It’s been quite some time since I actually shared some FOOD around these parts, hasn’t it??
Truth be told, as much as I really do enjoy sharing my weekly meal plan posts (and I know many of you do, too, from what you’ve told me!), it got to the point where it wound up being just way too much work for me right now. Dinner time is suuuuuuper busy these days, with trying to get Alex fed, trying to find something that Lucas will eat, and then at some point, putting together a meal for the adults.
We do have an occasional day here or there where we all get to sit down at the same time and eat our meal together. Those nights are wonderful, but are usually only days when Jay and I are either eating leftovers or something that’s already prepared and waiting for us (like in the crockpot).
One of these days, I’m sure I’ll get back into more true meal planning (and sharing our weekly menus!) but for now, we’re doing a lot of simple meals, which will often give us extra leftovers for later in the week. All that to say, not much of it has been all that exciting and/or worthy of a weekly meal post, BUT, we have had some good meals lately so I figured I’d share!
A few weeks ago, our grocery store had some pork tenderloin medallions on sale for a ridiculously good price so I decided to pick some up to try. SO good!! I wished I had gotten more.
They were already seasoned so we just served them along with some jasmine rice and green beans.
Then this Green Garlic Pesto Pasta with side salads from Blue Apron was pretty good a few weeks ago.
We ended up getting a delivery towards the end of March, but I think this was the only meal that I photographed out of that delivery.
I made a version of this ground beef and potato one-pot dish which was really, quite good, and very easy to prepare!
The only thing I changed was omitting the baked beans (we didn’t have any) and cutting back slightly on the BBQ sauce. It was definitely something we’d make again.
Chicken Fried Brown Rice is another favorite of ours. Personally, I like to make it when we already have some leftover chicken cooked up in the fridge, since it makes the dish that much easier to put together.
These Grilled Herbed Chicken and Potatoes Foil Packets were another good one, although I was disappointed that mine didn’t turn out nearly as good looking as the original recipe.
I feel like to get that look, they must have cooked them directly on the grill…either that, or I’m totally missing something (which could absolutely be the case!).
A couple of weeks ago, we also made this quick and easy cheesy baked tortellini. I can’t remember exactly what recipe I used, but I’m pretty sure it was very similar to this one.
Last week, we made use of some leftovers from Easter and had grilled chicken sandwiches with leftover mac salad and some sautéed grape tomatoes (just tossed in a skillet with a little olive oil, salt, pepper, and garlic).
We were in need of something different in the veggie department and the tomatoes were a nice change!
And I think our most recent actual dinner (aka, not the frozen pizza we cooked up at 7:30 last night) would be this boneless sirloin served with oven roasted potatoes and corn.
Again, simple, easy, and delicious.

It’s only me and my boyfriend at home and I’m still struggling to figure out how to get dinner on the table! It seems I do the same fish/veggies/rice combo almost 3x a week. Excited to mix it up, especially those sautéed grape tomatoes. What a good idea!

Simple is the name of the game over here too. Nearing the end of pregnancy and it is rough to want to cook or come up with ideas, haha

You have such a great variety of meals! I could never get bored! My go to dinners are my “one pan” ones. I throw veggies and meat into a pan, put sauces and seasonings on and bake for 30 mins! Bam, done

Thanks for these ideas. With a 10-month-old at home AND the weather getting warmer (the last thing I want to be doing is cooking when it’s so nice out!), I was just telling my husband we need to simplify our dinner options.

These all look like delicious meals! Especially that tortellini – look at that melty cheese!! One of my favorite “cook once, eat many times” recipes is the skinny cheeseburger casserole recipe with the pickles on top! (You posted about it at one point…can’t remember when.) Anyway, I love that recipe because it’s so easy and makes a ton of food for leftovers!

love these super simple dinners!! honestly i’m right with you, some weeks i’m really good about meal-prepping and even have time to cook a nice meal, and others i just throw some stuff in a pot and call it a day.
that beef and potato dish looks delish! we’ve been super into pork lately too, plus it’s been on sale so much!

I love these types of posts as a fellow working mom of 2 boys (1 and 2.5!). What’s your timeline for cooking as most days we struggle to get home for 5:30 and get the boys fed before bath and bedtime. Also, do you know of any other blogs run by working moms like you? It’s so nice to be able to relate and see how other people manage the day to day bustle. Thanks for always being real and being you! Your family is adorable.
