Hey hey! How’s everyone’s Wednesday going so far?
Want to know something cool? Today is actually a pretty special day for me and Jay, since it’s our dating anniversary. It was on this day, December 5th, 13 years ago, that Jay and I officially became boyfriend and girlfriend. Yep…thirteen whole years ago. Almost half of my life.
That photo right there was taken about a week after we starting dating…ohhh, gotta love the awkward high school year photos!
And I believe this photo was taken right before we started dating, but I honestly don’t remember. I also have no idea what was happening out in the car, but that makes me laugh.
When both of us were into dying our hair blonde.
I just love how we have so much history, and I would not give it up for anything. I just love my guy. xoxo

Okay, okay, enough mushy talk.
Let’s get to some food for today. Yesterday’s cereal combo was so good that I had to have it again today.
The only bummer is that I’m now out of blueberries. Boooo.
Mid-morning I was out running a couple of errands and got struck with hunger. Thankfully, I replenished the purse snacks and had a Clif Z Bar.

A few hours later I put together some lunch. I had actually been craving a peanut butter and banana sandwich all morning long, but when it came down to it, I suddenly wanted cheese…of the grilled variety.
So I made another grilled cheese with turkey bacon, tomato, and spinach. I actually burned the crap out of the bottom of that sandwich, but it still turned out tasty as ever.
I’m now fresh out of provolone and spinach, so it looks like another trip to the store will have to happen pretty soon.

“Mini Pizzas”
Get a loaf of French bread and slice into ~1/2 inch thick slice so you aheva bunch of little rounds
Place a slice of brie on each and a slice of pepperoni on top of that
Spray a cooking sheet with cooking spray arrange the “pizzas”
Bake at 325 degrees until the cheese starts to slightly bubble, pepperonis toast slightly on edges
= Approx 10 minutes
You want to serve warm/hot but can do the prep work before and easily pop in a batch here and there while entertaining

Being from the south, I grew up making party dishes with lots of mayo sour cream in them. One of my favorites is cream cheese chili chip dip. All you do is smear the cream cheese in the bottom of round pan, add a can of chili on top, add shredded cheese and cook until the cheese is melted. So yummy, but not so healthy haha

My go to tailgating dish takes one of my favorite southern treats (deviled eggs) and turns it into a dip. I hard boil the eggs, set them aside and mix up mustard, mayo, sweet pickle relish, salt pepper and depending on the crowd, hot sauce and/or bacon. Then I peel and cut up the eggs and mash the mix together, just like you would with just the yolks in regular deviled eggs. Then of course sprinkle paprika on top! Can even put in center piece of deviled egg tray with the veggies and crackers surrounding

My favorite game day snack is Texas Caviar! So delicious! Filled with corn, black eyed peas, bell peppers, onion, celery, and pinto beans it is to die for! Everyone loves it! The dressing is apple cider vinegar, some sugar, salt and pepper! Simple, yet divine! Knorr Veggie Dip in a sour dough bread bowl!
1 package of Knorr Vegetable Mix
16 oz fat free sour cream
1 countainer Helman’s mayo dressing
10 oz frozen spinach
Thaw the spinach. Mix all the ingredients. Chill for at least two hours. Serve!

OOOOO!!! i love all gameday foods; nachos, wings, mini corn dogs, you name it! by far my favorite is a good dip though, and Crack Dip is the BEST!!! Take a can of refried beans and layer it in the bottom of a caserole dish. Mis softened cream cheese with salsa and layer that on top. Then top that layer with shredded cheese and jalepenos and bake/broil till the cheese melts and everything is warm. It’s best served with those scoop corn chips….MMMMM so yummy!!

Ok honestly chips queso and salsa are some if my favorite game time snacks but I always make this amazing cold veggie pizza that is always a hit!

What a cool book! My favorite Gameday dish is 7 layer dip. I keep it light with fat free sour cream and loads of veggies, plus some extra peppers for kick!
