Weekly Meal Plan {2/7}

I’m going to be totally honest with you all…I’m kinda shocked that I’m still going strong with these weekly meal plans.

Given my track record, I’ve never been super great at sticking with the meal planning thing; it’s typically come and gone in waves. But I’ll tell ya, things are really going well the past few weeks, and it’s pretty surprising just how much easier it makes our weeks! Less stress, less running around, easier/quicker grocery shopping…dare I say, I think I’m becoming a new woman?!

But anywho…here’s a look at what we had last week. Maybe you’ll find some inspiration for the week ahead!

Sunday: We snacked on some Superbowl appetizers but, honestly, I can’t even remember what they all were at this point.

Monday: Crispy Brown Butter Gnocchi w/ Meyer Lemon and Brussels Sprouts

This was our final Blue Apron meal from last week (recipe HERE) and it was so good. Definitely one I’d attempt to create on my own!

Tuesday: Crockpot Shredded Beef Enchiladas with brussels sprouts

The enchiladas were good, and super convenient to be able to pull from the freezer (took them out to thaw 24 hours ahead) but we definitely agreed that they tasted better when we made them fresh the first time.

Wednesday: Leftover Italian Style Tomato and Meatball Soup with a fresh loaf of Cheesy Italian Quick Bread

We actually waited to eat that meal until Lucas was in bed so it was enjoyed back at our old favorite spot…the coffee table. Winking smile

Friday: Takeout from DeFazio’s! We ordered a big house salad and their Chicken and Red Roasted Peppers Pizza with some added sautéed spinach. Oh. My. God. so good.

Saturday: We were *this close* to getting lazy and ordering more takeout, but we decided to use some of what we had and ended up making out awesome with some side salads and a batch of Chicken, Sweet Potato, and Spinach Quesadillas.

WIAW: Jumping Back In

After taking the past couple of weeks off from WIAW, I felt like jumping back in on the fun.

It’s not like it was all that exciting of a day of meals, but I did wind up snapping photos of them all yesterday so I figured, eh, what the heck. I always love being nosey and seeing what others are eating too. Winking smile

Breakfast

Was pretty much the nastiest thing you’ve ever seen…

Blech. I made a batch of overnight oats, which had soaked up all of the liquid overnight and needed a little extra almond milk. But, apparently, not that much almond milk. They tasted alright, and an extra spoonful of peanut butter added in helped, but they still were definitely not exciting. Good thing my iced coffee was decent…and check it out, I didn’t go to Dunkin’ for a change!

Mid-Morning Snack

The always-favorite PB + banana combo.

I’ll tell ya…I need to start buying chunky peanut butter more often. I know I like it, but we usually buy the huge jars from BJ’s and Jay only likes creamy. But now I’m thinking that my work PB stash may just have to be chunky.

Lunch

A big veggie-filled salad topped with grilled chicken and avocado with balsamic dressing and croutons.

And as a side note, if you’ve never purchased Butter Bliss lettuce, you MUST. No affiliation there at all. Just trust me you’ll try it. It’s SO good.

Mid-Afternoon Snack

Three belVita blueberry breakfast biscuits. Yes, the package comes in 4, but I was hungry on my way out the door for work and wound up ripping open the package and eating one then.

Maybe one of these days I’ll actually make myself enough time to eat breakfast at home before leaving for work.

Haha. Yeah…riiiiight.

Pre-Dinner Snack

Since Lucas has started eating more “adult” food and less baby food, I totally see how parents can say they wind up “snacking” more. Extra crusts from his PB&J sandwich? Don’t mind if I do!

Jay wound up getting called out for work unexpectedly, putting our dinner on hold. Since I was getting pretty hungry and wasn’t sure when he’d be back, I snacked on some of the tomato and basil FSTG crackers below.

And while I waited, I spent some time playing peek-a-boo with this handsome little guy.

That right there is his new thing…he “hides” behind his toy bucket with all of his stuffed animals with him. He seriously knows how to make me laugh.

Dinner

Once Jay got back, we fired up the grilllll.

Steak kabobs with zucchini, onions, and tomatoes, along with some parmesan noodles from a bag. Don’t knock ‘em. They’re good.

Dessert

As of the time I’m typing up this post, dessert is yet to be had. But if it’s anything like my dessert of choice on Monday, it’ll most likely be this. Mmm mmmmm.

When to Workout?

Happy Thursday, everyone! Hope the week is going well for you all so far. Things are going pretty super over here. This morning, we started off with some play time on the piano mat, followed by some tummy time. Tummy time is not Lucas’s favorite – I can only get him to give me about five minutes before he’s had enough – but we still do it everyday.

