Because I guess that really is what this blog is about, right?
I don’t tend to blog too often anymore about my day to day, but every once in a while, it’s nice to just check in with a random, casual, “here’s what’s up” type of post. I ended up having some pics that I took from yesterday, and figured it’d be fun to share a little bit of everything.
Due to some last minute circumstances, I ended up having to work from home on Monday. Not that I mind at all – it gives me some extra time with Lucas, and it also allowed me to put together a lunch that I probably wouldn’t have, had I packed something up to bring to work.
I was able to eat a mash up of a lunch, including some leftover chicken nuggets, a hardboiled egg, some avocado, cucumbers, and tomatoes (some eaten before the photo was taken). This meal took about .2 seconds to put together but, man, it was delicious. I’m sure the added Vitamin D in the form of sunshine probably had something to do with it.

Cody has been Snuggle McSnuggleson lately, and we’re actually wondering if he hasn’t quite been feeling well.
Although he’s been acting fine around us, we’ve noticed that he’s actually been throwing up a bit in our basement. Poor guy…we’re keeping an eye on him and, if it continues, we’ll likely have a vet visit to schedule. I’m calling “not it” on taking him this time, though!

Workouts have been great lately. I haven’t really blogged much about them, just because they’ve been fairly consistent with what I’ve been doing, but I’m feeling good and still averaging about 5 workouts per week. The past couple of weeks, it’s mainly been a mix of T25, Insanity Max: 30, and PiYo…yesterday was some T25 upper focus!
In the past year, Beachbody workouts have seriously changed my workouts in a totally amazing way. Since I haven’t had a gym membership in over two years, and have been crunched for time, I’ve needed something that is quick and efficient AND can be done from home. I’ll continue to shout from the rooftops just how much I love these workouts!
**********
I packed myself a few lunch salads on Sunday and while it’s been great, I forgot to add the avocado AND pack salad dressing yesterday, making for one…disappointing salad.
Okay, I guess I’m actually stretching that one a bit. It wasn’t that bad…but for those of you who actually enjoy eating salads sans dressing, I don’t know how you do it.
**********
I wore my funky bicycle Stitch Fix top for the first time yesterday (it came in last month’s fix) and actually got a few comments on it, so I guess it was a good keep!
Of course, I managed to get not only my breakfast smoothie on it, but even some juice from Lucas’s raspberries. Go figure…and thank goodness for Tide sticks. Everything came out no problem-o.

Somebody was in a bit of a “mood” yesterday after getting picked up from daycare. Pair that with a mama who was already feeling a bit stressed, and that called for some pre-dinner wine.
Two glasses later and mama felt muuuuuuch better.

I know I typically wait to share most of my dinners with you guys until meal plan Sundays these days, but I just had to include this one.
Jay and I had a Blue Apron order delivered this week (*although I am working with Blue Apron this year, we paid for this week of meals ourselves because we love ‘em!) and last night’s Pan-Seared Steaks with Green Peppercorns and Roasted Fingerling Potatoes was probably one of our favorite meals from them yet. Everything about this meal, from the steak, to the potatoes, the sauce, and the sautéed spinach, was just incredible.
I just wish we had more for seconds!

I couldn’t help but smile as I peered into our backyard yesterday evening…some of the grass is finally starting to turn green!
Now if we could juuuuuust have those old leaves magically disappear from the yard, that’d be great. Like, super great.
Soooo, let’s hear it for already being Wednesday!! Woot woot!
What’s happening with your week so far? What’s been your favorite:
- Fashion
- Lunch
- Workout
- Dinner
- Random thing to make you smile?

I’ve been loving the new Bodypump release lately! I should be running more since I have a race coming up, but I just can’t keep myself away.
That shirt is super cute! Good thing you were able to get all of the stains out. I would probably have cried if that happened to me.

I brought my lunch for the first time in ages and forgot how delicious it is when you make EXACTLY the salad you’re craving versus what the salad bar in our office lunch room offers!
Courtney says
That’s awesome you have a salad bar in your office lunch room though!
Brynn says
love the bicycle shirt! Also love random mash ups for meals and a few glasses of wine- oh yes. This week I’m loving the weather and starting the eight week workout program with Tone It Up. Having a program, structure and goal is so motivating!
Courtney says
Oh that sounds fun! Good luck! :)
Sarah @ Sarah Sincerely says
You’ve had some delicious lunches this week! Wanna come pack mine for me? Don’t you just love that everything is starting to bloom and turn green? I’m so thankful winter is gone – warm weather, please!
Stacie @ SimplySouthernStacie says
Aww, poor Cody – hope he feels better! My cat got that way a few weeks ago. I took him to the vet and they put him on a probiotic and had me feed him more bland wet food.
Torry @ A World Without Wheat says
My dinner last night has been the highlight of the food eats this week! I am so happy its grilling weather again – we made burgers with mushrooms!
Courtney says
Mmmmmm, we need to grill some burgers over here ASAP!
Linz @ Itz Linz says

tiff @ love, sweat, & beers says
Oh goodness am I starting to miss wine! haha I hope your snuggle bunny is feeling okay. Best wishes!
Alyssa @ Renaissancerunnergirl says
Looks like we both had a “decent” salad day for lunch – after all, it’s better to have that as a go-to than fast food :)
Claire @ Keeping Up With Claire says
That shirt is CUTE! I remember it from your post but it looks really cute on!
I’ve been interested in Blue Apron for a while after seeing it pop up on a few blogs and think it’s about time for me to just bite the bullet. I really want to experiment more in the kitchen and I feel like that’s the first step. Plus, I think it would be a good way to get Nick involved in cooking. ;)

