I love your healthy recipe ideas…especially for baking! So have you ever experimented with coconut sugar?? I just discovered it as it’s good for diabetics b/c of its low glycemic index. I was wondering if it changes the consistency. I also discovered almond meal at TJ’s. They recommend using it as a breading or sub 1/2 flour in choc chip or raisin oat cookies. I’m excited to try that!
I actually have NOT heard of coconut sugar…but I’m certainly intrigued now!
