Tonight’s dinner is pretty boring, sorry guys! Jay got home late from work and then he has a softball game, so we didn’t really have time to do any cooking. But, I threw together some His & Hers meals which seemed to do the trick.
Jay put in his order for a chicken salad melt.
I mixed together a can of chicken salad, light mayo, chopped onions & peppers, a little salt & pepper, and some chopped up grapes. I absolutely LOVE grapes in chicken salad. It leaves such a sweet, unexpected flavor which contrasts awesome with the saltiness of the chicken salad. I, of course, had to sample a bite (or 3…) to make sure it was suitable
Luckily, Jay approved!
My dinner was ready in about 5 minutes. I heated up some leftover sweet potato risotto, and mixed in some frozen shrimp that I defrosted.
Honestly, tonight’s dinner just didn’t do it for me. The shrimp were a little to “plain” tasting for my liking, and about halfway through, I decided I just wasn’t in the mood for it anymore. Does that ever happen to you guys???
Well, needless to say, it looks like I’ll be hitting the kitchen again shortly for something else to satisfy me. I’m thinking perhaps a little carbs+PB combo is sounding mighty tasty right now!
I think tonight I may just have to flip on Grey’s Anatomy…I don’t usually watch the show, but boy I’ll tell ya…the previews have been lookin’ mighty intense!
