Good Morning! It’s back to work for me this morning…after 11 days off! UGHH! Hey, gotta make the best of it, right? Breakfast this morning didn’t turn out as yummy as I had hoped. I somehow got a little heavy-handed with my liquids in my bowl o’ oats. I typically like my oatmeal thick and goopy, so when you look at it, you can imagine it sticking to your ribs! Mmmm mmmm mmmmmm!
In today’s mix: < 1/2 cup oats, 1/2 cup light vanilla soy milk, < 1/2 cup water (there’s my mistake!) 1 super ripe mashed banana, 4 strawberries, cinnamon. Microwave oats just don’t compare to stovetop! Note to self: MAKE MORE TIME IN THE MORNING! Along with my oats is my FIRST batch of morning iced coffee! Spring is HERE! 8)
Afternoon posts will probably be nearly impossible during the work week, so luckily I snapped a quick photo last night while making today’s lunch
Mixed romaine with leftover chicken, diced pears & cranberries, some carrot and celery sticks with hummus, and a yogurt. I also have an orange with me too. I’ll probably split all of this into 2 mini meals throughout my afternoon. Then after work, it’s off to the gym!
