Blog Updates, Last Day of Soccer, Fun with Friends, and a Twitter Party You Should Totally Join

Well how’s that for a loaded blog title?

Hello and happy Monday to you all! Did everyone have a great weekend?

Ours was a good mix of fun, low-key, and productive, which I always find to be a good combo for a weekend. After a roaring Friday night (aka, in bed before 10pm if I remember correctly), we started off Saturday morning with our last week of soccer.

The session we signed up for was 8 weeks long, and while we really did have fun going, we decided to skip the next one. It was great to give Lucas an outlet to be able to run around, but that’s basically all he did…after the first week or two, he really didn’t have much interest in doing anything soccer related and it consisted more of us just chasing him off of the other fields.

He’s still so young though, so, we’ll give it some time and I’m sure we’ll be back again (especially if his soccer-playing daddy has anything to say about it!).

And as I mentioned on Instagram, I swear, our child really does love us. He just, apparently, refuses to smile in pictures with us…

After soccer, we came home and Lucas napped for a few hours Jay and I took care of some various stuff around the house. I also, actually spent a little time playing around a bit with the menu on the blog.

I decided to add a “Meal Planning” category, which actually links to all of my meal planning posts, in case you ever want to go back for some extra inspiration. And I also decided to rename the “Baby Tooth” category to “Babies/Kids,” since Lucas is no longer referred to as Baby Tooth. Winking smile

In an effort to save some space on the menu, I also decided to move my NASM page, which you can now find under the “My Story” page, titled “Everything NASM.”

Since that really isn’t a huge part of my life anymore, I didn’t think it really needed to be there anymore, but I know it has a lot of good information that many of you have inquired about in the past, so it’s not going anywhere!

So once Lucas woke up from his nap, we got ready and headed out the door to Brian and Mal’s house for a “Houseaversary” party.

There were plenty of snacks for everyone to enjoy, of course.

And, really, how gorgeous is their table, right? Brian and our other cousin Mike (his brother-in-law), did that all themselves and I am super impressed. It looks SO good!

In a very rare series of events, Lucas was actually the only male kiddo at this gathering (most of the friends in our group have boys, with the exception of Samantha and Kaura), and I think he enjoyed being the ladies’ man.

To make things even better, Mal made her famous chili, which was a hit as always.

We didn’t end up getting home until closer to 8:15 or 8:30ish, but thankfully, Lucas did great for it being well past his bedtime.

That also meant that he slept in until almost 8:30am on Sunday, so Jay and I got to enjoy some quiet coffee time.

Later in the morning, I brought my buddy grocery shopping with me…

And then we hit up Dunkin Donuts for another date but, unfortunately, the trip was sort of a disaster. He wanted no part of the munchkins, or his chair, and wound up pooping shortly after we arrived and I didn’t have any diapers with me. Fail.

So we packed it up rather quickly and headed back home, BUT on a positive note, they have their cookie dough syrup back for iced coffees, and you guys know how much I loved them last season!

I put Lucas down for a nap, threw in a load of laundry, and took care of a little food prep for the week, including salad bases for me, roasted brussels sprouts, and a batch of Chicken Parmesan meatballs (<—my favorite burgers, just in meatball form).

I also started a new flavored water combo that I’m sort of obsessed with: strawberry and mint.

The rest of Sunday was pretty mellow, and we had a nice couple of hours with my parents coming up to visit. Other than that, it was a fairly quiet afternoon and evening. So before I go, I have to share a fun little tidbit on something coming up later this week…

Good Food, Football with Framily, and Meal Planning

Hey heyyyyy! We’re so excited it’s Monday!

Kidding. We’re really not. Weekend went by too fast. Booooo.

We had a pretty low-key Saturday…

  • We had to have one of our couches picked up to get repaired/replaced, so now we’re down to one couch for an unknown amount of time.
  • Lucas and I went out to do our weekly grocery shopping and he decided to have a mini-meltdown in the frozen food isle. It was awesome.
  • We played a LOT of hide and seek under the blankets.

