WIAW: Uninspired and My Favorite Part of the Day

My favorite part of the day.

After work, once we’re all home together.

And, of course, it certainly helps when Lucas napped well during the day and is in a good mood! Yesterday, Jay showed Lucas how to juggle, and he thought it was just the best thing going.

And once that got old, we had to play his other favorite game of hide and seek under the blanket. That will still keep him occupied for a good 4-5 minutes at a time.

So since today is Wednesday and all that jazz, how about we do a little WIAW action? Today’s post features eats from Monday, so let’s get movin’…


Overnight Oatmeal + a grande blond roast from Starbucks


Added bonus: my coffee was a freebie thank to a reward I earned with my Gold Card (you get a free drink after 12 purchased). I feel so special. Or, rather, maybe it’s just further confirmation that I go there too often…

Mid-Morning Snack

Wasn’t too hungry but decided to snack on a Golden Delicious apple.


These apples are still, by far, my absolute favorite!


Another day, another salad. I think it’s about time I start switching up my lunches a bit. What have you guys been loving lately? I need some inspiration.


Then again, sometimes it’s the only sure way I get some veggies in me, depending on how lazy we are come dinner time.

Mid-Afternoon Snack

I found myself hungry for something a little sweet a couple hours later, so I grabbed a peanut butter cookie Larabar from my desk stash.


I’ve actually really been loving the Larabars these days. Most recently, I discovered the peanut butter chocolate chip one (I think that’s it…?) and it blew me away.

Pre-Dinner Snacks

These are almost always guaranteed, but because I’m usually rushing around, trying to feed Lucas, or attempting to get dinner ready, they don’t always get documented. Pretty sure that this particular day probably included some crusts from a PB&J sandwich and a handful or two of Snap Pea Crisps (because those are just freakin delicious).


We decided to wait until Lucas went to bed to eat dinner on Monday which, although a bit later than I’d prefer, was actually rather peaceful! On the menu was skinny shrimp and broccoli alfredo.


The color turned a little darker thanks to our not paying attention and slightly browning the garlic a bit more than we should have…but hey, it was still delicious nonetheless.

We occasionally get their catalogs in the mail and on this particular day, I decided to post a pic of it in an attempt to get Jay to go out and buy me chocolates for no good reason other than I wanted chocolate. And caramel.

Well wouldn’t you know, I get home from work on Monday and find a package on my door step…


Godiva!! You wonderful, wonderful people. They saw my post and ended up sending along this fab assortment (including the caramel truffle flight I had been craving!). Of course, I had to dive in and have a couple of pieces.

Talk about amazing (not only the customer outreach, but the chocolate, too). Thank you, Godiva, for fueling my caramel addiction.

WIAW: Successfully Finished

Hey folks! Happy Wednesday! How’s the week going for everyone so far?

We’re still truckin’ along over here – me and the babe in the womb, that is. Last night, I had a bout of some pretty painful contractions but, alas, I’m still off to work this morning. Nothing major happening just yet!

So I actually happened to document a full day of eats this week (who knew?!) so here we are, back to celebrate another lovely edition of WIAW. Let’s take a look…


A bowl of Kashi Go Lean Crisp (looooove this cereal!) with unsweetened vanilla almond milk + some decaf iced coffee.


Mid-Morning Snacks

A banana (which was supposed to go in my cereal but I forgot)…


and then about an hour later, a pumpkin pie flavored Larabar ALT bar that I found stashed in my desk. Thank goodness it was in there because I was staaaaarving yesterday morning.



A little random and a little lame, but that’s what I get for giving myself about two seconds to prepare my lunch in the morning so hey, what are ya gonna do?


A tossed a bunch of baby carrots in a baggie and then took a leftover mini sweet potato and loaded it up with basically anything I could grab quickly from the fridge…that included some salsa, a dollop of sour cream, and about a 1/4 of an avocado.


You know, it was definitely random but it wound up being quite tasty, if I do say so!

Mid-Afternoon Snack

Granted, as tasty as it was, that little lunch was nothing that was going to hold me over for too long. Thank goodness I knew that though and wound up packing a little mid-afternoon snack, too.


A vanilla Chobani with lots of fresh strawberries, raspberries, and blueberries. YUM!


This is no secret these days, but I really, really have no desire to do much in terms of dinners. Anything quick and easy is my go-to, and if there’s leftovers? Even better. We still have some grill food leftover from the 4th of July, so Jay and I kept it simple and cooked up some of that, along with a couple ears of corn on the cob for ourselves.


