Happy Memorial Day!

Today was SUCH A FUN DAY! 8-)

Before heading over to Sarah & Jeff’s for a bbq, I did a killer workout!  I ended up doing a high intensity interval training workout that I saw a couple days ago over on Jessica’s blog…WOW!

Warm Up – 5 minutes

Sprint @ 9.0mph – 20 seconds

Jog @ 5.5-5.0mph – 40 seconds

Repeat for 15 minutes

Run for 5 minutes @ 6.5mph

Cool Down – 5 minutes

At first I thought, ahhh 20 seconds, no biggie!  But WOAH – this was intense…in a good way ;)

Then it was ALMOST bbq time, but I had to finish up the rest of my goodies! :-D  Thanks again, to Jessica’s blog, I whipped up a batch of some Peanut Butter Pretzel Truffles.

I started by mixing up 1/2 cup chunky peanut butter & 1/4 cup finely chopped salted pretzels.

Then form the dough into balls, about a teaspoon in size.  I got 20 out of my batch.

Pop them in the freezer for about an hour.  Then, you roll them in some melted milk chocolate (I had some Hershey bars on hand from a previous s’mores night, so I used 2-1/2 of them which was the PERFECT amount).

I put them in the cooler on the way over to the bbq to keep them from melting…along with a batch of my Chocolate Butterscotch Cheesecake Cookies!!  Both of them were a big hit! ;)

I of course had to sample one before I brought them out…they passed the test. ;)

Today was the perfect day for a bbq!  We all had a great time hanging out by the pool, chatting, eating yummy foods, & enjoying some tasty drinks.  Here’s a look at the day. :)

Homemade Guacamole (the secret ingredient to making this stuff so addicting…grapes!)

Drunken Melons (Pineapple + Malibu rum…oh yes, ’nuff said) ;)

Jeff firin’ up the grill…we had LOTS of goodies today!

Macaroni Salad & my coooookies

I chose a veggie burger with cheese from the grill, topped with a little ketchup & mustard.  I also had some of Christina’s delicious mac salad & some melons (those were not the “drunken melon” but I definitely had my fair share of those throughout the day!)

Then Andrea broke out her super-cute Memorial Day cake!  And what kind of cake was it you ask?  SODA CAKE!  She used a chocolate cake mix with just regular diet pepsi…it was as moist and delicious as ever. :-P

My piece – I also had one of my cookies which went undocumented. ;)

Some margaritas were making their way around the pool today!  This one was made with fresh blueberries, raspberries, and strawberries.  It tasted fab. :-D

Lots of fun & shenanigans went down today!!

It was definitely the perfect way to end an awesome weekend!  I hope everyone enjoyed theirs as much as I did!! :-D

Love pool pong, we definitely had a few games going during our bbq as well!

LOVE all of your pictures- looks like so much fun :)
& your cookies– YUMMM!!! I also made Jessica’s truffles & they were delicious as well.
