Well guys, after work today, I was WIPED, so I decided to skip the workout and just chill out on the couch. I weighed the pros and cons of attempting a run, and I realized that it just wasn’t worth it today…no sense in pushing myself into a bigger headache, right? Hopefully I’ll be back to my normal self tomorrow
Luckily, this sinus headache couldn’t keep me out of the kitchen tonight
I’ve been wanting to make this recipe for a couple weeks now, but it just kept getting “thrown to the back burner” (no pun intended!) WARNING – DELICIOUS RECIPE AHEAD!!
Sweet Potato Risotto!
I found this recipe last year from Real Simple (LOVE that site by the way!). Click here if you want to see the whole recipe.
I started by sauteing up some onions in a little EVOO, salt & pepper.
Then, you add in your cubed sweet potatoes & minced garlic.
At this point, the aroma in this house was AMAZING. I love the smell of sauteed onions & garlic…YUMM!
Next, you add in your risotto. I really like the brand I used, which is
Della Gourmet Rice. It cooked up great and wasn’t too expensive either!
After adding the rice, I added in a little white wine, and then it was time to start adding the water. It took about 25 minutes from starting to add the water, until the end. Yes, it is a little more time consuming, but I actually find cooking the risotto very relaxing. Standing there, stirring away, gave me some quiet time to just relax and take in the moment. I wish I had more opportunities to cook like this with no distractions!
About halfway through, the risotto is startin’ to get puffy!
After I finished adding the water (3/4 cup at a time, waiting each time for the previous pour to fully absorb), it was time to stir in the CHEESE and some oregano! Once things got cozy in the pot, it was time for dinner to be served!
This batch turned out so nice and creamy! I really <3 risotto…especially when there’s some sweet ‘taters in there!
I also quickly roasted up some yellow squash, zucchini, broccoli, and grape tomatoes to complement the main dish.
If you decide to make this DELISH dish, just be warned – you’re going to have a BUNCH of leftovers (which is A-OK with me!).
Due to the rain, our softball game for tonight was canceled, so I’m off to catch up with my One Tree Hill that I have DVR’d from yesterday, then it’s early to bed for this girl!

mmmm I LOVE risotto- I actually had never had it until I met Craig- he really liked it & asked me to make it & I was like uhhhh what’s that?! haha!! My favorite was a cheesy scallop risotto that I had on a cruise- SO SO SO good- I was like, more please
