Oooo Oooo – Merry Christmas Eve Eve (yes, it’s a day I’ve been “celebrating” for years)! I sorta feel like as the day goes on today, I’m going to end up looking more and more like this guy…

I have a funny feeling that there are going to be some cookies in my future today (you’ll see why in a second), so I made sure to take some precautionary measures this morning in an attempt to balance things out.
First up – Workout
I was in the mood for cardio today so I decided to do my Pyramid Treadmill Workout. My latest adjustment to make to that workout is to substitute the 5 minutes @ 6.0mph with 1 minute @ 8.5mph. That way, it shaves about 4 minutes off my time and ups the intensity just a teeny bit more. Give it a try!
Next up – Prep a Healthy Lunch
This actually caused somewhat of a conundrum this morning with breakfast. As I was making breakfast, I also figured I’d prep lunch. I knew I wanted to fill up with lots of veggies and protein, so I whipped up a quick veggie & egg scramble, complete with a melted wedge of The Laughing Cow Light Swiss Cheese.
Well this thing ended up smelling so darn good that I almost switched things up last minute. Thank goodness I didn’t, because breakfast was incredible today. Which brings me to…
Next Step – A Hearty, Healthy Breakfast
Not that this isn’t always the case, but ya know.
Today’s bowl of oatmeal was extra special, thanks to one mini piece of prep work. After I finished my workout this morning, I filled my usual saucepot with 1/3 cup water and 2 teaspoons chia seeds. I let the seeds soak while I was getting ready, so by the time I came out, they were already starting to absorb the water and “puff” up.
I finished making my oats as usual (topped with some more Love Blondies) and was left was a fluffy, voluminous bowl of deliciousness.
Last Step – Lots of Water!
I loaded up my water bottles today and plan on making several trips to the bathroom chugging like it’s my job.

I find myself getting greedy and wanting “more,” and when I reflect I always feel so silly because I truly am so lucky to have the wonderful life that I do. I am thankful that my mom just had hip surgery, and while she will be recovering during Christmas (which makes for a very light Christmas this year), she will be super healthy for 2012 and stop walking with that damn limp she’s had for years! This may seem like a cop out on a blog about healthy living, but I am truly thankful for my health this holiday season. This year, a close family friend was diagnosed with an aggressive form of esophageal cancer that requires intense chemotherapy. He was in the best shape of his life, running every morning and achieving his “college weight,” when suddenly his life completely changed. Luckily he has incredible faith in God, an amazing wife, and three beautiful children who will help him get through these tough times, but his story truly makes me appreciate each day that I am able to get up and exercise.
I am thankful for my faith, my family & my improving health! Thank you for being a major motivator! Merry Christmas, Courtney!

my grandmother unexpectedly passed away on what will be exactly two weeks two the day before christmas. After the shock of her death settled, many of us found orselves asking the question of what to do for christmas. My grandmother was christmas, and it is just not going to be the same. WHile her passing has been no means easy, i think that there is something to be taken from every situation (good and bad). My grandmother`s sudden and unexpected death has taught me to appreciate a little more the beaultiful blessing of life. I think that sometimes it is, in fact, the fragility of life and the unexpectedness of death that makes our existance on this earth so precious. While it is not uncommon to become caught up in fear when faced with the prospect of death, i have learned that nothing is certain. Things are constantly changing and there is no way to predict when our time might be up. With that said i think that it is important to focus on living life to the fullest, this christmas in particular, as we attempt to come to terms with this sad event. Life is beautiful. I am so thankful to have been blessed with a beautiful grandmother whom i have shared many great memories with. I am also so very thankful for my loving family and how close we have become in this time of sorrow. merry christmas courtney love your blog

This year I am grateful to be home celebrating with my family and my husbands family. Last year we had just gotten married and spend Christmas on a cruise for our honeymoon. It was amazing but it wasn’t the same as celebrating with family. I am also grateful for the relationship I now have with my brother and his wife. As they gear up to move across the country again. I’m glad I don’t feel like I am losing either of them during this transition.

First of all I have to say how excited I am to see that you are giving away your home baked cookies! I have been drooling every day that you post a new one!
My step-father passed away in March of this year while on a cruise with my mom. My mom has had an awful time dealing with this and I am so thankful that she is able to come to Wisconsin from Florida and spend time with all of the family here that love her so much. My mom is my best friend and I am so lucky and thankful to have her in my life.

Even though I lost my job of 25 years, I am thankful to have had this time to spend more time with my husband and daughters. Never realized how much time I spent on work and not enough with family. Do miss the paycheck but you learn to think more about your purchases.

I am thankful that my husband and my families live so close, although my husband won’t be home until monday morning and has to work new years eve and new years day (he’s a firefighter and picked up extra time), I still have our families to spend the holiday with.