He’s been such a happy guy this week, and is starting to sleep even better for us at night. We started putting him to bed around 8pm and he’ll sleep until about 7am with one wake up to eat usually in the 3am hour. I’m hoping he continues this way (and eventually drops the night feed!), as it would be wonderful for when I go back to work in a couple of weeks.

But we don’t talk about that just yet. Instead, I’d rather just focus all of my attention on this little face, which seems to change and grow by the hour.

Yesterday included some pretty delicious meals, which I managed to snag some pictures of, so I figured I’d share with ya’ll. Breakfast started things off, which consisted of my coffee (duh) and a bowl of frosted shredded wheat with unsweetened vanilla almond milk and banana slices.

Shortly after breakfast and putting Lucas down for his morning nap, I headed down to the treadmill and completed another 3 miles (similar to this workout) plus some abs from my Best Body Bootcamp plan.

Ya know? I was thinking about this earlier today…I have no idea HOW I’m going to fit in exercise once I’m back to work. Sure, weekends will be fine, but during the week? I just don’t know?

Early morning workouts would be a little tough, since umm, the “girls” probably wouldn’t appreciate too much movement at that point. Then once I get home, I know I’d much rather spend time with my guy than be on a treadmill or something. Soooo, I don’t know. I guess it will take a little experimenting to see what works best. If anyone has any tips/thoughts, I’d love to hear ‘em!

But getting back to yesterday again…lunch was a yummy one.

I made a turkey and provolone sandwich with spinach, tomato, and honey mustard on a whole wheat sandwich thin, with some carrots, tomatoes, and hummus on the side.

I then proceeded to eat about three handfuls of candy corn while playing with Lucas in his swing but umm, yeah. Whoops.

Dinner was thrown together quickly, but turned out rather awesome for being on the fly.

We both still had a piece of leftover pizza from date night, so we heated those up and had ‘em with a couple of big grilled chicken salads (we buy frozen chicken breasts from Sam’s Club and keep them in the freezer for nights like this). Yum, yum, yum.

Now I’m gonna attempt to squeeze in a circuit workout before little man wakes up. Fingers crossed he stays down long enough!

10-20-30-40-50 Ab Workout

I’ve got a great ab workout for you all today!

Sooo, about that To-Do List from today…

  • Two clients at work
  • Meeting with a head pastry chef(!) <—more info to come! TONS of fun!
  • Picking up baking supplies
  • Baking some goodies
  • Attempting to figure out something for dinner(?)
  • Some decision making
  • Hopefully grabbing a little extra Vitamin D

Five out of seven ain’t so bad, even though I was really hoping to get some of that Vitamin D. BUT, I  did realize what else I was forgetting…my workout!

Shortly before that happened though, I was in need of something for lunch. The sun was shining, the weather was warm, and a craving for a smoothie bowl hit hard.

Today’s creation was my favorite Strawberry Almond Smoothie, bowl style, topped with some Kashi Go Lean Crunch and granola.

Workout

Once that digested, it was time for a workout. I took yesterday off, thanks to some super sore muscles, courtesy of BodyPump. Today, however, I was back in the game! I wound up doing a variation of Brittany’s 10-10-10 Quick Interval Workout (same format, just switched up some of the moves), followed up with a quick and fun little ab workout.

What To Do: Do 2-3 sets of the following exercises.

  • 10 sets of 10-second planks (resting knees for 3 seconds in between)
  • 20 floor leg lifts
  • 30 stability ball crunches
  • 40 side plank hip raises with dumbbell curl under side (20 per side)
  • 50 bicycle crunches

My entire core was on fiyah after that one. Winking smile

Post-workout snack…

A piece of whole wheat toast with PB + PB (peanut butter + pumpkin butter). Simple, yet so delicious.

Dinner

After finishing up a little bit of baking this afternoon, it was finally time for dinner. I took some chicken out of the freezer earlier and marinated it in some Italian dressing, so Jay took care of cooking that up while I put together a couple salads.

Why I Like Working On Wednesdays

Well, let me tell ya; this afternoon’s lunchtime soup was onnnnn point.

To be perfectly honest with you, I’m actually enjoying this Spinach Lentil Soup a whole lot more than I ever thought I would have. I mean, I guess lentils have never really called out to me all that much, but they are seriously rock stars in that soup. If it wasn’t for the yummy dinner I packed with me for tonight, I probably would have eaten another cup of soup.

