Too Much, Too Soon

For the past few days, my foot has been feeling really good. Very minimal to no pain, and I’ve been able to complete probably 98% of any exercise I’ve attempted (even though they’ve all been fairly low impact). With that in mind, I decided to switch up my routine at the gym this afternoon with a BodyAttack class. I hadn’t taken a BodyAttack class since the end of April, so I thought it would be a nice change of pace.

About halfway through, I started to feel some discomfort, but I told myself I was fine. I actually pushed myself through the entire hour long class, which probably was not my smartest move. :roll:

Too much too soon my friends, too much.

I really should have listened more carefully to what my body was trying to tell me, but I fell victim to the pressures of being in the middle of the class; I didn’t want to be the girl who has to up and leave halfway through the class. Obviously, that was stupid for me to even consider, but it definitely crossed my mind. Plus, the instructor is so completely motivating (she is phenomenal) that my adrenalin was pumpin’ and I didn’t want to leave!

Luckily this time, I know I’ll be fine. Yes, it’s a little more sore now than it was…I have myself to blame, and I’ll make sure to keep it a little more low-key. Lesson learned.

I guess I’m not too good at this waiting it out thing… :oops:

Dinner

After getting home and showering, it was time to get somethin’ in my belly! After scrounging around the fridge and freezer, I came up with a pretty killer bowl ‘o goodies.

I started out with this…

I also threw in some leftover corn too…I thought it’d add some pretty color to the mix. ;)

I must say, I was quite impressed with how it turned out. Very tasty! And better yet, done in about 5 minutes…WOOT WOOT! :-D

I also had the other piece of Dill Wheat bread that Kate gave me from Sunday. Sooo yummy! Again, I have bread machine envy…

I gotta say, I am beyond giddy this evening…one of my favorite guilty pleasure shows, One Tree Hill is coming back on tonight!!!! (I didn’t even know if it was coming back at all!?!)

 

So if you need me, that’s where I’ll be…vegged out in front of the boob tube watching my show. :)

Heath Bar Crunch Cookie Bars

Heath Bar Crunch Cookie Bars! (see recipe below)

Ever since I tried the Heath Bar Crunch cookie from The Fresh Market last week, I’ve pretty much been obsessed. And that’s probably putting it lightly. Ask me if I got one this weekend on our stop back to get more coffee and pasta…I’ll proudly tell you ABSOLUTELY; and I wasn’t even ashamed to ask the girl in the bakery if there were any extra when I noticed the case was empty. I guess I’m a die hard. ;)

On Sunday, I offered to provide some sweets for our Football party…since they’re already kind of expected from me as it is. ;) I wanted something that would be quick and easy to be able to “grab ‘n eat” while watching the games. So I automatically thought: COOKIES.

However, some days I just really don’t feel like standing in front of the oven, plopping spoonfuls of dough onto cookie trays. Anyone else with me? So that’s where the cookie BARS came into play.

You can never go wrong with a classic chocolate chip, am I right? BUT then again, why not jazz it up a bit? Since I already had Heath bars on the brain, I decided to attempt to my own version of the delicious little buggers who now have me under their spell. :shock:

The Heath bars in these cookies are absolutely phenomenal. And please, don’t go buying actual Heath bars and attempt to crush them up yourself…way too much work. Just buy the bag of the Toffee Heath Bar Bits at the grocery store, and you’re good to go. Oh, and if you’re a chocolate fan like me, feel free to add in extra chocolate chips…life’s just always a little better with more chocolate.

One of the keys to the moist, dough-like consistency of these bars is to undercook them. After 10 minutes, when I pulled mine out of the oven, they definitely did not look done. But TRUST ME, leave ‘em alone until they’re completely cooled, and you won’t regret it. Either will your friends. ;)

Heath Bar Crunch Cookie Bars

(Adapted from Martha Stewart’s Soft and Chewy Chocolate Chip Cookie recipe)

Ingredients:

  • 2-1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 cup packed light-brown sugar
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1-1/2 cups Toffee Heath Bar Bits
  • 1/2 cup semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350 degrees. In a small bowl, whisk together the flour and baking soda; set aside. In the bowl of an electric mixer, combine the butter with both sugars; beat on medium speed until light and fluffy. Reduce speed to low; add the salt, vanilla, and eggs. Beat until well mixed, about 1 minute. Add flour mixture; mix until just combined. Stir in the chocolate chips.
  2. Spray a 10x15x1 baking pan with non-stick cooking spray (a 9×13 pan will work as well). Spread cookie dough evenly in the pan.
  3. Bake cookies 10-12 minutes. They will still be soft in the center. Remove from oven, and let pan cool completely on a wire rack. Cut into desired amount of bars. ENJOY! :)

Is It Lunchtime Yet?

Ok, well let’s skip right past last night’s terrible and disappointing loss, shall we? I don’t know what was going on with my Jets, but they just could not pull it together. I feel bad for my dad and brother who had to witness first-hand down at the stadium and then drive all the way back home. Bummer.

Ahh well. Let’s proceed to more exciting things…like breakfast!

It was another return of Pumpkin Oats. :-D

In today’s bowl:

  • 1/3 cup oats
  • 1/3 cup vanilla almond milk
  • 1/2 cup water
  • 1/3 cup PUMPKIN
  • 1 tbsp. ground flaxseed meal
  • Raisins
  • Cinnamon
  • Pumpkin Pie Spice

I switched things up from the PB route and decided to add some apricot preserves & a small crumbled slice of Cinnamon Date Manna Bread. The Manna Bread was delicious, as always, but I missed my PB. :oops: Lesson learned.

Lunch

I’m not gonna lie…I have been excited about today’s lunch since I made it last night. ;)

A took a whole wheat Arnold Sandwich Thin and topped it with some leftover Healthified Guacamole, lettuce, tomato, cukes, and roasted red peppers.
