Meal plans (if you can even call them that, really) are looking MUCH different around here lately. Granted, summer meals are always a bit more casual for us, since we’ve usually got a lot going on. But with Jay having been gone for work the past two weeks, and with not being in our own house, I’ve found it really difficult to actually meal plan.
So, as I mentioned before, we’re really just going with the flow over here. And I’ll tell ya…if it wasn’t for my mom’s cooking, I’d likely be eating cereal or eggs for dinner most nights. But this past week turned out to be pretty delicious, so here’s a look at what we had!
Sunday: Grilled chicken with peppers and onions, potato salad, and fresh peas from dad’s garden
Monday: The Best Ever Chicken Salad on mini King’s Hawaiian rolls with provolone cheese and sautéed zucchini
Tuesday: A frozen BBQ Chicken Pizza + the most AMAZING chopped BBQ salad (plus wine)
The salad was super simple to make, but WOW, was it good. Romaine, corn, black beans, tomatoes, avocado, a drizzle of ranch dressing, AND a drizzle of BBQ sauce. So. freakin. good.
Wednesday: Parmesan crusted tilapia with rice and sautéed zucchini with parmesan cheese (my dad’s garden is getting LOTS of good stuff right now!)
Thursday: Turkey and provolone sandwich with lettuce and tomato, with corn on the cob, tomato slices, and potato salad
Friday: Takeout pizza with peppers, onions, and sausage (x2.5) plus a couple glasses of wine
Saturday: Grilled chicken, bacon, and provolone sandwiches with lettuce, tomato, and ranch dressing plus some oven fries on the side
And then some cookies for dessert.

Grilled chicken sandwiches are the best!
This week I made a new recipe – roasted pepper pasta with creamy sauce. It was amazing!

Looks like you had a great week of meals. Now I have some ideas as to what I can make. Grilled chicken sandwiches sounds really good. Do you put any special seasonings on them for extra flavor?

We really like to just throw our chicken in a gallon bag with some Italian dressing as a marinade and we’ll let it sit for anywhere from 10 minutes to 24 hours, depending on how soon ahead we think to do it. :) No other special seasonings!

All those meals look great, especially the chicken and parmesan crusted fish! I’ve been having a lot of wild salmon and ahi tuna lately for summer grilling season as a main dish.

Barbecue sauce with salad dressing is just an awesome combo! Combined the two myself on a pulled beef tostada…heaps of smashed avocado! :)

Your meals look fantastic – I finally made it to the grocery store today so I am hoping for some good meals this week.
I would have never thought to put BBQ sauce on a salad for dressing, what a good idea!

Your eats this week make me jealous! On the menu for us this week is some slow cooked BBQ ribs and now I have to add chicken sandwiches to the mix because they sound really good!

Summer meals for us are always lighter/snackier whilst in winter (which we’re in now) we are always making baked dishes simply because I want the oven to warm up the house, haha! Tonight I’m making healthy chicken and dumplings soup but I’m most looking forward to an asian fish dinner I have planned for Wednesday night!

YUM! With the hubby away for work this past week, our dinners here have been lots of take out and frozen things. I must jump back on the meal planning train eventually…just not yet : )

everyone in the blog world is GRILLINGGGG and it makes me wish I owned a house instead of living in a tiny NYC apartment… sigh. I really need to learn how to master my grill pan.