  • I had a killer, double T25 workout (Speed 3.0 + Rip’t Circuit) and it was great. Apparently I’m not totally giving up on it!
  • Jay worked a little bit on the final details of the bathroom remodel (yep, we’re still truckin’ along on that one…we have a “due date” of November 1st!).
  • We had THE most delicious dinner…

Jay spent some time in the kitchen Saturday afternoon making homemade sauce AND chicken parmesan for us, and it was soooo ridiculously good. That chicken was huge though, so I only made it through about half…leftovers, baby.

Sunday morning we had a quick visit from my parents and then after Lucas’s nap, we headed over to Brian and Mal’s house for some good food, football, and fun with framily (no, that post title wasn’t a typo…they’re our friends/family). Winking smile

I ended up trying this UFO pumpkin beer and I. Am. Obsessed.

Honestly, I had kinda written pumpkin beer off because none of them were really doing it for me, but this stuff was incredible. On a mission now to find myself a six-pack. Oh, and a chouch…I seriously LOVE their chair/couch. It’s soooo comfy.

We had to bail shortly after eating since Lucas missed his afternoon nap and was getting a little, well, done with the day. So we came home, gave him a tubby, put him to bed, and got all of the lunches and some other meal prep ready for the week.

Shopping, Beer Sampling, DIY, Chocolate Cake, and More

So when are weekends going to permanently include a third day? That’s what I wanna know…because, once again, this weekend just flew by. Anyone else?

Our Saturday and Sunday were both jam packed from beginning to end, and for the first time in along time, I took a bunch of pictures of everything. So let’s just dive right in with some of my favorite highlights!

Starting with Saturday morning pancakes.

I recently got a huge goody box full of Immaculate Baking Company’s new baking mixes. This is the first one we’ve tried, but it was great, and I can’t wait to try out some of the others soon.

After Lucas’s morning nap, we went and dropped him off at my parents’ house and Jay and I spent a couple hours out running errands for the afternoon.

After Target, we headed over for my friend Heather’s son, Logan’s, third birthday party.

Weekend Instagram Highlights

Good morning, all! How was everyone’s weekend?!

I must admit…ours was pretty spectacular. After our low-key Friday evening, Saturday was spent with all of great friends at Baby Tooth’s second shower, and Sunday was spent hanging out outside, catching up around the house, and grilling with pals.

With all that was going on, I’m still playing a little bit of catch up this morning. So before I head off to work, I’ll leave you with some highlights from the weekend…via my Instagram feed.

After feeling totally wiped on Friday, I woke up Saturday morning feeling SO much more refreshed and energized. I honestly felt like a new person, so I decided to take advantage with some Pilates.

How stinkin’ cute, right?! My parents got this cake for our shower on Saturday and not only did it look adorable, but it tasted incredible. We had so much fun at the shower…I’ll be sharing some more pics from the day as soon as I get my act together!

This was what our house looked like Saturday evening after getting home from our shower. Needless to say, Jay and I are feeling incredibly blessed for all of the people who came to celebrate with us and are just as excited to meet Baby Tooth as we are. I felt like I worked on this for hours yesterday morning, (along with the four loads of laundry for the little guy) yet it looks like I barely made a dent. Yikes.

I woke up Sunday morning and came out into the living room to find Cody perched in the window. I could immediately tell he had spotted something, so I went over to check it out and sure enough, we had not one, but two chipmunks hanging out on our front steps. Codeman was ALL about these little guys…it’s a good thing they had a screen between them. ;)

Yesterday afternoon, our pals Brian and Mal came over – Mal came to keep me company (and even helped me fold laundry, such a sweet pal!) while Brian and Jay worked a little bit more on our back deck (it’s comin’ along!!). After a few hours of working, it was time for the boys to take a break and we all enjoyed a little BBQ, al fresco. Burgers, hot dogs, corn on the cob, more couscous salad, and watermelon…aka, a meal that screams summer. LOVED it.

