Bring On The Veggies! (& a Giveaway Winner Announced)

I’ll bet you guys are anxious to see who the giveaway winner is!?! Wellll, I’m gonna make you wait for it (actually, you could just scroll down to the end of the post to find out, buuuut I like to think that all of my loyal readers would much rather read about my eats today before finding out if they won something) Pshhhhh! Hey, it was worth a shot. ;)


I knew my veggie intake was a little low yesterday, so I decided to try to “beef it up” today with a nice big ‘ol salad.


I mixed together some green leaf lettuce, cukes, tomato, carrots, dried cranberries, 1 hard boiled egg (white only) and some fat free crumbled Feta cheese (maybe about 2 tbsp?).


Everything tasted so crisp and fresh, and the addition of the feta really brought the whole salad up a notch. Just a reminder that decadent doesn’t always have to mean “bad for you” my friends! :) The hard boiled egg tasted awesome too; I really need to remember these more often, because I hardly ever think to put them in. ‘Twas a delicious salad!


As a mid-afternoon snack, I enjoyed about half of my Raspberry Avocado Smoothie.


I had such a good time experimenting in the kitchen with this smoothie recipe today! Unfortunately, I think I ended up ruining any desire to stay in the kitchen much longer for dinner. It’s pretty hot and humid in the house again, so I had declared it another “Oven Off Limits” night.



Let the veggie consumption continue! I heated up a Morningstar Farms veggie burger, topped it with a slice of provolone cheese, and added a little lettuce, tomato, & onion to a lightly toasted whole wheat Arnold Sandwich Thin. And of course, you can’t forget the ketchup & mustard. ;)

Burger King ‘aint got nothin’ on me!!


On the side, I finished off the last of our ugly veggies.


It was an easy, light, tasty dinner. Perhaps there’ll be room for a little fro yo later on?? :-P

Question for the Night:

Do you find that your cooking patterns change with the weather/seasons?

I’d say I definitely don’t use my oven as much during the warmer months, but we’re much more likely to grill in the summer than in the winter. I also tend to have a lot more “easy dinners” in the summer months, like tonight’s. :)

Caitlin totally rocked her interview this morning. She was absolutely stunning, elegant, well poised, and beyond inspirational. I probably would have been rambling on like a fool!

I’ve always found Operation Beautiful to be one of the most amazing movements I’ve ever followed, but I couldn’t help but feel that much more inspired after watching this morning’s segment. Seeing just how far something as simple as a friendly, positive note can go, and the difference it can make, really is just phenomenal. Not only am I proud of Caitlin, but I am so especially proud to be a part of such a supportive, caring community of girls (and guys) who all believe that we really can make a difference. Changing the world, one Post-It at a time!

While watching the Today Show, I enjoyed one of the most incredible batches of overnight oats EVER!!


Last night when I got home from my softball game (which we WON, YAY!) I whipped up a quick batch of overnighters to enjoy for the morning.

In the bowl:

  • 1/3 cup wheatberries
  • 1/4 cup oats
  • 3/4 cup vanilla almond milk
  • 1/2 mashed banana
  • Golden raisins
  • Cinnamon & nutmeg


While the oats themselves were incredibly creamy and delicious, it was (once again) the toppings that stole the show.

  • 1 tbsp PB2
  • 1-1/2 crumbled Banana Oatmeal Chocolate Chip cookies! :-P


Holy DELICIOUS!! I think I need to have these cookies on hand at all times, if for nothing else than a topping for oats. The bites with chocolate chips were such a sweet treat!

I also had a glass of iced coffee (YES, finally made some of my own!) with vanilla almond milk. I didn’t do half bad! ;)

I was in more of a grazing mood today, so I didn’t ever really sit down to eat a full meal. Rather, I broke things up throughout the day. I actually don’t mind doing this sometimes, and if that’s what my body is telling me it’s craving, well then gosh darn it that’s what I’m gonna do! ;)

I had a honey flavored Chobani topped with some Bear Naked Fit granola.



Along with some strawberries + cantaloupe, which were both runnin’ on their last legs.



Throughout the rest of the afternoon, I snacked on some carrots & celery, another Banana Oatmeal Chocolate Chip cookie (yes, only 1 this time! ;) ), and some honey sesame Kashi crackers + PB.


Alright, somebody help make me feel like I’m not a total doofus (<—did I really just use that word?) Does anyone else have a ridiculously hard time opening up the bag for these crackers?!? Seriously, it happens to me every time! Even after I remind myself to be careful. Sheesh! :roll:



Jay and I have a softball game tonight, and since we both were originally thinking it was an early game, I hadn’t planned anything for dinner. Since we just found out that the game isn’t until 7:45, I debated on whipping up something quick; but to be perfectly honest, I’m just feeling a little lazy in the kitchen tonight.

I opted for a fresh veggie & provolone cheese sandwich, with lettuce, tomato, cukes, & basil leaves.


