WIAW: Lots of Good Stuff

Gooooood morning! And happy Wednesday to you all. How’s everyone doing on this lovely, chilly day (umm, yeah, it’s 2 degrees here this morning). Since it’s Wednesday and all, you guys know what that means…

Let’s take a little look at What Courtney Ate Wednesday Tuesday. ;)

Breakfast – 8:15am

I already mentioned this one to you guys yesterday. Unfortunately, it did not wind up tasting as good as it usually does.

I think there was too much apple, not enough chia seeds, and a little bit too much liquid so it wasn’t quite as creamy as I usually like. Luckily, the banana bread made up for it. Winking smile

Mid-morning, I snacked on a clementine just for the heck of it because it was sitting on my desk. No photo of that little guy.

Lunch – 1:00pm

I’m telling you…yogurt bowls are where it’s at lately. Can’t get enough of ‘em!

I had some vanilla Greek yogurt mixed with strawberries, blueberries, Special K Protein Plus, and Cheerios, which was super delicious.

For a little veggie action, I also finished up the rest of my roasted brussels sprouts from last week (along with a few chunks of butternut squash, in case you were curious). I had planned on heating them up but actually just wound up eating them cold.

I think it’s safe to say that they’re growing on me. I’m excited to try them out again.

Shortly after lunch, I was craving something sweet. Enter, a delicious, pink lemonade lollipop.

Couldn’t tell ya the last time I had a lollipop, but man, was it good.

Mid-Afternoon Snack – 3:45

Hunger struck once again around 3ish, so a little while later, I found a few minutes to make a little snack.

I had this tortilla in my desk for “emergency purposes” (seriously, who stashes tortillas?) and filled it up with some peanut butter (also in my desk) and pumpkin cream cheese (which I keep in the fridge).

That was one heck of a snack. Gotta love the pb & pumpkin cream cheese combo!

Dinner – 7:00

We had company over for dinner last night (our wonderful pals Sarah and Jeff!) so there was lots of good stuff on the menu.

The star of the meal was the Slow Cooker BBQ Pulled Chicken that I put together yesterday morning, which I served with Martin’s mini whole wheat potato rolls (<– have you had these? Amazing.). Along with the chicken, I put together a big tossed salad (with lots of avocado!) and cooked up a bag of sweet potato fries.

I swear, that chicken is probably one of my favorite things to cook for when we have company over. Just so easy and yummy.

Dessert – 8:30pm

A little while later, we dug into some dessert, courtesy of Sarah and Jeff.

My Method For Eating Banana Bread

Hey strangers! Long time, no chat huh?

Well yesterday just ended up being one of those days that totally got away from me. My work day was busy and then right after work, I headed on over to mom and dad’s house to meet up with Jay and my brother for a home-cooked meal by mi madre.

Check that out…a full turkey dinner on a random Monday night! I guess it helps when mom has the day off from work. ;)

I filled up with turkey, stuffing, mashed potatoes, peas, and beets and was actually probably the first one at the table to finish. Apparently, I was hungrier than I realized. The five of us then just spent some time hanging out at the table and catching up from the past couple of weeks, which was really nice. I know I’ve said it before, but I’ll say it again…I am so, so lucky to live close to family.

A couple of hours later, we headed home and before I knew it, it was already 8:00pm. Talk about the day flying by! I worked on putting together some meals for today, ironed my clothes, and watched what was left of The Bachelor (I did have it DVR’d, but didn’t feel like starting from the beginning). All I’ll say is, ohhhhh Kacie B. You should know better by now than to mention others girls when you’re with Sean.

This morning, my alarm went off nice and early at 5am for a workout. I’m not gonna lie…it was pretty brutal getting out of bed this morning…but knowing that I won’t have time after work helped motivate me to stick with the plan.

Today’s workout was one that I’ve actually been enjoying since last week, and I plan on sharing it with you guys later this afternoon.

Don’t be fooled by just the treadmill though…it’s a strength and cardio combo, and it is a good one!

Breakfast was easy peasy this morning and I’m bringing it to work with me, since I didn’t want to attempt to scarf it down before leaving the house. Last night, I put together a batch of apple cinnamon raisin overnight oats

which, as always, are just oh-so-photogenic, aren’t they?

I added a big scoop of chunky peanut butter for some protein, and I’m also planning on crumbling part of a piece of cinnamon chip banana bread on top.

You guys like how I take my random little nibbles from the sides? I tend to do this with just about every loaf of banana/pumpkin/whatever bread that I make…when I slice off a piece to eat, I usually wind up slicing a small piece off the opposite end to eat right away.

For someone who’s counting calories? Well, I probably wouldn’t suggest my method for eating banana bread, since it all adds up quickly. But hey, guess what? I’m not counting. ;)

A Couple Odds & Ends…

  • Thank you so much for all of your tips on yesterday’s Baby Tooth post. I’m always open to hearing new tips and ideas, so they were all very much welcomed.
  • Does anyone happen to know what this Thursday is? (Hint: Jay is probably rolling his eyes if he’s reading this right now. And actually, some of you may too, once you realize what it is. Hint Hint: I’m obnoxious about this every year.) ;)
  • Did you know today is National Blond Brownie Day? Juuuuust in case you feel like celebrating…

Let You In On a Little Secret

Well happy Monday to you all! And for those of you who are lucky enough to be off on this special MLK holiday, I wish you all a fantastic day.

So this weekend was really a great one. On Saturday, I had my friend Joelle’s baby shower which was just adorable. She did a gender reveal which most of the guests were not expecting, and we all got to vote on what we thought it would be. I guessed boy…and I was right!

On Sunday, as many of you may have seen, I spent much of my day out and about running errands. Some were boring and necessary (i.e., grocery shopping) but some wound up being super fun (i.e., clothes shopping!). I had to run to the mall to return a pair of boots that I got for Christmas from JCPenney. I was originally planning on just returning the boots and leaving, but the I passed by all of the bathing suits and realized I should check them out.

Well, as it turns out, they had a bunch of cute ones, and I wound up getting three tankini tops, three bottoms (some can be interchangable), and a new cover-up. Mexico, here we come! 

I know some of you thought the bathing suits were just tops, and some of you thought they were from Express, but that’s not the case. I actually found myself three new tops from Express, which should all last me for quite a while because they’re nice and flowy. Actually, I’m wearing one today…

Some of you were also curious about my Starbucks beverage. I thought you might be. ;)

First things first, my beverage of choice was a grande, decaf, iced, nonfat caramel macchiato (talk about a mouthful, right?). It’s one of my absolutely FAVORITES. But really, I know many of you want to know what’s up with the name…I’ll let you in on a little secret. I actually live a double life and go by the name of Rick.

Juuuuuust kidding. There was a mix up with the barista and she accidentally switched orders. Besides, if I was going to live a double life, I’d pick a different name than Rick. ;)

Today, it’s back to work for me, and thankfully I took the time last night to put together some food for the day.

For breakfast, I have some pineapple cottage cheese with strawberries.

And I also have a piece of banana bread that I made yesterday. In case you’re curious, I made my Dark Chocolate Chip Banana Bread recipe, but I subbed in cinnamon chips for the chocolate chips.

Let me tell you…it was one of the best substitutions I’ve ever made. It really just gives the bread an all-over hint of cinnamon and sweetness, and I’m totally in love with it.

As for today’s lunch, I packed some veggies and a good old fashioned standby…

The classic peanut butter and jelly. It was the only thing that sounded good to me last night, and it’s still lookin’ mighty fine today, so I’m thinking it was a good decision. ;)
