Look what was waiting for me when I got home today! :-D
I just LOVE coming home to packages, and I had totally forgotten that I should even be expecting this special guy.
Lucky me was the winner of Liz’s Cookie Giveaway! Being the winner, I had the choice of three different batches of cookies. Seeing as though one of those cookie choices was my Heath Bar cookies ( :-D ), it was easily narrowed down to two. And while the two remaining choices both sounded super delicious, I just had to go with…
Soft Pumpkin Chip!

Ok, let’s do the rewind…
Breakfast
A bowl of some oddly frothy oats. Yes, frothy. Not really sure what happened? The only thing I can think of is that I added about a 1/4 scoop of protein powder and cooked ‘em in the microwave today, rather than stovetop. They still tasted alright, but not my favorite batch. The scoop of Maple PB in the middle there certainly did help though. ;)
I also enjoyed some delicious Caramel Macchiato flavored coffee, x2. I can’t let any of this stuff go to waste, so if there’s extra in the pot, and I have time, I almost always finish it up before leaving the house. You guys like the looks of my kitchen table in the morning before I leave for work? :shock:
Lunch
Forgot to make one last night, so was in a rush to throw something together this morning. GAH!
Carrot sticks + hommus and a plain flavored Chobani mixed with a diced pear, pumpkin butter, and topped with some granola. For being a quick grab, it was quite tasty!
After work, I was headed to the gym, so I snacked on a Spooky S’mores Clif Z Bar. So so good. :)
Today’s workout was 17 minutes (yep, 17…all I had time for!) on the elliptical using the interval course, followed by a BodyPump class. Today’s class was a tough one; my body is quite sore today from doing all that raking yesterday. :oops: Either way, it was still a good class!
Dinner
I was on my own tonight, since hubby is working late, so I went with another quick and easy combo.
I lightly toasted a whole wheat Thomas’ Bagel Thin, and topped it with a MorningStar Farms veggie burger + a slice of reduced-fat provolone.
And on the side, I had a little slice of heaven half of a sweet potato. I simply cooked it in the microwave, mashed it up, and topped it with a little butter, cinnamon, and pumpkin butter. The aroma coming from this thing was unbelievable. I had to stop myself from eating the other half…this was a BIG tater!
Of course, immediately after finishing my dinner, I had to dig into my new goodies!
These babies are DELICOUS!
They are super moist, almost cake like. And the chocolate chips + chopped walnuts complement the flavors perfectly. Normally, I’m not a huge fan of having nuts in my baked goods, but if they’re chopped small enough, I’m game. Plus, they are in something pumpkin, so really anything goes. ;)
So psyched it’s Wednesday…you know what that means?!? Modern Family!! I’m ready for some laughs…any maybe another cookie or two. :-P Hope ya’ll had an awesome day! We’re more than halfway to Friday!

The posts are most definitely not too long. I was thinking that you wouldn’t be able to post your breakfast and lunch (plus snacks in between) when you first announced your new schedule. But, you are (yay!) and you are doing an awesome job with it!!

Definitely not too long!! I used to wonder the same thing when I did once a day, but unless you go into the minutiae of what you did that day and keep it upbeat and interesting, no post is too long!

New posting schedule is fine. I made up a batch of pumpkin chocolate chip cookies this weekend. Took an online recipe and changed it up a bit. Will share:
Ingredients
* 1 cup canned pumpkin
* 1 cup white sugar
* 1/2 cup vegetable oil
* 1 egg
* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 2 teaspoons ground cinnamon
* 1/2 teaspoon salt
* 1 teaspoon baking soda
* 1 teaspoon milk
* 1 tablespoon vanilla extract
* 1 cup semisweet chocolate chips
* 1 cup cinnamon chips
* 1/2 cup chopped almonds
Directions
1. Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
2. Add vanilla, chips and almonds.
3. Drop by spoonful on greased cookie sheet and bake at 350 for 10 minutes or until lightly brown.
