Who Woulda Thought?

I’ll tell ya…for the second weekend in a row, I spent a majority of my weekend away from the computer, so I really don’t have all that much to catch ya’ll up on this morning…

I think having the whole photo publishing ordeal on Saturday was just the boost I needed to power down again and fill my weekend with friends, family, and just some regular ‘ol downtime. I even finished my book…and omgitwassofreakingood.

Honestly, I’m loving the new weekend routine. I can’t tell you just how often I go to sit down, read a magazine, or just chill out, and then suddenly realize that “I must do x,y, and z” on the computer. Blogs to catch up on, posts to write, Facebook pages to check…but hey, you know what?

It was all still there this morning.

Who woulda thought, right?

Last Night’s Dinner

Jay and I were both pretty pooped by the time evening rolled around last night, and since we had both been out for a majority of the day, we didn’t have much of a chance to plan out dinner. But, we managed to rummage through the freezer and come up with a little somethin’ somethin’.

We created a simple meal out of a box mixed frozen veggies, a couple of chicken sausages, and some pierogies, which all came together super quick.

The pierogies we had on hand were Mrs. T’s Whole Grain Sweet Potato Pierogies, which I must say, were pretty awesome. This was our first time trying out the sweet potato variety (we usually get onion and potato) and I am definitely a fan.

I almost feel like they could somehow be turned into some sort of dessert? Ohhh, the wheels are spinnin’ folks!

Breakfast

Today’s batch of oatmeal felt enormous, which I’m sure probably has something to do with the fact that I had almost an entire pint of blueberries in that bowl there…

Usually I’ll just add my blueberries on top of the cooked oats and will sometimes mix a couple in, but I wound up accidentally dumping in most of the container right towards the end of cooking. Oops.

Hey, no worries. At least it was one of the best possible ingredients to get heavy handed with, right? Winking smile

Breakfast also FINALLY included some real coffee – all weekend, I’d been stuck drinking some old, expired instant coffee packets that we happened to have in the back of our cabinet. We ran out of coffee on Thursday and I never got a chance to make it to the store until yesterday.

The instant stuff was alright in a pinch, but it was definitely nothing compared to my usual mug ‘o joe. Ohh, how I missed that.

I feel like this week is going to end up flying by on me, since I’m traveling on Friday, but I’m hoping to get a new workout or two headed your way soon. Be on the lookout!

Question for the Morning: How are you getting healthy this week?

  • Getting some good workouts in?
  • Planning out your meals?
  • Packing a few lunches?
  • Getting to bed at a decent hour?

Let’s make some healthy choices today to kick start a healthy week ahead!

Sleep Makes It Better

Happy Friday Blog Friends!  Seriously, I just love Friday’s — there’s so many fun things to look forward to! :)

After sleeping off my sugar coma, I woke up feeling much more refreshed and ready for a workout.  I think I may have actually had a little spring in my “roll out of bed” routine this morning. ;)  I did 45 minutes on the treadmill, alternating 1 min @ 7.5-8.0 mph with 2 mins @ 4.5 mph on a 4.0 incline.  It wasn’t super hardcore, but it felt great!

Breakfast this morning was ready in about 2 minutes flat…thank you overnight oats!

Sorry, there was no way to make this mess look any prettier…I promise, I tried my best!)

Last night while prepping my lunch for today, I figured I’d go ahead and make breakfast too.  Today’s overnight oats were pretty much an “everything but the kitchen sink” combo:

-1/2 cup oats

-1/2 cup vanilla almond milk

-1/2 cup water

-1/2 scoop Chocolate whey protein powder

-1/2 smashed banana

-1/2 tsp vanilla extract

-small scoop fat-free ricotta mixed with honey

-blueberries

-dried cranberries

-cinnamon

This morning, I simply took the bowl out, gave it a stir, and crumbled up 1/2 a piece of homemade blueberry banana bread to top things off.

Apparently, I like things in “1/2’s”, don’t I? ;)

I’m not positive how I felt about adding the chocolate protein powder.  Some bites I was totally diggin’ it, and other bites were kind of turnin’ me off.  I think I might pass on it next time — I like the idea of adding the extra protein, I think I just might have to invest in another flavor, like vanilla or something?

Today is also Coffee Friday as you know, so I’ll be grabbing one of these on my way into work!  LOVE Coffee Friday :-D

(yup, this is the same photo I used last Friday…I’m recycling) :)

Since I have kind of a busy day today (we’re having a picnic outside in the BEAUTIFUL 85 degree sunshine 8) ) I’ll give you guys a peek into my lunch a little early. :)

After yesterday’s sweets fest, I wanted nothing but veggies…LOTS and LOTS of veggies.  But when I opened the veggie drawer, I was presented with a lonely head of romaine lettuce and some grape tomatoes. Oh crap…

So, I went ahead and started with what I had, also adding in some black beans & some reduced-fat feta.

I knew that this alone was definitely not going to cut it, so I went to my second best option — the freezer — and came out with this:

Frozen veggies can actually be a very healthy option when fresh are not available (which I just talked about in my Examiner post earlier this week).  So I heated these babies up in the micro, let ‘em cool, and topped off the rest of my salad.

Now THAT’S more like it! :-P  I also mixed up a little dressing with some balsamic vinegar, a drizzle of EVOO, and a sprinkle of rosemary parmesan bread dipping seasoning (which I’m finding works GREAT for a quick homemade vinagrette).

There’s going to be some other healthy snacks today that I’m sure I’ll nibble on during the picnic, so I didn’t bother to pack anything else with me.

So, is anyone else as excited as me about Toy Story 3 coming out today??

I guess I’m a total kid at heart, but I absolutely LOVE Toy Story!  That Mr. Poatohead gets me every time. ;)  I’m really hoping I get a chance to see it at some point this weekend. (*hint hint* – Hubby)

Question for the Morning:

What’s your favorite movie of all time?

I’ve never had one favorite, but I have a few that I could definitely watch over and over:

-Ace Ventura When Nature Calls

-The Devil Wears Prada

-Toy Story

-The Sandlot
