Is anyone else as psyched as I am that today is Friday?!? Seriously, it couldn’t have come quick enough!

Today’s lunch was totally YUMMY, with the addition of some unexpected “sweet treats” here at work today.
I started off with a delicious salad combo topped off with some leftover sweet potato risotto. I know, I know, I made this forever ago, but I swear it’s still fine! I promise, whatever is not gone after this weekend is getting tossed… Underneath the risotto “blob” is some romaine, carrots, grape tomatoes, green pepper, broccoli, and pickles. Yup, I love dill pickles
I topped off my salad with a quick little homemade vinagrette I threw together last night. I mixed balsamic vinegar, a little EVOO, and some of this bread dipping blend. The parmesan blend is my fave…it was perfect!
Sorry for no photos, but I will let you know that I thoroughly enjoyed a delicious piece of funfetti cake and a small brownie with frosting, which were baked by some of my co-workers today. They were amazing!
I’m super excited for tonight!!
Jay and I are meeting up with some friends of ours at a local restaurant (a 10 minute walk from our house) for the first night of their summer Raw Bar which they do on their outdoor patio. We know the chef personally, and he always puts out such a fabulous spread! So we’re going to be heading down there when Jay gets out of work today for happy hour & dinner. I’m thinking perhaps a bonfire may be in order too?!? We’ll have to see where the night brings us!
