Cookies & Cream Cake Mix Cookie Bars

Where did the day go? After getting home from Hot Yoga, Jay and I had plans to go run some errands that we’ve been trying to take care of all weekend, but kept putting off. However, when it came down to it, both of us decided that the errands could wait yet again, and we ended up being lazy bums for most of the evening. ;) We rented & watched Shutter Island which was a pretty interesting movie. I must say though, I did not like the ending. I hate it when they leave you guessing and in suspense! Grrrrr. :shock:

Dinner

My appetite was a little off for some reason tonight(?), so I kept dinner easy and light with a simple sandwich.

A slice of multigrain bread, spread with some The Laughing Cow Light Swiss Cheese, fresh basil, tomato, and leftover zucchini slices from last nights’ dinner.

On the side, I also cut up the rest of the tomato I had, along with the rest of the zucchini. I ended up just eating that right out of the container as I was making my sandwich…it tasted so good. :)

As promised, I owe you guys a recipe for these babies that I did a little teasing with yesterday…mwaaahahaha. ;)

And remember…don’t say I didn’t warn you: They are extremely dangerous and delicious.

Using a cake mix as the base of the “cookie bar” mix, these are a quick, easy dessert that would be perfect for bringing to a party (or a softball game) to share with a bunch of other people. This is not a recipe you want sitting in your house; otherwise, you’ll regret eating the entire pan. (At least that’s what I’m guessing would have happened in this house between the hubby and I.)

First thing you need to do is pick your poison (aka, your cake mix flavor and your add-ins):

Next, you mix together your butter and brown sugar until light and fluffy.

Then add in an egg, and hope that it makes a pretty looking flower design like mine did. ;)

Add in your cake mix, and make sure everyone gets nice and acquainted.

Next, add your mix-ins. For me, crushed Oreos was the name of the game.

And then, since I figured I was feeding a hungry softball team of grown boys men, why not add in some more chocolate?

After baking them in the oven, and giving them a generous helping of Oreo Buttercream frosting (which is my basic vanilla buttercream frosting + more crushed Oreos), these babies were ready to go!

Oh yeah, that missing piece…ummm…not really sure what happened there? Must have been the cookie monster? ;)

The team (and my favorite fans) all agreed that they were quite delicious! So maybe it’s something you might want to make for your next par-tay? Hey, maybe you can even try to figure out a way to health-ify it. If you do, be sure to let me know! :)

 

Cookies & Cream Cake Mix Cookie Bars

Ingredients:

  • 1/2 cup butter

    li>

  • 1/2 cup packed brown sugar
  • 4 tablespoons water
  • 1 egg
  • 1 package white cake mix
  • 2 cups (approx. 12) crushed Oreos (or whatever mix-ins you’d like: chocolate chips, nuts, dried fruit, etc.)
  • 1 cup chocolate chips
  • Oreo Buttercream Frosting (Basic Vanilla Buttercream + approx. 10 crushed Oreos)

Directions:

  1. Preheat oven to 350 degrees and spray a 9×13 baking pan with non-stick cooking spray.
  2. Cream together the butter and sugar until light and fluffy. Mix in water and egg, then stir in cake mix.
  3. Add your mix-ins, and spread mixture into bottom of pan.
  4. Bake for 30-35 minutes. Cool completely before frosting and cutting. ENJOY! :-D

your baked goods recipes are so mouthwatering! not sure if i could make them for myself but i know they’d be hits at parties

I think your and my sweet tooths are very well aligned. Everything you bake makes me die a little on the inside… :p

I’ve done the cookies n’ creme cupcakes before, but never the bars- they look heavenly!

Oh myyyy these look incredible!! Yeah, I’d pick away at them until they were nothing though. I wish my older brother still lived in the house so I could pass everything onto him!!

Shutter Island- LOVE that movie!! Have you seen Inception yet? SO GOOD!

TOTALLY agree w/ you about Shutter Island..I liked it, but hated how it ended. LOVIN’ the recipe. ANother one I’ll use for the party- thanks miss baking queen ;)

Just finished making these cookies and OMG..Sooooooo Good!!! I have to get them out of my house ASAP…my thighs and butt are cursing me!!! I’m sure they will be a huge hit tomorrow at work! Awesome recipe….THANKS!!!

Courtney these Oreo bars are DIVINE! I did make a couple changes though–in the batter, I cut the butter from 1/2 cup to 1/4 cup and the brown sugar from 1/2 cup to 1/4 cup and they turned out GREAT! I also used Reduced Fat Oreos to try and cut down the fat a teeny tiny bit. Honestly, everyone raved about these bars. Thank you so much for the great recipe!
