Alright folks, it’s Monday, so I’m sure you’re probably expecting to see a “Monday Usual” on the horizon, right?
Ahhh haaaaaa! Looks like I fool you today, because I decided to switch things up a bit! Mwahahaha.
Thanks to having some leftover roasted veggies, lunch was prepped and packed all in about five minutes…what’s not to love about that?!?
I started with a Spring Mix base, topped it with a BUNCH of leftover veggies, some roasted red peppers, and reduced-fat feta cheese.
Simple, yet totally delicious!
I also packed up some Kashi Honey Sesame crackers (which I may or may not have a slight addiction to…)
And a pretty gala apple. I think behind a golden delicious, galas are probably #2 on my list.
I’m definitely excited about this combo today!

I like Fuji apples best! And then Pink Lady or Golden Delicious Mmmmmm

I’m going to have to back the ladies who chimed in with Honeycrisp apples. They’re crispy, sweet, and piece of heaven. Yum!
And – let’s not even talk about how good they are wrapped in caramel. Dangerous but excellent.
