Work Surprise, Date Night, Freezer Meals, & Pool Problems

How’s that for a loaded post title?

Mornin’ friends! How was the weekend? Awesome, I hope?

Well since I last chatted with you all Friday morning, I have a few things to catch you all up to speed on, starting with Friday afternoon. I’ll tell ya…I have some amazing co-workers.

I was completely thrown off guard with a surprise baby shower at work on Friday! Complete with adorable decorations, the most amazing cupcakes I think I’ve ever had (no joke) and some incredibly generous gifts. It was such a sweet, unexpected gesture and was so much fun. I think the next thing on the agenda at work is to start up a pool for when I’m going to deliver. Hey, if someone can make money off of when I deliver Baby Tooth, more power to ’em! 😉

Friday night, Jay and I did make it out for our date night (despite the fact that I may or may not have been falling asleep on the couch a bit beforehand). We didn’t want anything fancy and really just wanted to be able to sit outside, so we decided to try out a new-to-us spot called Uncle Marty’s Adirondack Grill.

After a quick wait at the bar (and me being offered a drink because the bump was in hiding, ha!) we got our table out on the covered patio…and almost immediately ordered the pulled pork nachos.


I had already been told great things about these nachos and ohmygod they were incredible. Jay and I said we would go back just for the nachos and drinks. They were SO good.

Even though we basically housed the nachos, we still had ordered dinners – a southwest chicken wrap for me.


It was good, but for whatever reason, that thing had my mouth on FIRE (the homemade salsa). This is actually amusing because I ate my other leftover half and fries for dinner on Saturday and it wasn’t nearly as spicy as it tasted on Friday. Who knows…

On Saturday, I kind of fell off the radar. I spent the morning out running a few errands (grocery shopping and buying maternity bras – WOO!) but didn’t feel too hot for the rest of the day (I think the heat had something to do with it). Jay was out golfing in a tournament for a majority of the day, so once he got home, we really just laid low and didn’t do a whole lot. He also put the other AC unit in, which seemed to help my nausea and overall BLAH feeling, which was good.

Sunday, I woke up feeling muuuuch better. We enjoyed a simple, lazy breakfast and then I got to work in the kitchen and got not one, but TWO freezer meals complete.

On the left is Roasted Veggie Mac & Cheese and on the right is Chicken and Black Bean Enchiladas. I’m thinking both of these are going to be mighty tasty once Baby Tooth is here, and I’m so glad that I’ve been able to get a few of these together so far. We’ll see how many more I can bust out in the next couple of weeks. 😉

Sunday afternoon was spent working outside, mostly with getting our pool open…FINALLY. The good news is that we got the pool open, it wasn’t super green, and we had no dead animals floating around (minus some nasty worms).

The bad news is that the motor to our pool pump is shot, so we can’t technically get the pool running yet. Luckily Jay found the motor on Amazon for a somewhat cheaper price (sheesh!) so hopefully we’ll have things up and running by the end of the week.

After spending the majority of our afternoon working up a sweat outside, we came in, showered up, and got to work on dinner. Yep…I got my pizza on the grill! And check out how odd and random that thing is…

They didn’t have the dough balls that I typically buy at the store, so I wound up buying a can of the Pillsbury whole grain pizza dough. It tasted good, so that was no problem, but it gave us a little bit of trouble with the initial transfer to the grill grates. No worries though…that bad boy still tasted deeeee-lish.

We went bbq chicken style, topped with bbq sauce, mozz, chicken, and grilled onions. I had two pieces for dinner along with an ear of corn on the cob which, if you haven’t already noticed, has been a huge favorite of ours lately. YUM.


And that, my friends, pretty much sums up my weekend! It went by way too fast, as always, but it was a good one at that.

Now it’s back to the grind today…hope everyone’s week is already off to a great start!

    That’s so sweet your co-workers threw you a little baby shower!
    Those nachos do look all kinds of fabulous. I love when places load on the topping, I mean no one wants bare looking nacho chips.
    Hopefully the pool gets running next weekend, it will be so nice to have that up again this year.
    I so need a pool.
    And your grilled pizza looks so good! I love grilling in the Summer – probably what I’m most excited for.

    I am going to borrow both those ideas for freezer meals to make before baby comes too. I know all my friends say its the number 1 thing you need after baby so I better get cooking :)
    Highlight of my weekend? Probably shopping for my baby girl, now that we know the gender I cannot keep away from the cute clothes, eeek!!
    I felt off yesterday so stayed low key too except when we went to our prenatal yoga workshop.

      How fun!! I was the same way after we found out the gender…it’s so hard NOT to go out and buy a ton!

    Thursday was mine and my husbands 4th anniversary. While we didn’t celebrate during the week, we did manage a kid-free weekend to celebrate. Friday we had dinner, then rented some movies and stayed in. On Saturday, we went to our new favorite restaurant, Ooka Habachi. Since we were the only 2 at our table taking the squirts of sake, our guy was pretty liberal. I swear, at one point the guy was pouring sake in my mouth for 30 seconds (he counted). After dinner, we decided we needed to wait before driving, so we walked down the street to Cheesecake Factory. I’ve never had cheesecake there before, so we ordered some (Lemon Raspberry for me). We actually wound up having dessert with my hubbys high school girlfriend, who is currently teaching our kids how to ride horses, and her new boyfriend. Lol.

    TL;DR Had anniversary weekend with hubby.

    This may sound really dumb but did you cook the dough in the oven first? I have the same pizza dough but we were thinking we couldn’t use it on the grill. You may have solved my problem!

