I am very excited to share tonight’s dinner with you because it comes along with a recipe to share.

I didn’t feel like having to stand over a stove for any lengthy period of time tonight, so I decided I needed to create a casserole. After consulting a couple of cookbooks and piecing together some recipes, I finally created one of my own. I must say, it turned out quite delicious, so yes, I’m going to “toot my own horn” on this one. :mrgreen: When I asked him, Jay proclaimed tonight’s dinner to be “yummy,” but then once I told him I was writing his response on the blog, he decided it was “delectable.”

I’ll just let you guys decide! ;)

Cheesy Chicken & Rice Casserole




Served with some fresh steamed green beans


Cheesy Chicken & Rice Casserole

Serves 4


  • 2 skinless, boneless chicken breast halves
  • 2 cups instant brown rice
  • 1-3/4 cups water
  • 1 can reduced-sodium condensed cream of chicken soup
  • 2 cups salsa
  • 1/2 cup chopped onion
  • 1-1/2 cups cheddar cheese (I used fat-free)


  1. Cook brown rice according to directions on box.
  2. Meanwhile, place chicken breast halves into a large saucepan, and fill with water. Bring to a boil, and cook for 20 minutes, or until done. Remove chicken from water and cut into bite-size pieces.
  3. Preheat oven to 350 degrees. Lightly grease an 8×11 inch baking dish.
  4. In a medium bowl, mix together cream of chicken soup, onion, and salsa.
  5. Layer 1/2 of the rice, 1/2 of the chicken, 1/2 of the soup and salsa mixture, and 1/2 of the cheese in prepared dish. Repeat layers, ending with cheese.
  6. Cover with foil and bake in preheated oven for about 20 minutes, or until bubbly. Remove foil & cook 5 minutes longer. ENJOY! :)

Jay and I barely even ate half of this dish, so it would be good for if you’re having company over, are feeding more than 2 people, OR if you like having leftovers. :)

The hubby has a softball game tonight, but rather than going, I’m going to make it a quiet night at home and try catching up on some reading.

If you haven’t read Eat Pray Love, you should give it a shot before the movie comes out :) I’m thinking about rereading it!

Totally wished my oven worked right now because I would be making that tomorrow. We even have all of the ingredients in the house :( Total bummer. But, I’m definitely making this when it’s all fixed.
I’m reading Stephanie Plum books, by Janice Evanowich- there are a bunch of them, I’m on book 4. They are really funny!

My fav book is probably Eat, Pray, Love. But I also loved Animal, Vegetable, Miracle by Barbara Kingsolver.

I’m reading a rather nerdy book right now. It’s called “Not Another Benign Procedure” by Perri Klass. It’s all about the authors four years in medical school!

I fought it for so long, but I finally gave in and am now reading the Twilight series, and I LOVE it. I’m on the 3rd book and can’t put it down!

I just finished True Colors by Kristin Hannah. All of her books are GREAT – the kind you miss when you are almost done… :)

also Eat Pray Love… if you have not read it yet? I have it, and I’m going to re-read before the movie comes out :)
