Happy Memorial Day everyone! I hope you’re all enjoying your day, and hopefully spending it with some good friends or family.
So yesterday I decided to take the day off from blogging. We had a couple different parties to go to, and I just didn’t feel like having to explain to a bunch of people I didn’t really know why I was snapping photos of my food.
I’m sure you all understand! But I can tell you that we had a great day filled with lots of fun friends, family, & food. There’s nothing like a barbecue on a nice warm day, am I right? Part of our day was spent up on Saratoga Lake, just hanging out on the party boat, catchin’ some rays, and chit-chatting away. It was awesome!
Fast-forward to today, and I have been “a girl on the go”! Yesterday, I didn’t set an alarm and let myself sleep in until 10:30 (haven’t done that in FOREVER!) TODAY by 10:30, I have already gone grocery shopping, cooked up a batch of roasted veggies to have for the week, baked a batch of cookies, washed a crap-load of dishes, and also made some DELICIOUS PANCAKES!
I saw this recipe last week on Tina’s blog, and knew I had to give them a try. I kept the entire recipe the same, except I ended up throwing in a tablespoon of brown sugar into the mix too. I was surprised when her recipe said it made 8 pancakes, because I got 13 out of my batch! It must be a sign…13 is my “lucky” number.
I threw some mini chocolate chips into 2 pancakes for the hubby, and made about 4 pancakes with some fresh blueberries I picked up at the store this morning.

Delicious Pancakes
Ingredients:
- 1.5 cups all-purpose flour
- 3 tsp baking powder
- 1 tsp salt
- 1 tbsp sugar
- 1 tbsp brown sugar
- 1.5 cups light vanilla soy milk
- 3 oz. plain Greek yogurt (I used Chobani)
- 1 egg
- 1 tsp canola oil
Directions:
- Combine all ingredients in a large mixing bowl.
- Heat griddle over medium heat & coat with non-stick cooking spray.
- Drop 1/4 cupfuls of batter onto griddle
- Cook each pancake for 2-3 minutes then flip. Cook on the other side for about 1 minute.
- Serve with your favorite toppings…ENJOY!
I topped my pancakes with a drizzle of light syrup & more fresh blueberries. You can add 1 more pancake to this plate, because I totally went back for one more. They were SO GOOD! Light & fluffy, not too sweet, with nice crispy edges…just how I like ‘em
We also enjoyed some fresh “margarita iced coffee” with breakfast, courtesy of the hubby, who brewed some up while I was grocery shopping.
In a little while, I’m planning on a nice hot & sweaty run, since I’ve taken the last 2 days off & have been enjoying more treats than normal.
I have one more batch of “goodies” to make, and then Jay & I are headed over to Sarah & Jeff’s house for a barbecue. Seriously, I cannot get enough of these things once the weather gets nice!

Aaahh sounds like a perfect weekend! Glad you’re having such a great time! And the pancakes do indeed look perfect. Crisp, fluffy, full of delicious blueberries!! Love them!
