So this morning, I mentioned the fact that I set out on a little baking experiment. I also told you that you may or may not wind up seeing the end results of this experiment.
Well……
It definitely turned out good enough to share!
The biggest thing I experimented with in this recipe was the use of NuNaturals MoreFiber Baking Blend in place of sugar. Using the NuNaturals resulted in a less dense bread, but it also didn’t give as much of that “spongy” taste and texture as some low-fat recipes often have.

Overall, it’s definitely a winner for me, and I think it will be for you, too. I bet it’d be good with some chocolate chips, raisins, or nuts mixed in, but today I was really just feelin’ it plain.
Although, it is especially yummy served with a little peanut butter…
but then again, what isn’t?

Low-Fat Banana Bread
(adapted from Taste of Home Everyday Light Meals)
- Prep Time: 10 minutes
- Cook Time: 50-55 minutes
- Yield: 10-12 servings (nutrition stats below are for 12)
Ingredients:
- 2 tablespoons butter, softened
- 3/4 cup NuNaturals MoreFiber Baking Blend*
- 1 egg
- 1 egg white
- 3-4 ripe, medium-sized bananas, mashed
- 1/4 cup unsweetened applesauce
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1-1/3 cups all-purpose flour
- 2/3 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
*You can substitute the same amount of regular sugar for the NuNaturals. This will most likely change the consistency of the bread, as well as the nutrition stats.
Directions:
Preheat oven to 325 degrees F. Generously coat a 9×5” loaf pan sprayed with non-stick cooking spray.
Beat butter and NuNaturals (or sugar) for 2 minutes or until crumbly. Add egg and egg white, beating well, on high speed, until light and smooth. Stir in bananas, applesauce, honey, and vanilla extract. Add both flours, baking soda, and salt; stir into banana mixture until just combined. Do NOT over mix.
Pour batter into prepared loaf pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Slice and enjoy!

I am not really for artificial sweeteners but have heard good things about nunaturals stevia. I know stevia is a plant so people say its “natural” but there are lots of posionous toxic plants out there so just because its a plant, it doesnt make me feel like its automatically good for you. Looks like a good recipe though, I LOVE banana bread!
