Ohhh, yesterday was such a great day! Beautiful weather, day off of work, entire day with my hubby, yummy food, and awesome shopping finds. A total winner, if ya ask me.
We started off our day with a nice big breakfast. Eating breakfast out has to be one of my favorite things ever, but we hardly ever get the chance to go so this was great. We decided on The Eatery at Carol’s Place which we’ve been to a couple of times.
I opted for a 2-egg scramble with spinach, onions, and tomatoes with wheat toast and fresh fruit. Ohmygod it was sooo good. I need a breakfast like this every. single. day. If only.
After breakfast we were off to Massachusetts to visit the Lee Outlets!
The two of us spent about five hours at the outlets, walking through all sorts of different stores and trying on lots of different clothes.
That was one outfit I didn’t buy but kinda wishing I had.
Before heading back home for the day, we stopped in the food court to grab some lunch. A turkey sandwich with lettuce, tomato, cheddar, apples, and honey mustard did the trick for me.
It was a big sandwich, but all that shopping worked up quite an appetite so polishing that monster off was no problem-o. Then it was time to hit the road with all of our goods!
Speaking of goods…
I made out SO much better than I had anticipated (I really, truly needed to update my wardrobe), and found all sorts of new, fun spring items.
On the left is VanHusen (which was a totally unexpected store all together – I had no idea they’d have anything I liked?!) and on the right is Gap.
Then there was Banana Republic…
And, finally, we couldn’t leave without picking up a few – err, more than a few – items for the little guy.
Since he’s slowly growing into 9 month clothing, we realized we actually don’t have that many outfits for him in that size, so we stocked up. And we bought baby sunglasses and flip flops. Cannot wait to put both of those on him. Seriously, adorable.
By the time we picked up Mr. Lucas and came back home, I was in need of a little snack. Lucky for me, we still have some apple bread in the house that I could snag quickly.
Ohhh, yes. This apple bread. The recipe for this delicious, quick bread is actually one I’ve had since the seventh grade. There was a brunch menu that we were in charge of putting together in my home economics class, and this recipe was one of ‘em (along with my overnight French toast and egg strata).
Yup. Seventeen(ish?) years later and I’m still making those scrumptious goodies.
But anyways…this apple bread? So awesome. And just check out that cinnamon sugar crust. Mmm mmmm…that’s what I’m talkin’ about.
The other cool thing about this recipe is that it yields two loaves, but can easily be halved so you have just one. However, I’d highly recommend making the two loaves and freezing the second. It freezes really well (I wrap in foil then put in a gallon bag) and it’s always such a treat when you find it in the freezer a couple days/weeks/months down the road.
This has long been a favorite of mine and, hopefully, it’ll become one of yours too!
Old Fashioned Apple Bread
- Prep Time: 10 minutes
- Cook Time: 50-55 minutes
- Yield: 2 loaves
- 2 cups peeled, cored, and chopped apples
- 1/2 cup butter, softened
- 1/2 cup unsweetened applesauce
- 2 cups sugar
- 2 beaten eggs
- 1 cup milk
- 2 cups all purpose flour
- 2 cups whole wheat flour
- 1 tsp cinnamon
- 1 tsp salt
- 2 tsps baking soda
- 2 tsps baking powder
- Cinnamon Sugar topping (optional) – 2 tbsp sugar + 2 tsp cinnamon
- Preheat oven to 350 degrees F.
- With electric mixer, cream butter, sugar, and applesauce together.
- Add eggs and milk to creamed mixture.
- Measure dry ingredients (flours, cinnamon, salt, baking powder and soda) and sift into creamed mixture.
- Add apples then stir and mix thoroughly.
- Pour batter into two 9×5” loaf pans sprayed with cooking spray.
- If desired, sprinkle with Cinnamon Sugar topping.
- Bake for 50-55 minutes or until toothpick inserted in center comes out clean. Enjoy!