99% of the time, I buy 100% whole wheat bread to have in the house, but this week I noticed some potato bread on sale and decided to grab it. You see, the hubby nicely obliges to eating whole wheat bread every single week, and he is the one that eats probably 90% of the loaf. So since I knew he’d thoroughly enjoy it, I sacrificed ditched my WW bread for the potato this week. Growing up, potato bread used to be my FAVORITE. Surprisingly enough, after comparing the nutrition facts, it’s really not much different from whole wheat. It doesn’t provide as much fiber as my usual WW bread does, but calorie-wise, it’s about the same. Interesting…anybody else have any thoughts on this?


I enjoyed some ugly carrots & celery, along with some Lime flavored Food Should Taste Good chips. Really, I mean I’ve been reading about them all day long, how could I NOT have some? ;)


As soon as I brought my food in to eat “TV tray” style, I immediately had a visitor…

Jay and I have actually been joking that Cody is getting to be a little on the “tubby” side. He constantly wants to eat, and we’ve both been guilty of continuously filling up his bowl. Are we bad parents?? :oops:

Well, it’s off to softball – first playoff game of the season! Wish us luck!

Food Should Taste GOOD…Enough To Give Away!!

Since we’ve been on the subject of fun packages this morning, I should let you know that there’s another package I received in the mail a few weeks ago that I’ve been holding out on with you guys. :shock:

The very nice folks at Food Should Taste Good caught wind of my love obsession with their chips and sent me a fabulous sampler box to try some of their other flavors!


Since I’ve already had the Sweet Potato numerous times, as well as the MultiGrain, I decided to try a few new flavors, some of which I probably wouldn’t have bought otherwise: Chocolate, Blue Corn, Cheddar, Yellow Corn, The Works!, and Lime.

(I’m thinking the Chocolate chips crumbled on top of ice cream or even some Greek yogurt would probably be flippin’ fantastic!)

Did You Know…

…that I just tried out a delicious new recipe? ;)

Actually, the title of this post has more to do with what you’ll find after today’s lunch + recipe, but we’ll get there soon.

I found a recipe the other day for a chilled cantaloupe soup, that was just screaming “summer” to me, so I decided to give it a try today.

First, cube up about 3 cups of cantaloupe.


Then, get the rest of your ingredients ready to add to the blender.


Puree all the ingredients until they’re all smooth, and you’ve got yourself some fruity soup. If you want, you can serve yours all “snazzy-fied” like I did in a wine glass. Hey, we’re classy over here. ;)



Chilled Cantaloupe Soup with Lime, Basil, & Mint

(Original recipe can be found here, courtesy of Soup Chick)

  • 3 cups cubed melon
  • 1/4 cup plain Greek yogurt
  • 1/8 tsp ground (powdered) ginger
  • Zest of one lime
  • Juice of 1/2 lime
  • 1 tsp agave nectar or honey
  • 2-3 mint leaves
  • 2-3 basil leaves (optional, but delicious)
  • A pinch of kosher salt
  • 2-3 Tbsp water if needed to thin the soup to desired consistency

Combine all ingredients except water in a blender, and puree until smooth. Adjust consistency with water, if needed. Serve chilled. ENJOY! :)

Before eating my soup, I shared the rest of the leftover Pulled BBQ Chicken with the hubby, who came home for lunch. :-D


Rather than eating it plain, I decided to open up a new bag of Food Should Taste Good Chips.

LIME flavor! :-P


The flavor of the lime chips (which almost reminded of a margarita! :shock: ) with the BBQ chicken was actually quite an interesting, but totally delicious combo.


Probably one of my more random lunches, but it was all still tasty nonetheless. :)

So now, on to the real meaning behind the post title. A couple days ago, Nancy tagged me to do a “10 Random Facts” about myself, so after doing a little thinking, here are 10 that I found at least a little interesting. Hopefully you all think so too. ;)

1. I was a dancer for 18 years. I started when I was 3 years old, and did a combination of tap and jazz. I miss it all the time, and occasionally find myself “tapping away” in the kitchen while cooking or walking the aisles of the grocery store. Sometimes I think about going back; who knows? But I will always be a dancer at heart.

2. I hate snakes. I cannot look at them in books, on tv, and especially in person. I don’t have any horror stories of encountering one at any time, I just simply don’t like them. Luckily, I can handle other gross things like spiders, and have “saved the hubby” numerous times from them “trying to attack him”. ;)

3. I have a collection of Ernie dolls. I grew up with one Ernie doll and was completely in love with the orange guy my entire life. As he started to gain a little popularity and had more dolls made of himself, I started to accumulate them rapidly. I think I must have about a dozen or so different Ernie dolls, with “Tickle Me Ernie” and “Tumbling Ernie” definitely in the mix.

4. I was a semi-finalist twice in the Miss New York USA pageant. Yes, yes, I dabbled in the pageant thing. For me, it was more for the fun and experience of it, rather than winning. Actually, when I made it to the semi-finalist round, I got wicked nervous because I didn’t really want to win! I was surrounded by girls who had been training to do this kind of thing their entire lives, and totally could just not relate to that. So yes, it was fun, but definitely a thing of the past.