My grill food was two (gasp! How crazy of me?!) hot dogs (I found these lean beef franks at Target and they’re really good!) – one with a bun and half a slice of cheese, one without, both with ketchup and mustard. It totally hit the spot.


It’s a recycled photo but, as promised, I enjoyed the same delicious bowl of watermelon sherbet topped with mini chocolate chips as I did on Sunday.


And for those of you who aren’t quite sure of the sherbet + chocolate chip combo? TRUST ME…it is out of this world! Just like the real watermelon roll from Friendly’s! Winking smile

And, FYI…Jay and I have successfully finished off the carton. It is GONE. Boooooo.

An Unplanned Tangent

Funny story. And since today’s lunch was a boring, not very pretty looking salad that went unphotographed, then let’s get to that story, shall we?

So last night, as I was watching my shows, I also happened spend a little time scrolling through my Instagram feed. As I continued to scroll through, it seemed like I kept seeing more and more of this delicious, goodie-filled package that all of these awesome ladies were receiving.


After the first one or two, I was like, “Oh, that’s awesome!” but the more I kept seeing it, I have to admit…I was starting to get a little jealous! (which I mean all in fun because I certainly get my fair share of goodies in the mail – I’m just sayin’).

So wouldn’t you know, this afternoon my doorbell rings.

And guess what showed up at my front door.


WOO HOO!! I’m soooo excited to have received a goodie box filled with stuff from some of my favorite companies, along with some new-to-me ones too…


Extra sweet potato chips are always welcome in this house.


So are cute, warm, wool socks since Jay likes to make me freeze refuses to turn the heat up over 65 in the winter…


And, well, Justin’s peanut butter cups? Come to mamaaaa. Winking smile


If they’re anywhere near as good as the last Justin’s candy bar I had, then I know I’m gonna be in for a treat. These will be gone by this evening…I can guarantee you that. And I can also guarantee you that I’m not going to feel one ounce of guilt over it.

It’s funny, really. As I read more and more on the internet, I’m noticing that a lot of people and/or publications are starting to really pay attention to diet and/or sugar intake. I’m not judging any of these people at ALL, because I too am guilty of being under the same mindset – “Uh oh, holidays are coming! Better really cut back on my meals so I can enjoy sweets.” or “Only having sweets X amount of times each week.”

But I don’t know. This year, it’s different. Maybe it’s because of everything else that’s been going on this year. Maybe it’s because I’ve grown to be a bit more comfortable with being more lax about my diet and exercise (which I must say, really is a breath of fresh air most of the time to not have that “worry”).

Then again, maybe it’s because I just don’t give a crap anymore, and if I want some peanut butter cups or a couple pieces of leftover Halloween candy, then I’m going to have them.

As we go into this holiday season, I’m thinking of everything in moderation. Nothing is off limits. If I want sweets, I’m eating sweets. If I wind up eating chocolate in some form or another 7 days a week, then so be it. And what’s funny is that I actually trust myself to do this in moderation now, since there are no “rules.”

So I guess what this whole, unplanned tangent boils down to (the words just kept flowing from my fingertips, what can I say?) is this (aka, my little words of wisdom for today):

Let yourself enjoy what you want. Just don’t go buck wild on it all the time. Mmmmkay? Winking smile

Touring with Love Grown Foods

Alright. Let’s talk about one of the most awesome afternoons EVER right now.

On Friday, after arriving at the airport and meeting up with this gal, the two of us found a few other of our Blend Retreat friends and were quickly greeted with a snazzy pick up service, in the form of the Love Bus!


A few of us Love Bloggers had been in contact with the wonderful Maddy for a few weeks leading up to the event, and she most graciously offered to not only be our “chauffeur” for the afternoon, but also to bring us to visit the “Love Pad.”

This girl has more energy than I will ever have in my entire life. She is seriously just amazing, and the passion she has for her product only makes me “love the Love” that much more.


So our crew boarded the bus and began our trek from Denver to Boulder…but, of course, with a couple fun pit stops on the way.

First up: The Love Pad!


Maddy brought us to the place where all the “love” happens, and it was honestly just so cool to be able to see all the “behind the scenes” things that we don’t typically get to see as consumers.



One of my favorite parts? The fact that the main focal point in their office was this awesome ping-pong table, which they actually made themselves using empty granola bags. Umm, I want a ping pong table in my home office…


Maddy also showed us the evolution of the Love Grown Foods bags; at first, they started out buying bags in bulk and would manually place the stickers on each and every bag. Now, they have their bags specially designed. So cool.


