So we totally lucked out on the meal planning front this week. My grocery haul for the week consisted of about 10 things, none of which were any sort of ingredients for making or preparing dinners throughout the week.
Luckily, we had leftovers on Monday night from the weekend, and I also had a dinner date planned with my girlfriend, Sarah, on Tuesday, so I knew we didn’t need dinner that night (Jay managed with more leftovers).
Yesterday we had a family Christmas party, so dinner was going to be taken care of there.
As for Wednesday, Thursday, and Friday? Blue Apron to the rescue!
Wednesday: Roast Chicken & Potato Latkes with Savoy Cabbage & Apple-Mustard Chutney
This meal was one that we were probably the least excited about. No particular reason, but I guess the ingredients just didn’t really ‘wow’ us from the recipe card.
Well, the meal certainly proved us wrong. First things first, have you guys ever tried celeriac? It was the strangest thing…almost like celery + a potato combined. Oddly delicious!

But just in case you’re not, let’s talk about my favorite things about Blue Apron. First things first, the recipes are amazing. I’m fairly certain that every single time we’ve had a Blue Apron delivery, we wind up with something completely new to us (whether it’s an ingredient or full recipe) which just makes dinner that much more fun.

I swear, I’ve had recipes on my Pinterest boards or bookmarked in magazines for months now, but because they have 1 or 2 ingredients that I don’t have (and really don’t feel like buying again, because…when will I use them again?!) Thursday: Harissa Lamb & Beef Burgers with Roasted Carrot Fries
Jay was alllll excited when he saw there were burgers in our delivery, and then he saw the word lamb and got all weirded out on me. I told him, hey, too bad buddy! You’re eating it! And ya know what?
He loved ‘em. As did I. ;)
These were some serious burgers, too. Just look at those things!
Again…would I ever buy lamb at the grocery store? Probability is a no. But we still got to try it with Blue Apron!

I hope this doesn’t come across as negative in way way against you (I love your blog!) but after searching for quality pans for months I thought this may help someone else. For those that are sensitive to eco concerns, the Scanpans are actually a bit misleading. I bought a set a few years back thinking I was making my kitchen more “green” only to find out after doing more research that there are quite a few problems with the coating on them anyway. I’ve since switched to a different brand. I just think it would be a shame to spend a good deal of money on a product that doesn’t live up to the claims.
Thanks so much for your blog! Once again, I don’t want to come across as nitpicky but if someone had let me know to look further into some of the eco claims on this type of pan it would have saved me hundreds of dollars!