5. I married the love of my life. But you already know that by now. ;) I met him at 15 and he stole my heart.

6. I’ve been on TV. I’ve appeared in two local TV commercials in the past few years: one was for the CW channel, and one was to promote a local gym (which is actually the gym I’m now a member at – who knew!)

7. I’ve never broken a bone. The worst damage I ever did was sprain my wrist while sleigh riding when I was little. Other than that, no casts have ever been on my bones! (Don’t worry, I’ve already knocked on wood numerous times.)

8. I won a local contest to be on America’s Next Top Model. After being encouraged by many of my friends, I drove out last minute to the casting call, waited in line for 3 hours, tried out, and figured that’d be the end of it. A few weeks later, I got a call saying that I won the local contest and was going to be given the opportunity to meet the casting directors personally in NYC. I never heard back after that (which is fine, because the gals on that show are CRAZY!) but if nothing else, I got a free trip to NYC and had a fun weekend with my mom. :)

9. I live in a house that my grandfather built. The house Jay and I currently live in was built by my grandfather and great uncle back in the 1960s. It was the house I grew up coming to, to “sleep over

The Scrapbook Sneak Peek

I’ve been a busy bee today, hence the reason for my late post – so let’s get all caught up. :)

I started my morning off with a light breakfast before heading to the gym. In honor of my VitaTops Giveaway, I figured it would be fitting to incorporate one into my meal. I enjoyed my last non-chocolate Vitatop, with a smear of Blizzard Butter on top. It was phenomenal.




I also enjoyed a peach flavored Chobani, mixed with the last of my Honey Vanilla Almond granola. Time to restock. ;)


At the gym, I did an easy 20 minutes on the elliptical, followed by a fabulous session of BodyPump. My gosh that lunge track is absolutely killer! :shock":

After the gym, it was time to do some grocery shopping (was definitely lacking in the fresh produce!). Before anything else, I picked up some post-workout fuel in the form of iced coffee with skim milk. Delicious.



By the time I made it home and put the groceries away, it was time to make some lunch. I don’t know, do you guys think I’m having a slight obsession over grilled/roasted vegetables lately? ;)


I spread some roasted red pepper hommus on a whole wheat Arnold Sandwich Thin, and topped it all off with lettuce, Gouda cheese, and some leftover grilled veggies. I am in love with leftover grilled veggies on a cold sandwich.


On the side, I also enjoyed some of these babies: Food Should Taste Good Blue Corn Chips!


This was my first time trying the Blue Corn, but I was totally impressed. They use the same recipe as their Multigrain chips, which were previously one of my favorites. They’d definitely be great dipped in salsa or guacamole dip (*note to self*). :)


I also threw a peach into the mix, since it was pretty much on its last leg. The little guy started sweatin’ as soon as he came out of the fridge.

A Solid Attempt

As I mentioned earlier, today was Jay’s flag football team “Superbowl”, so that is where I spent most of my day. Wow, now let me just say, I love summer and I love the sunshine, but when it’s 90 degrees and I’m sitting in direct sunlight with no pool nearby, it’s not quite appealing. It was a scorcher out there today! 8-)

Unfortunately, the boys didn’t win the game, but it can’t go without saying that the refs were pretty darn awful. They blew so many calls during the game, especially in overtime when the QB dropped the ball and it went unnoticed? Umm, HELLO, even I know that that isn’t acceptable!

Despite the loss, I was still quite proud of the team, and of course my hubby. :-D He kicked a couple of great field goals and extra points throughout the game, with one being in the midst of some intense overtime. Here he is in action:

Thank god for our friend Erika, who had some umbrellas in our car. All of us lovely, dedicated fans scooched under them as much as possible during the game to try to keep cool.

Good Job Park Pub!! – Can you find Jay?!? ;)

After the game, the plan was to head back to the Park Pub, which is the team’s sponsor, and right down the road from our house which is always super convenient. I could not wait to get there because a) I was starving (thanks overtime!), and b) I needed a bathroom ASAP! But unfortunately, we were greeted with a packed house of people from a golf tournament and a graduation party, so that meant no room for us.:(

This brought Jay & I to a Plan B (which is not easy with 2 extremely warm and very hungry people) so we headed up the road for some subs from Quiznos. I ordered a turkey & swiss on wheat bread, with lettuce, tomatoes, & onions — and then I snagged some pickles and banana peppers to add on there too. Hey, the more veggies, the better! ;)

I was so hungry, I devoured the whole thing in no time.

Along with about a servings worth of these babies – I can’t get enough of these Sweet Potato Chips – absolutely heavenly! :-D

I’m starting to feel pretty tired from my lack of sleep from last night’s Girls Night, so I’m thinking tonight sounds like a good night to just relax on the couch with the hubby. :)