A Mexican Feast

So, have I told you guys how much I’m diggin’ Mexican food lately?

Oh, I have? Only about 100 times? Okay, my bad.

Well lucky for me, my friends are very much aware of this latest obsession. Last night, Jay and I were invited over to our pals Brian & Mal’s place for dinner, so when Mal had asked me earlier in the week if I’d be interested in having chicken chimichangas for dinner, it was basically a no brainer.

Up until last night, the only other time I had tried a chimichanga was actually just last month. Jay and I loooooved them, but I didn’t think it was anything I’d ever attempt to make since I don’t exactly have a deep fryer.

Well, wouldn’t ya know…they can be baked on the oven. ;)

We had a whole Mexican feast last night, complete with our chimichangas (she used THIS recipe), refried beans, rice, salsa, chips, and guacamole. Jay and I offered to bring the chips and guac, and we were planning on making it from scratch…buuuuut our avocados were soooo not ripe that we couldn’t even mash them. At least you can still find some decent store-bought kinds!

The entire meal was absolutely delicious and I finished everything on my plate with noooo problems.

The four of us hung out and caught up a bit for a couple hours after dinner…and then it was time for dessert.

In other news, Jay and I did decide to cancel/postpone this weekend’s Babymoon. We were able to get everything refunded, which helped make our decision much easier. We’ll definitely still plan something before baby comes, maybe just for a night over somewhere. And we’ll hopefully still find some fun things to do this weekend too, so I’m happy with our decision. Either way, we’ll still make it out to Portsmouth one of these days!

Tonight, I am reeeeeeeally looking forward to laying low. The two of us have had something going on for the past three nights in a row, and while they’ve all definitely been good things (softball, breastfeeding class, dinner with friends!), I’m ready for a night of nothing. I’m also ready to get in a workout after work today. Thanks to the later evenings and early mornings, I’ve been having a hard time getting anything in over the past couple days, and my low back could really use some stretching. Perhaps tonight will be a yoga kinda night?

More Than Made Up For My Mix Up

Heyyyy, Happy New Year’s Eve! I’m off to work this morning, but rumor has it we may get out a little early. Fingers crossed!

Well yesterday was a pretty awesome day, especially since I got to spend a few hours of my afternoon with this awesome crew!

I know you guys know Brian and Mal, they’ve been around forever, but I don’t think you’ve “met” Joe and Angela. Jay, Brian, and Joe are all cousins, and Joe was back up in the area for the holidays with his fiancé, Angela. Although they’re officially moving back into the area at the end of January (WOO HOO!) it was so nice to spend a little extra time with them today. And then in April, we’ll all actually be traveling out to Arizona for their wedding…SO fun!!

So since Joe and Angela are leaving tomorrow, we decided to meet up for lunch, which happened to be at Peddler’s…which I actually don’t think I’ve been to since my birthday last year.

They have a crazy big menu at Peddler’s and I was going back and forth between about three things, until I ultimately decided on their turkey artichoke sandwich. I made sure to ask the waitress about the turkey, seeing as though I can’t have deli meat (probably the one food I miss the most), and she assured me that it was cooked, chunks of turkey.

The sandwich was warm, so I’m sure it probably would have been fine (deli meat is supposedly safer when it’s heated up), but I was still too nervous to eat it. Thankfully, Mal was sweet enough to trade half of her sandwich for half of mine, so I ate half of her chicken wrap, and the other half of my sandwich…without the turkey.

Ahh well, you can’t win ‘em all, right? The company was well worth the mix up anyways.

Once we left from lunch, Jay and I had a few errands to run (I did get him to go to the grocery store with me!) and on our way home, we made an extra special pit stop…

…which MORE than made up for my mix up at lunch. I feel like it’s been ages since I last had some fro yo in my life (it can’t really have been since AUGUST, can it?!?), and that cup totally hit the spot.