We also got to see their production room, which I’m sure you’re wondering why the heck it looks so empty? Well, the company has been doing SO well, that they are actually in the process of moving to a larger facility that will be producing their granola in much larger quantities. I’ll talk more about that in a few…


The Love Bloggers! Alex, Sarah, Me, Alyssa, Bobbi, Lindsay, Brittany, and Maddy.


Before leaving from the Love Pad, Maddy was so kind to give us all an amazing goody box filled with things from some of their favorite Colorado-based companies. Again, these folks are just incredible.


They made Alyssa and I quite happy. Winking smile


We boarded the bus again, goody boxes and all (plus a creeper shot of me in the mirror there) and headed to our next destination.


Our next stop before heading to the Retreat brought us to the new facility where Love Grown Foods will be processed, Fresca Foods.


While we weren’t able to bring cameras into the facility, we had the opportunity to get a tour of the whole facility which was just awesome. Have you ever watched “Unwrapped” on the Food Network? Yeah, it was just like that…


We got to see where and how the products are tested, which was so neat, but we also got to see the production of a few different companies, including Larabar and Justin’s Nut Butter. We had the opportunity to try a Larabar fresh off the line (it was so soft and gooey, just like eating a ball of nut butter, honestly) AND we even got to meet Justin himself!


He happened to be at the facility that day, checking out a new piece of equipment they were bringing in to speed up the production of his nut butters. He was such a cool, down to earth guy, and it honestly took all of me to not be screaming “oh my god, I love your nut butter.”

Would that have been weird? Maybe…ahh well.

So after our tour of Fresca Foods, we were off to our final destination for the weekend…

Return of the Sweet

Can I just say that I am so glad you guys are loving Giveaway Week?!? I’m loving reading all of your comments on how you’re going to incorporate protein powder, commit to fit in 2012, and chow down on chia seeds. So much fun…and there’s still two days left! WOOT!

With all the giveaway talk this week, I haven’t gotten much of a chance to fill ya’ll in on the food end of things, so let me show ya some of the goodies I packed up for today.

Today marked the return of the sweet tuna salad! I’m tellin’ you guys…this stuff is good. REAL good; and it’s the best when scooped up with Wheat Thins. So much better than on a sandwich, IMO. You know, you’ll probably never guess what else I put in today’s batch…

Chia seeds! :)

Okay, maybe you would have guessed. I mean, we have been talking about them quite a bit today and all. Couldn’t taste ‘em at all, but I loved knowing I had some extra nutrients up in there.

I also snacked on a super messy, but super juicy and delicious pear,

and – check this out – a new flavor of Larabar… Cappuccino!

The nice peeps over at Larabar sent me a box of these earlier in the week to sample, as it’s going to be one of the new flavors that they’re launching in 2012. Be on the lookout folks, this flavor was pretty darn fantastic!

Oh boy…good news! Looks like I’m gettin’ out of work a little early tonight. Maybe I’ll get a chance to watch the American Horror Story season finale?? That show is just ca-raaaaazy!

It Helps To Have Thirsty Friends

I’ve gotta say, I really liked reading all of the words and phrases from this morning that drive you guys nuts. I’m in agreement with quite a few of you on some of ‘em, including (and also adding):

  • “om nom nom”
  • “cray cray”
  •  moist (yup, sorry Jordan, I’m one of them!)
  • “sorry I’m not sorry” (Alyssa, I feel ya on this one – I loved the phrase, but it just got wayyyy overused)

Too funny!


Thankfully, I got my act together this morning and found some time to add veggies back into my life. After yesterday’s carb-tastic lunch and dinner, followed by this morning’s breakfast, some veggies were definitely necessary…and boy were they yummy today!


Remember when I was on a bit of a crabmeat kick a couple months ago? Well my friends, it’s back, and it’s just as delicious as I remembered. This salad may have been a bit random on the combos, but I loved every bite of it.

  • romaine
  • cukes
  • grape tomatoes
  • baby carrots
  • roasted broccoli and cauliflower
  • sweet pickle relish
  • The Laughing Cow Light Swiss Cheese wedge
  • ~1 serving (1/2 cup) crabmeat


I warned you it was random, but it was super tasty!


On the side, I also packed up another golden delicious apple and a chocolate chip brownie Larabar.


In addition to that, guess what else I’ll be sipping on this afternoon?


Oh yes, that would be a Starbucks Caramel Brulée Latte, but I will be attempting to make mine a teensy-weensy bit healthier by going with non-fat milk and no whip (which saves 150 calories and 15g of fat)

**FYI: From now until November 20th, from 2-5pm, Starbucks is offering BOGO holiday drinks, so take advantage if you can!

