Hey everyone! I’m Julie from SavvyEats, and I’m thrilled to be guest posting for Courtney today. I don’t know about you, but it has been far too hot around here lately for me to want to spend much time standing over a hot stove. So I’ve come up with a list of summery recipes that call for minimal cooking and lots of seasonal ingredients!
GarlicVegetableCouscous. Fresh, light and filled with seasonal produce. Have a little as a side dish or more as a main course.
SpinachandTomatoPasta. For the nights when you want something a little more hearty but don’t want to spend much time standing over the stove.
HeartyRaspberryPancakes. Filling, healthy breakfast filled with seasonal produce. Doesn’t get much better than that.
SmokyCurriedPopcorn. Crunch and airy snack with a fun savory kick.
RoastedGarlicPotatoSalad. Instead of mayo, try using some spicy garlic scape pesto for a twist on the traditional potato salad.
SavvyDessertPesto. If you love pesto and you love mint, you’ll love this. I replaced the basil with mint and the garlic with white chocolate. Delicious with fruit or graham crackers!

My fave low-cook recipe (which is pretty much ALL of mine haha) is 2 minutes peach cobbler – take canned peaches, throw em in a microwave bowl, throw on some granola, stir together and enjoy!
