Happy Friday everyone!! How are we all doing on this lovely day??
I’m doing great, and that probably has something to do with the fact that I’m about to make someone very happy with a shopping spree, AND I’ve just tried a fun, NEW breakfast!
This morning, I decided I wanted to test out another one of my new iHerb.com products, which led me to choose the Bob’s Red Mill Organic Creamy Buckwheat.

As I was cooking up my new breakfast this morning, I learned some pretty interesting facts about creamy buckwheat.
Did you know…?
- Creamy Buckwheat is a fruit, not a grain, and is wheat free.
- It is one of the best plant sources of protein.
- It’s total dietary fiber content is largely soluble fiber, which is said to help lower cholesterol.

I cooked my buckwheat on the stove, the same way I would oatmeal, using the following measurements and ingredients:
- 1/4 cup dry buckwheat
- 1/2 cup water
- 1/4 cup vanilla almond milk
- 1/2 mashed banana
- 1/2 tsp vanilla
- 2 tsp chia seeds
- Cinnamon
- Raisins
- Tiny blob of PB

To be honest, I wasn’t quite sure how I was going to feel about this stuff to start, but I am now totally a fan! I found that the buckwheat takes on the flavors of what you add to it very similarly to oats. The texture is thicker and creamier than any oats I’ve ever made, but this was also the first time I added chia seeds to anything cooked on the stovetop, so I’m sure that had something to do with it. Talk about, stick to your ribs! ![]()
I’m now really looking forward to having more buckwheat breakfasts. Really excited. ![]()

That looks like a great breakfast! I am always trying to find things with more protein!! What are chia seeds though?

Remember chia pets? It’s those! Haha…but they’re a great source of Omega-3′s and fiber. If you leave them in liquid, they’ll actually for a gel-like consistency. Pretty cool!
I haven’t added chia seeds to anything cooked either but it looks yummy!
