor patio to sit out on.  In the fall & winter, they have the inside decorated to the nines!  I’m telling you, I have never seen anything like it.  Even the waiting area is adorable!  And in the winter, they really have the fireplace going.

Jay and I were really hoping to be able to sit out on the patio, but there were 5 parties waiting ahead of us, and the hostess said she had no idea how long it would take.  Which makes sense, because if I had snagged one of those tables, I most likely would have been lingering a little longer. :)  Sooo, we headed inside where there was no wait!

I started my weekend off with a glass of Ecco Domani Pinot Grigio.  And I realized after reading the menu again, that this was actually the same wine that I had when we went out for dinner a couple weeks back.  I feel like I enjoyed it more tonight than I did the last time?  I had 2 of these during dinner.

Then for dinner…ahhh the indecisiveness was in full swing tonight!  I had no idea what I was in the mood for.  So on her third trip back to our table, our waitress pretty much told me it was decision time.  I started off by getting a one-time trip to the salad bar (which is one of my favorite parts of Lanie’s…it’s always so fresh!)  I have no idea where they get their bread from, but it’s fab, especially when you put on that yummy roasted garlic butter that you see smeared on there! 😛

I went simple tonight with some mixed greens, cukes, grape tomatoes, carrots, onions, & homemade croutons, drizzled with a little EVOO & balsamic vinegar.

For my “meal”, I actually ended up ordering off the appetizer menu and decided on veggie quesadillas. When the waitress put the plate in front of me, my jaw must have hit the table.  LOOK AT THESE THINGS! 😯

I think there was seriously enough here to feed a small army!  The quesadillas were filled jam packed with fresh spinach, roasted red peppers, baby artichoke hearts, mushrooms, feta and mozzarella. I really liked how there was enough cheese to taste, but it wasn’t oozing out all over the place.  There was definitely a high veggie to cheese ratio, just how I like it 😀

I ate 1/3 of my enormous quesadilla and wrapped the rest.  I probably could have dug into another piece, but then I would have left completely stuffed and uncomfortable.  So instead, a snacked on a few of Jay’s french fries. ;-P

After dinner, Jay and I headed out to meet up with some of our friends to celebrate our friend, Randy’s, birthday (hence the later night).  But it was a super fun night!

      That wine is a good one! I had never heard of it before…I think I’m going to have to look for it the next time I need a bottle for home :)
      And I think I’d have to say that those quesadillas tasted just as amazing as they look…SOOO GOOD! Just had some more this afternoon 😀
