So Good Shredded Chicken Tacos

I swear, every time I get a new issue of my Cooking Light magazine subscription in the mail, I wind up with a whole renewed desire to cook dinner again. Thank goodness.

Actually, that’s a lie. I just felt the need to slap a picture of him up here this evening. Forgive me. Smile

So while I have my eye on about a dozen different recipes in this latest issue, I decided that tonight I would throw together my own version of their Shredded Chicken Tacos with Tomatoes and Grilled Corn.

While the original recipe called for using a store-bought rotisserie chicken, I already had two chicken breasts on hand, so I quickly poached them on the stove. Once the were cooked, I planned on coating them in some taco seasoning…only I realized that I was out.

But have no fear! Thanks to the lovely thing that is Google, I figured out a way to make my own taco seasoning blend…

Once the corn was roasted and the chicken was done, I heated up some corn tortillas and filled them up with a little seasoned chicken, black beans, the tomato and grilled corn mixture, and some avocado chunks.

AHH-MAZ-ING.

And lucky me…I have leftovers for tomorrow. Wheeeeeee.

To go along with our chicken tacos, we heated up some frozen green beans which were actually kind of rubbery and gross and I didn’t eat very many of them. But I DID eat about four slices of fresh watermelon that I picked up at the store today.

Tonight, hubby has a softball game, so I’ll be heading out shortly to go cheer him on.

Those tacos looks good! Avocado is my fav topping and a must have for my tacos. Fruit is so hard to pick but I think I’d say a peach or nectarine.

strawberries, white peaches, and watermelon top my list for favorite summer fruits! when it comes to taco fillings, I really love the toppings on fish tacos: cabbage, avocado, and sriracha for some spice!!

i noticed you left the jalapeno off, other than that, it looks just as good as the fancy schmancy mag cover!

Berries, berries and more berries are my favorite summer time fruits! I love raspberries, strawberries, blackberries, and blueberries!!!!! Love them all and I make smoothies, pies, crumbles, cereal toppers and eat them just plain! Did I mention that I love them? Berries, berries, berries!!!!!!!!! Yum!

Fave summertime fruit is definitely strawberries! There’s nothing like a fresh picked juicy strawberry!

As long as the taco is full, I’m a happy girl! …The more salad and veggies the better, as long as the taco is FULL no one gets hurt. HA!
I love all fruit, whatever is cheapest and sweetest! :)

mmmmm, I might be doing tacos for dinner now, those look so good!

Avocados+Tomatoes are basically my must-have for pretty much everything during the summer – salads, sandwiches, burritos/tacos, beans-and-rice bowls, as a topping on omelets, pretty much on anything! yum! I also love cheese, sour cream, cilantro and jalepenos, but can do without all of that as long as there are tomatoes and avocados. :)

I love fresh local blueberries, fresh Rainier cherries, white peaches, and good watermelon, and I use to love summer blackberry and boysenberry cobblers and crisps from the berry bushes along the creek behind my parent’s house when I was younger! Then the city ripped them all out because they took over the “greenspace” :(

Now I’m itching to go berry picking!!

Oooo those tacos look so yummy! My fav summer time fruit are definitely mangos and all berries! And I love seasoned chicken, guacamole, sour cream, salsa and stir fried veggies in my tacos! ;)

Watermelon is my fave summer fruit!! I like to sprinkle it with salt….brings out the sweetness.

i’ve been dying to make fish tacos lately! this homemade seasoning sounds pretty stellar! if you have a tjs near you you MUST pick up a pack of their seasoning, it’s super spicy but so good

Omg I’m in love with watermelon in the summer! It’s so awesome…I know several people who hate it and I just don’t understand them. I also know someone who sprinkles salt on it…I’m not sure I would like that haha. Those tacos look awesome! Nice job :). I totally hope I win your giveaway…I’m keeping my fingers crossed

My favorite taco fillings are chicken and sour cream! The ones you made for dinner look like a quick and easy (and customizable) idea! I wish I liked watermelon :-(.

I saw that picture on the cover of Cooking Light and immediately thought that I had to make them! They look SO good!

favorite summer fruit by FAR is the cantaloupe! i’m actually just now starting to get acquainted with watermelon, but i really like it. in fact, my husband and i just did some vodka infused with watermelon AND blueberry. very summery and mixes well with lemonade :)

I love strawberries & watermelon in the summer!

As far as tacos, I’m pretty simple… I usually add some lettuce, cheese, Greek yogurt or sour cream, & salsa!

I love when tacos have avocado in them, chopped or in guac form. Also, my buddy just let me try some of her blackened catfish tacos, and I’m already jonesing to try and make that at some point.

Yup! Coated after poaching, and I just poached it in some water and chicken broth. So easy!
