I can’t believe Thanksgiving has already come and went!?! But what a great day.
I’ve got to say, I am so incredibly thankful for all of the wonderful things in my life; one of which is being able to spend holidays such as these surrounded by all those I love the most.
Our small table for 7 was already nicely set and decorated when we arrived at Mom & Dad’s today. Setting the table actually used to be one of my favorite things to do when we had holiday dinners. I was secretly hoping it still needed to be done…maybe for Christmas? (hint, hint)
Before digging into the main meal, we all did some snacking on Jay’s fabulous chex mix…
I think I just may know what his specialties are now…chex mix and omelets.
So so so GOOD!
Even though I snacked on my fair share of those goodies you see above there, I was definitely more than ready when it came time for dinner.
As usual, I dug into a little bit of everything.
But my favorite side dish is the “special stuffing” that my mom makes just for me. It has diced apples & dried cranberries, and is made with mostly chicken broth so it’s not as “heavy” as some other stuffings are; it’s heavenly! And because I’m the only one who eats it, guess who has LOTS of leftovers?? Oh yeah, THIS GIRL!

You can also add two extra scoops of stuffing to that plate. Mmmm Mmmm!
So while we were all sitting around the table chatting, I decided to dare my brother to rip into the chicken leg that was on the platter. Well, Dan never refuses a dare…
It was QUITE amusing and definitely gave us all a good laugh.
After dinner with my family, we headed on over to Jay’s aunt’s house for some dessert.
Pumpkin Cheesecake + Apple Pie
HOLY YUM! The cheesecake was amazing. I really wanted to just dive head first into the whole thing, but I decided that probably wouldn’t be a popular decision amongst the rest of the family, so I abstained.
I also snacked on a few of these little festive cuties, courtesy of yours truly.
I baked up a batch of these Lemon Curd Filled Shortbread Cookies yesterday and into this morning.
They are ADDICTING. And dangerous. So of course I’ll share the recipe with you guys…but it’ll have to wait until tomorrow because I am BEAT!
After dessert, Jay and I met back up with my family and a few friends to watch the Jets game at a local bar. It was an unusual way to end Thanksgiving, but it was definitely a blast…and the Jets WON, so it was a win-win all around.