      Nope! We always throw our raw dough right on the grill. Nice and easy…it just may look a little funky 😉

    When you said someone should start up a pool on what day you’re going to have Baby Tooth it reminded me of the FRIENDS episode where Phoebe and Monica keep betting over and over again on when Rachel’s going to have her baby! :) Hahaha

    By the way, the roasted veggie mac and cheese look AWESOME! My mouth is watering just looking at it :)

    I’m the -biggest- wimp when it comes to spicy foods. I don’t know what it is, but I think my tongue goes into self-defense mode right off the bat because after a few bites I completely lose my sense of taste 😆 Those nachos really look incredible, though… aaaaand now I’m craving Mexican and it’s not even 7:30 AM yet.

    Sounds like you had a fun-filled weekend with lots of delicious eats! I’m digging those nachos and veggie mac and cheese. Yum!

    On Saturday, my family came over for a picnic and yesterday my husband and I went out for lunch and enjoyed the gorgeous weather!

    My boyfriend and I traveled out to Holland, NY with some of our friends for an afternoon of racing. My boyfriend and his best friend race stock cars. This was their first time racing at Holland Speedway. It was a HOT afternoon in the sun, but we had a good time. The only bad part – getting home at 2:30 AM. We live in the Tug Hill region of NY and was a four and a half hour ride one way! Talk about a LONG day …

    Annnd now I want pizza on the grill. 😉 I’m going to have to talk to my husband about that one!

    My mom came in to town this weekend from Florida, so she watched Addie on Friday so that Brandon and I could have a date night. Date nights are shorter these days because I have to get back to feed her/swaddle her, but time with my husband is still always appreciated!

    Those are some impressive freezer meals! How smart to make them in the disposable tin trays. I’m guessing you have an insanely organized freezer unlike mine that is a mess with meals and leftovers.
    This weekend, my husband and I came home with our baby girl Finley! It was a very exciting and fun weekend…and only a little exhausting :)

    I’m a huge fan of freezer meals. I usually make up a 2-3 on Sunday each week and then just defrost single servings throughout the week. The best part is finding a delicious dinner hiding in the back of the freezer with NO work ! :)

    Ok, now I’m seriously craving grilled pizza and it’s like 10 AM.
    The hubbs had a conference in St. Pete, Fl this weekend so while he was there, I saw some of the sights. St Pete actually has some really nice museums! The Dali museum was probably my favorite though.

    It’s so nice having sweet coworkers! What a wonderful surprise!

    We went swimming this weekend for the first time this summer and it was so nice in the 90 degree heat.

    The freezer meals looks delish! Just one word of caution to you…if you are breast feeding you may want to stay away from leafy veggies and anything really spicy until you know how your baby will handle it. My daughter was 4 weeks old and someone brough over a veggie dish and I went to town on it…only to pay big time 4-5 hours later as my baby cried in pain then finally projectile vomitted due to a a belly full of gas. BOO! All babies are different…just sharing my experience with you!

    Aw, how sweet of your co-workers :) All that food looks super good! You’ll defiantly enjoy it when Baby Tooth comes. I can’t remember the last time I had BBQ pizza, I honestly think it might have been when I was in elementary school lol.

    I love surprises which are not expected at all! It’s nice to work in a place where people care enough to do something like this! All of your food pictures are making my mouth water especially the grilled pizza and corn on the cob. There’s something about corn on the cob which just tastes DELICIOUS! I’m glad you had a great weekend and got a lot of things accomplished before the baby arrives soon!

    That’s so sweet that your coworkers threw you a little baby shower/surprise! My mom’s workplace always makes a baby pool for pregnant coworkers (she’s a teacher who works with mostly women and they’re all good friends). They pay $1 for every “bet” they make and typically all of the money goes to the new mom :)

    What a bunch of nice co-workers!! I bet you are just counting down the days. I have a feeling you will go early which isn’t a bad thing esp with this heat lately. We have a pretty nice weekend here, laid out and got burnt on my shoulders but no where else…haha!

    Just wanted to share with you one of my freezer meal tips: I usually use disposable loaf pans to freeze the meals in. The size is perfect for 2 people, it doesn’t take nearly as long to defrost, and then you aren’t stuck eating the same meal for 4 days.

    I already wish that we had a grill, but now I do just for the purpose of grilled pizza – that looks so good!
    Weekend highlights for me were just relaxing and hanging out with the boy and the pug…the Thai food and froyo thrown in were also pretty fabulous!

    I think it is time for you to go on maternity leave! Sit pool side with a nice drink with an umbrella, read In Style magazine, and get a wonderfully tanned big belly, and then, when you are sufficiently rested you give birth, put the little one in a bassinet (with its own umbrella) and continue lounging at the pool. :-)

    What a sweet surprise from your co-workers!! And those cupcakes do look really delicious!
    I am with Silvia, you should absolutely go on maternity leave and spend it right by the pool until the little guy arrives.

    Nick and I stumbled upon to the most amazing party/ LGBT parade on Saturday and unexpectedly spent the whole day celebrating outside.

    Silly question, I was just thinking that the frozen meals are a terrific idea and if I get pregnant, I would absolutely do the same. However, how do you fit everything in your freezer? Did you buy a second one? Or are you outsourcing?

      Haha, we’re still in the regular freezer for now but we’re definitely planning on getting a second one because we’re running out of room quick!

    So many yummy eats!! Looks like a great weekend!

    My about 40 of my friends did a baby pool for me and let play along as well. I realized that I’d made a typo on my first entry, so submitted a second one….aaaand the prize went to the 3rd place guesser because I ended up coming 1st AND 2nd place in the pool. Hahah!
