Do you ever have those days/weeks where you feel like you just have a TON to say/talk about, but when it comes down to sitting down and actually typing it all out (or even just talking it all through), you just don’t have the energy? Or the brain power?
That’s been me this week. I have an editorial calendar full of (okay, not “full” but there are a few) ideas to use for various blog posts. But anytime I’ve gone to that list this week, my brain is just not prepared to think like that.
So instead, I’m keeping things light today! And I figured hey, why not go ahead share some good eats I’ve had recently? And this, clearly, is not just limited to food but also beverages…
Ohhhh, I love me some cookie dough iced coffee. And as you may have seen on Instagram the other day, I celebrated the start of my 3rd trimester (say whaaaat?!?) with a little half-caf. I do occasionally drink a small cup of regular coffee on the weekends when Jay brews his, but it’s usually 90% decaf. It’s not that I even feel a difference with drinking caffeine vs. decaf, I just like the flavor of regular better. Especially from DD’s. So for now, I’ll enjoy some half-caf!
Along with my cookie dough iced coffee the other day (Tuesday, obviously) I had some overnight oats in a jar…couldn’t TELL you when the last time was I had those!
We usually buy the big jars of PB from BJ’s, which make it a bit difficult to eat oats out of…but I had recently finished off my jar from my desk drawer at work and brought it home for that sole purpose. The best part? One of my male co-workers came by my cube as I was eating them and was like, heyy, is that oatmeal in there? Heck yes it is, buddy!
I also had a totally delicious salad on Tuesday, which was about 1,432,754x better than the random lunch I threw together on Monday because I gave myself zero time to make anything before heading off to work. Hate when that happens…
But that salad? Ohhh, so delish. All the usual veggies and toppings, including baked chicken, strawberries, feta, avocado, and dried cranberries, to name a few. I could eat that exact salad every single day right now.
And another thing I could eat (and have been eating) every single day lately? These muffins.
I know, I know. Courtney, get over yourself…we’ve heard enough about the freakin muffins! But seriously, I just can’t get enough of them. #sorrynotsorry
One thing I am sorry about, though? Letting Tuesday night’s dinner cook a bit too long in the crockpot…
I used this recipe for Slow Cooker Teryaki Chicken, which really was good…but my chicken turned out a bit dry and the sauce was a little burned. It was still okay enough to eat (and then eat again for lunch leftovers yesterday), but I think it would have tasted so much better had I not overcooked it. Ahh well…you win some, you lose some, right?
I’ve also been thoroughly enjoying chocolate in all shapes and forms. Yesterday, I snacked on a couple of these Ghirardelli dark chocolate and raspberry squares.
On Tuesday night, my “dessert” for the evening was another Boston Cream donut (my MIL brought them home for us again!). I also found myself making chocolate fudge pudding the other day and topped it with crushed graham crackers and whipped topping. Just gimme the chocolate and I’m a happy camper. <3
Oh, and hey…Happy St. Patrick’s Day! Anyone out there celebrating today with some good food or lots of booze? ;)

I can completely relate to all of the ideas swirling and then crickets when I sit down. Some days or even weeks go that way. Lately I’ve been loving chocolate chip cookies, which is total out of the norm. But I’m crazy for them!

My week has been the same. Had posts planned but just not “feeling it.” I just want to say that in my Facebook feed under this post it has “related posts” and they were all “10 signs you’re addicted to Dunkin Donuts,” etc. I had to LOL!

i’m more than half Irish and still forget to wear green every single year on St. Paddy’s Day (whoops!). i think i need to get more green in my winter wardrobe — it’s such a summer/spring color for me, i guess. i love dark chocolate but don’t prefer it with any fruity flavors mixed in — the mint is my fave — and the one thing i eat almost daily that i can’t imagine giving up is avocados. OH and i’m on a kombucha kick lately as well and ordered a bunch from Amazon Prime Now (obsessed with this service!), so i’m loving those.

I’ve definitely been having the random sweet tooth here and there and my husband brought home a chocolate raspberry hagen daz ice cream flavor this weekend, so I’ve been sneaking scoops of that here and there! P.S. Love your coffee koozie!

I totally feel ya on the blog ideas and not wanting to write them out. I have a huge list of ideas that I write down when I get super excited, but I have been putting off completing them every time I actually sit down to write. Chocolate + raspberry = deadly combination!!! yum!

I can’t go a day without Coyo…it’s a coconut yogurt with just three ingredients, coconut milk, tapioca starch and probiotics but it’s like heavy cream! I’m addicted!!! The chicken looks perfect even if it didn’t taste it…I now want teriyaki salmon!