When Jay and I had our yummy chicken dinner on Monday night, we he cooked up a little extra to have for during the week. This morning, I incorporated half of a breast (because, again, it was pretty large…and I’m jealous) on top of a nice veggie salad, including romaine, cukes, tomato, red bell pepper, carrots, and goat cheese.

I also ended up finishing off the rest of a bag of Kashi crackers, a fun-size bag of Skittles, some cinnamon roasted almonds (YUM!) and an amazing, much-needed Caramel-Mocha iced coffee from Dunkin Donuts, courtesy of mi madre.

Have I mentioned before how much working with my mom makes Wednesdays that much better? Well, in case I didn’t…it does. A lot.

I was really needing some mom-time tonight, and she definitely delivered on more than just the coffee front. Thanks again, Mom!

Paired with a vanilla Chobani and a crap-load of granola. Ohhhh yes.

Now let’s hope I get home soon so I can enjoy my snack and watch my favorite Wednesday night shows! ;)

Crunch, Crunch, Crunch

It’s so nice to know I’m not the only one with a killer sweet tooth after dinner!! I loved reading all of your comments earlier and wish you all the best on your goals. I am still feeling pretty good about my decision to go the next 40 days without sweets after dinner…

We’ll see what I say a couple days from now.

On to today!!

Breakfast

I’m sure there’s no surprise here, but I’ve got a whole loaf of Banana Raisin Pumpkin Bread to be eaten, folks!

So I went for it. But this time I got smart and added a little PB to both slices. Mmmm mmmm, GOOD. Smile On the side, I had a little fuzzy peach.

Lunch

To some of you, my lunch may look a little lame, but I’m telling you…sometimes cereal for lunch just totally hits the spot! Who’s with me???

Today included a mix of the usuals: Kashi Go Lean Crisp, Quaker Oatmeal Squares, Multigrain Cheerios, vanilla almond milk, plus strawberries and blueberries.

Dinner

As soon as I got home from work, I prepped a package of chicken tenders that we bought over the weekend and let them marinate for almost two hours before cooking them up and adding them to some big ‘ol salads!

My salad included a mix of romaine, spinach, cukes, cherry tomatoes, onion, baby carrots, broccoli, red pepper, dried cranberries, and 3 chicken tenders. I drizzled my salad with the same dressing I used to marinate the chicken, Kraft Roasted Red Pepper Italian with Parmesan. It’s another one of my favorites!

On the side, Jay and I finished up the last of our beer bread. I toasted it in the toaster oven, which made it pretty difficult to bite into without obliterating the roof of my mouth.

Jay and I laughed at the fact that we both felt like all we could hear throughout our entire dinner was “CRUNCH, CRUNCH, CRUNCH!” Talk about a noisy meal! I mean really, you’d think I’d learnConfused smile

Luckily, adding a little jelly to the top helped soften things up a bit.

I can already sense my sweet tooth starting to perk up, and it certianly doesn’t help that I’m finishing up a batch of chocolate chip cookie cups for my mother-in-law.

I’m hoping a warm mug of White Chocolate Kisses tea will keep any temptations subsided.

That, and the fact that I get to laugh all evening with my favorite Wednesday night sitcoms!! Open-mouthed smile

Too Hot To Cook

You would really think that 2 window AC units would help cool this house down a bit…

Nope, not so much! (Check out that old school thermostat! ;) ) It’s soooo warm in here, which meant that cooking was definitely off limits. I debated on doing the tried & true cereal-for-dinner, but my wonderful hubby suggested picking up salads from one of our favorite spots on his way home from work. How great is he?!? :-D

We both ordered grilled chicken salads – mine with every vegetable they have (which isn’t all that much) – cukes, tomatoes, peppers, red onion, & carrots, and no cheese. I also threw in a tiny sprinkling of dried cranberries.

One of our favorite parts of these salads is the garlic bread shell that they come with. Oh em gee, this stuff totally rocks my socks!

Along with dinner, Jay and I also decided to open up our bottle of Riesling that we bought over the weekend after our wine tasting at the Adirondack Winery. It was cool, crisp, and very refreshing on this hot hot night! :)

We both enjoyed our dinners, TV-tray style, while watching some old re-runs of The Middle (such a funny show!)

Cody also joined us for dinner – do you think the heat is getting to him a little bit?? Geez, he cracks me up sometimes! :-D

I’m off to go try to cool down a bit – perhaps a quick trip to the pool? Normally, the only way I’ll get into a pool is if it’s hot and sunny – but tonight could be an exception! :shock: We’ll see!