And you want to know the crazy part? I put chocolate fro yo in my cup. Chocolate. I have never, EVER liked chocolate fro yo, ice cream, or anything of the sort, but it was probably my favorite flavor out of the three (vanilla, and white chocolate mousse) that I got. What is going ON with me?

Speaking of which…the Baby Tooth page was updated this morning! Maybe that has something to do with it. Winking smile

So what’s everyone got going on for New Year’s Eve tonight? Anything fun?? Jay and I are headed over to our friends’ Brook & Andrea’s place for a low-key evening, which will probably be similar to last year, minus the fondue dinner. Although that is sounding mighty good right now!

Always Hoppin’

This post was actually supposed to go up a few hours ago – not quite sure what happened?! Ahh well…just a little delayed. But at least now I can say “Goooo JETS!”

Well, right now I’m most likely on my way back home from the Jets game (since I wrote this post this morning), so let’s hope that they actually did decent and it’s a good ride home. If not, well then you have permission to feel sorry for me. Haha.

So yesterday afternoon I got a text from my friend Mal asking if Jay and I were free to meet up for dinner at one of our favorite spots EVER, Brown’s. Jay was actually working most of the day so I wasn’t sure if we were going to be able to make it, but once I let him know that Brown’s was a possibility, he made sure to get back home in time. Yippee!!

Around 7:30, we headed down to Brown’s, put our name in for a table, and headed to the bar to grab a couple of beers while we waited for Brian and Mal. They didn’t have my favorite Cherry Raspberry on tap, but they DID have Pumpkin Ale baaaaaack.

This made me a very happy camper.

(Side note: I was thinking this morning as I was typing this, “Okay, wow. My readers all must thing I’m a total booze-face.” This week seemed to include quite a bit of alcohol, but I promise…I’m not always this bad. I do like me a few beverages now and then though, so I’m not apologizing.) Winking smile

Shortly after we got our beers, our fantastic friends, Brian & Mal arrived, and about an hour later we got a table for dinner (Brown’s is ALWAYS hoppin’ on the weekends!).

We ended up ordering some potato skins to share amongst the table to start. I can usually go wither way with potato skins, so I had half of one to see how they tasted. They were definitely good. I probably would have gone back for more but I wanted to save room for my dinner.

And that dinner of choice was their Roasted Mediterranean sandwich, which came with eggplant, zucchini, yellow squash, roasted red peppers, portabella mushrooms and provolone cheese on a Multi-Grain Ciabatta.

It also came with a roasted garlic aioli, which I ordered on the side and am so glad that I did…it was good, but WOW was it garlicky. Whew!

In true Brown’s fashion, I also got the sweet potato fries because, well, I don’t think I can ever eat dinner at Brown’s without having them. They’re just that good.

Hope everyone’s weekend is winding down nicely…did it fly by for anyone else, or is it just us? Sheesh!

Another Honeymoon Invasion!

Oh man…last night was so much fun on sooooo many levels.

Jay and I headed over to Sarah & Jeff’s for a little family dinner party yesterday evening. We were joined by Brian & Mal, and the just-back-from-their-honeymoon-and-super-tan-newlyweds, Denise & Mike. Yes, I’m jealous.

Sarah put out a phenomenal spread of food for all of us.

And homemade shrimp scampi. Sarah asked me earlier in the week what she should make, and after reading her list of choices, I had to pick the scampi. For some reason, this just isn’t a dish that I usually think to prepare at home, so it was nice for a change.

After tasting Sarah’s though, I may just have to start making it at home. SO good!

Shortly after dinner, I brought out my pumpkin cookies for dessert.

From what I hear, the general consensus was that they were yumm-o, so I’ll work on putting together that recipe for you all later today. I will warn you though…they’re almost more like mini cake puffs than cookies. So if you’re down with that, then you’re good to go.