Any secrets for working from home with a toddler? Let’s just say the few times I’ve attempted have been, well, a disaster.
Sarah @ Sweet Miles says
I love seeing more average posts like these! And I do love that bicycle top! I would be the same way though, anytime I wear anything white it’s like a magnet for stains! And yay for green grass! We’ve gotten so much rain lately that our backyard looks like a jungle, no joke!
Elle says
Lately I’ve been taking a lot of barre classes. I’m trying to squeeze in a run or two here and there also.
Caitlin says
I’m so glad you kept the bicycle top! It is so cute!
Sometimes you need that wine on a weeknight! Love little Lucas in the background. Not that I ever get sick of photos of him!
Annette@FitnessPerks says
I love eating meals outside too. Feels OH so good!
I’ve been loving teaching my fitness classes–so much energy, endorphins, fun, & sweat with my peeps <3
Ashley @ A Lady Goes West says
Hi Court! Happy Wednesday! Weekday fashion for me includes nothing but gym clothes of course. And today, I’m teaching TWO BODYATTACK classes, so I’ll be super hungry for the rest of the day, I’m sure. It’s great you are enjoying your Beachbody workouts — I have a friend who is a coach and she swears by those short and efficient sessions, and I’ve tried a few DVDs as well. Oh, and I’m finally trying Blue Apron soon. Can’t wait!
Kyra says
I would love for you to do a post talking about the Beachbody workouts! Maybe discussing the pros and cons of the different ones you’re using? Thanks!
Courtney says
Yes! I’m definitely planning on posting more about them in the near future, stay tuned! ;)
Melissa says
Oh I love this! It reminds me of your blog back in the day when I first started reading :)
Fashion–Flea Market Flares from Madewell. I just bought some, and oh my, they are so super flattering. I am never taking them off!
Lunch–I have been buying the soyrizo from Trader Joe’s and making taco salads with avocado, black beans, corn, and tomatoes, and scooping it all up with tortilla chips. YUM.
Workout–REST this week! I’m tapering for a marathon.
Dinner-Take a Megabite’s vegan dreamwich. So.freaking.good.
Random thing to make you smile? I was running on the National Mall this morning as the sun rose, and the light hitting the Washington Monument was beyond gorgeous. Loved it!
Courtney says
Melissa! I always get so excited when I see your comments (I read through all of the blog survey results, including yours – SO appreciated!) :) Your morning run DOES sound gorgeous…I opted for some gorgeous extra shut eye this morning ;)
Melissa says
Awe, yay! I’m glad–I really do enjoy STSL, Courtney, and I’m happy you found it helpful!
And extra sleep is ALWAYS a good idea :)
Hannah @ CleanEatingVeggieGirl says

I was just about to make the Pan-seared steaks myself but wanted to read your blog post first! I am STARVING – I’m so glad it was a winner. This is my second shipment from Blue Apron and have not been disappointed yet! Love the bicycle shirt. I just bought this top from Old Navy – it looks like something that you might wear.

Hmm.. Fashion. I’m trying out Fabletics, per the blogging recommendation of Ashley at My Food n’ Fitness Diaries.
Food – Eating soo much salad lately. :-D It’s fun to think up different combinations so they don’t get boring.
Fitness – Keeping it varied, so I’ve been doing a mix of running, strength, and some cycling. My favorite workout this week was a 2 mile speed run on the treadmill looking out at an AWESOME view of the Colorado mountains. Best treadmill run ever!
Kristy @ Southern In Law says
I workout from home as I don’t have (or want, really) a gym membership too. I’ve never tried the Beachbody workouts but I’m thinking I need to! I usually do a mix of strength/cardio/HIIT/yoga/ab workouts using HasFit.com’s app (though previously I just used their free youtube videos – the app is just perfect for this lazy girl who doesn’t feel like searching for videos every time haha)
Sheena says
Hi! I am 32 weeks pregnant and have already started wondering what would be a good exercise program for me to do afterwards. I have worked out 15 years and suffered from HA as you did. My first pregnancy was achieved with fertility treatment; my second was achieved by a year of going from intense workouts to only barre workouts and eating a whole lot. That being said, I still started pregnancy in the “underweight” BMI range and have trouble gaining weight/fat. Since you have done many different at home workouts, could you recommend something? I am bored with P57. I love to feel that I have worked hard, but my loving and concerned husband probably wouldn’t approve of T25 (and I am forbidden from running).i looked into PIYO and saw comments that it was not good enough on its own regarding intensity. Is there something out there that will make me work hard but not super intense? We want several children so I don’t want to go to that infertile place again that I was in for 14 years but at the same time, exercising is my stress relief and hobby and unfortunately I “love” (you know the love/hate) some burpees and sprints…
Courtney says
Sheena, I’ll email you! :)

pre-dinner white wine is such a good idea in the warmer weather. i haven’t had any wine this week, actually — i bought Summer Shandy beer, which is so strange for me — i buy beer, like, three times a year — so i had one of those the last few nights and it totally hit the spot. fave workout this week was my run along the river yesterday at 6am — so good! today’s repeat was a little painful, but still nice. :)
