I’ve been a busy bee today, hence the reason for my late post – so let’s get all caught up.
I started my morning off with a light breakfast before heading to the gym. In honor of my VitaTops Giveaway, I figured it would be fitting to incorporate one into my meal. I enjoyed my last non-chocolate Vitatop, with a smear of Blizzard Butter on top. It was phenomenal.
I also enjoyed a peach flavored Chobani, mixed with the last of my Honey Vanilla Almond granola. Time to restock.
At the gym, I did an easy 20 minutes on the elliptical, followed by a fabulous session of BodyPump. My gosh that lunge track is absolutely killer! :shock":
After the gym, it was time to do some grocery shopping (was definitely lacking in the fresh produce!). Before anything else, I picked up some post-workout fuel in the form of iced coffee with skim milk. Delicious.
Lunch
By the time I made it home and put the groceries away, it was time to make some lunch. I don’t know, do you guys think I’m having a slight obsession over grilled/roasted vegetables lately?
I spread some roasted red pepper hommus on a whole wheat Arnold Sandwich Thin, and topped it all off with lettuce, Gouda cheese, and some leftover grilled veggies. I am in love with leftover grilled veggies on a cold sandwich.
On the side, I also enjoyed some of these babies: Food Should Taste Good Blue Corn Chips!
This was my first time trying the Blue Corn, but I was totally impressed. They use the same recipe as their Multigrain chips, which were previously one of my favorites. They’d definitely be great dipped in salsa or guacamole dip (*note to self*).
I also threw a peach into the mix, since it was pretty much on its last leg. The little guy started sweatin’ as soon as he came out of the fridge.
Do you guys remember me mentioning the wedding scrapbook that I was working on yesterday? Well, I still have a couple pages left, BUT, I thought I would share some of the pages that were already completed for me by my friends Joelle, Rachel, & Kathryn. I think you guys will agree, that they did a totally impressive job!

Two questions for you:
Maybe I could work on just making it with skim or soy milk. I just hate the taste of plain coffee
1. Do you get flavored iced coffee with the skim milk? I’m trying to cut coffee out of my diet because the creamer has so much sugar, but just can’t seem to make it through the morning without my caffeine
2. The “Food Should Taste Good” tortilla chips — are they salted? That’s another thing I’m trying to cut out, but I can’t live without my chips and salsa haha. So I’m on the hunt for “salt-free” tortilla chips for salsa dipping.

1. Sometimes I get flavored, sometimes not. I’ve been adding a packet of “PureVia” to my coffee as sweetener, since recently getting off the Splenda habit. It’s all natural, so maybe you could give that a try?
2. The chips aren’t salt free, but they are low sodium. I’m going to be doing a full review of the chips in the next few days, so maybe that will help.

Your scrapbook is adorable! I just went through the past 20 months of photos of my fiance & me for our wedding website photo album. I LOVE looking back at old photos and preserving those fun memories.

LOVE the naner nut vita- its prob my fav! the key is microwaving them IN the package, it absorbs all the moisture.. so good!