Our group of 8 spent at least a couple hours just sitting at the dining room table, chatting, laughing (of course), and discussing a few different things.

You may remember that Brian and Mal are getting married this February. Well, shortly after the wedding, their planning a fun honeymoon down in Mexico, at the same resort we stayed at earlier this year. Well, we all got to talking about how much fun it would be if we all went down together again.

Then we started perusing the website…

And then, a couple of hours later, this happened…

YUP! That’s right…it’s another group honeymoon invasion in Mexicoooooo!

The honeymooners will get a few days to themselves, but then, the rest of our original crew from last year, PLUS Denise and Mike, and heading down to join in on the fun.

Words just cannot describe how excited I am to have 10 of us traveling together, again, on vacation. We’re going straight back to the same resort we went to earlier this year, the Valentin Imperial Maya (you can read my resort recaps HERE and HERE), and we are all super pumped.

Our First One of the Season

Jay and I always get so excited once “bonfire season” starts up here in New York. We realized yesterday afternoon that last night would be the perfect night for our first one of the season, so we invited a few friends over to help us burn some of the massive amounts of wood that we have.

We didn’t end up getting to bed until almost 1am last night, so I opted to sleep in a bit this morning. I’m still desperately trying to recover from my lack of sleep from traveling this past week, and I still don’t even feel fully recovered. Hopefully an early bedtime will be in the cards this evening…

I already know that today is going to be filled with some delicious food, as Jay and I will be traveling to both of our parents’ houses for Mother’s Day, so I decided to keep breakfast light and refreshing.

Last night, Jay and I joined our friends Brian and Mal for a new-to-all-of-us dinner spot in downtown Saratoga known as Hattie’s Restaurant. All four of us have heard about Hattie’s but never made the trip there, so we decided to give it a go.

Hattie’s is a small place, but its dining room is definitely filled with lots of Southern charm…almost as if you’re “at home.”

Hattie’s, which has historically been in operation since 1938, serves a variety of Louisiana and Southern dishes, but it’s probably best known for its famous Southern fried chicken.

So famous, in fact, that it was actually one of the featured restaurants on the Food Network’s “Throwdown with Bobbly Flay” – and Hattie’s won!

That little factoid alone made me excited to try out Hattie’s despite the fact that fried chicken isn’t usually my dish of choice.

We were lucky to not have to wait for a table, and shortly after we placed our orders, we were given a basket of homemade biscuits and cornbread.

I enjoyed one of each and I loved the fact that they were not only delicious, but also fairly mini.

I also ended up having a glass of pinot grigio with dinner, and Jay kept it classy with some PBR. Hey, for $2.00, I guess you can’t pass it up (or so he says…)?

There were a few items on the menu that sounded intriguing, but I ultimately decided I should go with the fried chicken. When in Rome, right?

Holy pile of food, batman!

I got to choose two sides with my chicken, so I got the mashed potatoes and succotash. I had actually never tried succotash (and had no idea what it even was until I asked our waitress) but I loved it…lima beans and all.

The fried chicken itself was actually very tasty. I honestly had never ordered fried chicken up until last night, and I really don’t even know if and when the last time was that I tried it, but I was impressed. I’m not typically a fan of the skin on chicken, so I picked most of that off which, I’m sure, probably defeats the purpose of fried chicken?

But even without eating most of the skin, the chicken itself had great flavor.

The portions they served were enormous, so I ended up picking through about two of the four pieces that I was served. This meant leftovers for Jay, making him a happy camper.

Since we were already up in Saratoga, we decided to swing by Plum Dandy for a little dessert pit stop. Any guesses which one is mine…?

This cup was good, but not the best, and we all decided that we’re bigger fans of TCBY’s fro yo flavors, but we like the variety of toppings at 16 Handles the best. However, Plum Dandy did offer Funfetti cake mix as a topping choice, which I thought was pretty amazing. Either way, it’s still fro yo, and we all left happy…and stuffed. Smile
