I know I say this a lot, but I only say it when I truly mean it…so I’m going to say it again…
Tonight’s dinner was absolutely amaaaaazing.
And if you guessed Panini was the menu item of choice, then you were right on target!
I took out the good ‘ol panini maker for tonight’s leftover chicken dinner. I tried to incorporate as many of my favorites into one sandwich, with the addition of a newcomer…but I’ll get to that in a sec.
On the side, I enjoyed the rest of my roasted broccoli. (I’ll definitely be making that again.)
Oh yes, and Cody also enjoyed some of his leftover chicken tonight, too.
So for my panini, I started out with some Farmers Market whole wheat bread, and piled it up with leftover roasted chicken, reincorporated sun-dried tomatoes, roasted red peppers, sautéed red onion, basil pesto, and one other secret ingredient…
The flavors on this thing were just incredible, and I’m pretty sure that I have this special secret ingredient to thank for that…
I’ve had this in the fridge since last week and have been dying to try it on something, so I knew tonight would be a safe bet.
Actually, last week, while I was browsing through Facebook, I happened to come across a “Question of the Day” that Chavrie was doing about your favorite way to enjoy goat cheese. Well, it turns out that they selected one random fan to win some fresh Chavrie, and guess who it was???
