Dinner
I am very excited to share tonight’s dinner with you because it comes along with a recipe to share.
I didn’t feel like having to stand over a stove for any lengthy period of time tonight, so I decided I needed to create a casserole. After consulting a couple of cookbooks and piecing together some recipes, I finally created one of my own. I must say, it turned out quite delicious, so yes, I’m going to “toot my own horn” on this one.
When I asked him, Jay proclaimed tonight’s dinner to be “yummy,” but then once I told him I was writing his response on the blog, he decided it was “delectable.”
I’ll just let you guys decide!
Cheesy Chicken & Rice Casserole
Served with some fresh steamed green beans

Cheesy Chicken & Rice Casserole
Serves 4
Ingredients:
- 2 skinless, boneless chicken breast halves
- 2 cups instant brown rice
- 1-3/4 cups water
- 1 can reduced-sodium condensed cream of chicken soup
- 2 cups salsa
- 1/2 cup chopped onion
- 1-1/2 cups cheddar cheese (I used fat-free)
Directions:
- Cook brown rice according to directions on box.
- Meanwhile, place chicken breast halves into a large saucepan, and fill with water. Bring to a boil, and cook for 20 minutes, or until done. Remove chicken from water and cut into bite-size pieces.
- Preheat oven to 350 degrees. Lightly grease an 8×11 inch baking dish.
- In a medium bowl, mix together cream of chicken soup, onion, and salsa.
- Layer 1/2 of the rice, 1/2 of the chicken, 1/2 of the soup and salsa mixture, and 1/2 of the cheese in prepared dish. Repeat layers, ending with cheese.
- Cover with foil and bake in preheated oven for about 20 minutes, or until bubbly. Remove foil & cook 5 minutes longer. ENJOY!
Jay and I barely even ate half of this dish, so it would be good for if you’re having company over, are feeding more than 2 people, OR if you like having leftovers.
The hubby has a softball game tonight, but rather than going, I’m going to make it a quiet night at home and try catching up on some reading.
