Lightened Up & Loaded Spaghetti Pie {Plus a Giveaway}

So tonight’s dinner? Oh lawdy…where do I even begin?


For the past week (at least) I’ve been waiting for an opportunity to cook up a real dinner, and tonight I finally got my chance. I was browsing around in our fridge to see what we had on hand that I could incorporate with a box of this Barilla PLUS spaghetti.


I was sent a few boxes of the Barilla PLUS pasta a couple of weeks ago and had been eager to try it out ever since. So after rounding up a few key ingredients, and remembering an idea I had not too long ago, I threw caution to the wind and did a little experimenting.


Gosh, I love it when experiments turn out even better than you hoped for. Winking smile

This was my first-ever attempt at a “spaghetti pie,” but I can now tell you that this is one of the best things going. Seriously. It almost reminded me of a cheesy pasta dish, slash pizza, slash lasagna all rolled into one…and who doesn’t like that?



To balance out the pasta and cheese in this dish, I made sure to add plenty of fresh veggies and some chopped up chicken sausage for added protein. When they came together?


Well, it was like heaven on a plate.


I honestly didn’t measure much of anything while I was making this, but here’s a compilation of what I’m pretty sure is about the same.

    wow! that looks amazing! i do love a good marinara but as weird as it sounds. cold spaghetti with ranch dressing. kinda like pasta salad. sounds weird, I know! loved it when i was little :)

    I like to add some soy crumbles to pasta sauce, spinach, garlic, and pepper. Then heat it up, and put over pasta. Nutritious, simple, and good!

    The best pasta dish I’ve ever had was a papperdalle pasta with tons of seafood. I also made a great Greek pasta once- pasta, chicken, feta, tomatoes, red onion, and greek olives.

    Yum!! My favorite pasta is angel hair tossed with shrimp, tomatoes, artichokes, sauteed garlic and onion, a bit of olive oil, balsamic vinegar and basil. Another winner :)

    My favorite way to eat pasta is smothered in my family’s sauce recipe. It combines the usual: ground beef, onion, garlic, oregano, whole tomatoes, tomato sauce…and a few less common items: Parmesan cheese, bacon grease (to cook the ground beef), and it is tasty!

    My favorite way to eat pasta is in mac and cheese!! I try to healtify with using laughing cow or reduced fat ricotta w reduced fat cheddar, whole wheat Barilla, and adding spinach or broccoli.

It doesn’t have homemade sauce or freshly made pasta or anything, just a box of pasta, canned sauce, and ground beef……but it’s amazing!!! Reminds me of family dinners growing up when we would all be together at the kitchen table!!

    I love my pasta with homemade sauce!! I load my sauce up with all sorts of goodies! Crushed tomatoes simmered with mushrooms, bell peppers, onions, zucchini, egg plant, TONS of cilantro, a few spices, and whatever ground meat I have on hand!

    When I was in college and pasta was pretty much all I could afford, I’d get the whole wheat kind (didn’t matter what shape. Not picky), and then carmelize onions in garlicky olive oil and add cheese. It was my go-to dish whenever I had people over and I became known as the pasta queen. Love pasta! :-)

    I love Barilla Plus, I buy it all the time! I can remember growing up, I hated red sauce on spaghetti night (crazy bc I love it now!) so I would always eat just noodles with butter and parmesan. It’s definitely a guilty pleasure that I still indulge in from time to time!

    I’ll just cook the pasta , cut up a burger (whatever kind i have) and mix it in the noodles with ketchup…i know it might sound weird but when your in a rush and need something it’s pretty good.

    When I used to live in Buffalo, one of my fave restaurants was called “Chef’s” – a small little hole in the wall Italian place. They made the BEST spagehetti parm – basically pasta mixed in their homemade sauce, and covered in mozzarella cheese, then broiled to crisp it all up on top. Its so simple, yet out of this world! I try to re-create it every now and then, but never come close…

    We eat pasta all kinds of ways at our house, but I still crave and have to make…..good ol’ stove top Mac N Cheese: butter, melted velveeta and a splash of milk. My Grandma used to make this “homemade” MAC N CHEESE for us and it’s still just as good as when I was a kid.

    My favorite way to eat pasta is as a way to use up leftovers… I cook up some pasta then throw it in a frying pan with some olive oil and add whatever leftover veggies and chicken i have, plus a little feta or goat cheese and its a nice way to make leftovers a little more interesting!

    I love pasta. I don’t like seafood pasta sauces but beyond that I love it all! Especially mac and cheese. Whenever I am in the south it is a must have for me.     I love to roast veggies when they are about to spoil and toss them with some pasta, olive oil, and parmesan. It is a staple in our house since we have a CSA membership and only two mouths to feed!!!

    Well, I hate to admit it, but I eat pasta cold! I fix for my family (spaghetti or ziti, ot penne), they eat it hot and then I put it in the fridge and have it for lunch the next day cold! Don’t eat it when it’s hot, weird, I know!

    My favorite and easy way to eat pasta is to saute some peppers, mushrooms, and onions with some sliced flavored chicken sausage, cook the pasta and mix a cup of cooked pasta and a cup and a half of the veggie chicken mix in my favorite bowl – yum. BTW, I make a point of buying Barilla because they opened up a huge plant near where I live in western NY and brought some much needed job opportuntities to this community.

    I love to prepare pasta with a homemade sauce. It’s a little extra work but so worth the result. My favorite homemade sauces are marinara meat sauce (w/ ground turkey!), roasted red pepper and goat cheese Alfredo, and pesto. Yum!