I’ll tell ya…it definitely helps to have thirsty friends around! ;)

Figuring Out A Schedule

I’m so glad to see you guys are liking my Chocolate Raspberry Bars as much as I do. Seriously, they’re amazing…and they’re dangerous. Don’t say I didn’t warn ya!

So as I mentioned before, Wednesdays and Thursdays are my long days of work, so they require a little extra effort as far as planning meals goes. Since I’m away from home for both lunch and dinner, I need to make sure I’m on top of my game either the night before or the morning of, so I don’t end up either a) digging through the jar of cookies that stare back at me all.day.long here, or b) spend money on take-out food that I really don’t need.

Even though this is only my second week of work , I’m already starting to figure out somewhat of a schedule that works for me. Preferably, I like getting my meals put together the night before; that way, I can spend my extra time in the morning taking care of other blog- or house-related tasks. Mind you, I can almost guarantee that I will not always be as on top of my game as I am right now, but I’ll go with for as long as it lasts.

Last night after dinner, I figure that since I was already out in the kitchen, I’d just take care of getting today’s meals ready, so here’s what I’ve got packed up with me.


For lunch, I chose to have the salad , loaded with lotsa colorful veggies and topped with some pineapple peach salsa. I also ended up having half of a bagel that I packed last minute topped with a small smear of peanut butter (gotta get that protein in there!).


For dinner, I packed up a tuna salad that I whipped up quick last night. Depending on my mood, I like to make my tuna salad savory or sweet, and last night I was craving sweet…so into the mix went:

  • 1 can tuna in water, drained
  • 3-4 tbsp sweet relish
  • 2 tbsp plain Greek yogurt
  • red onion
  • baby carrots
  • sliced red grapes
  • dried cranberries
  • salt & pepper


Rather than make it as a sandwich, I brought some Wheat Thins to scoop it up with instead. I actually really enjoy eating it this way most of the time; it almost makes it seem like it lasts longer? Either way, it was a good batch and it didn’t last long enough. ;)

As for snacks, I also brought a peach and a Chocolate Chip Cherry Torte Larabar.


And to drink? Water. Lots and lots of water.

Aaaaaand I may have had a pumpkin spice coffee thrown into there at some point this afternoon too…just sayin’.

Tonight is Modern Family night, but I’m thinking that if I want to stick to this extra sleep thing that I may have to DVR it. I guess we’ll have to see what time I get home!

A Little of Everything

Well hello there, friends! Thank you all so much for your well wishes from this morning. I feel like I every time I turn around lately, I’m hitting you guys with a new change in my life. But hey, change is good, right?!

Alright, so I never got a chance to fill you all in on my morning, so let’s hop to it. First of all, I don’t know whether it was the excitement of the new job or what, but I was in the best freakin’ mood this morning. Typically, it’s not that I’m in a bad mood in the mornings, it’s just that I tend to be fairly quiet.

But I’ll tell ya, I had a great start to my day! Maybe the fact that I finished my monster 80-minute workout all before 7:00am had something to do with it?


Oh yes. Today was Day 16 of the challenge, and I was already well aware of what I had in store for me. This was actually the first time that I’ve gotten to try the Xtreme Core workout, and it certainly delivered. Not a whole lot of crunches, which I liked, and a whole lot of action on the obliques- I am a fan!

Post-workout, I showered and got myself ready for the day before diving into breakfast. I really wasn’t in the mood for anything in particular, so I sort of grabbed a little of everything, attempting to hit a few different food groups.


A Chocolate Chip Cherry Torte Larabar, half a banana with peanut butter, and a 2% mango Chobani. Dairy, protein, and healthy fats…check!


P.S. – Did you know that Chobani is coming out with 3 new flavors this January?? Word on the street is that there’s going to be Apple Cinnamon, Blood Orange, and- oh crap, I can’t remember the third. I think it’s something tropical?? Either way, they all sound awesome!


Being the first day at the new job and all, I didn’t want to pack anything that would require too much effort on my part, since I’m sure there will be lots going on. So I kept things easy with a pumpkin spice bagel topped with peanut butter, pumpkin, and banana slices.


I also have an apple and some baby carrots + cherry tomatoes, to round out the meal, also making it easier to space things out throughout the afternoon.


I’ll be back later tonight to fill you guys in on the first day!

Quickie 20 Minute Workout

I never got a chance to tell you all this afternoon, but I’m happy to announce that I survived my week 2, Day 8, double upper body workout this morning!


(Yes, that is me being totally dramatic.)

I knew that I would “survive,” but I was honesty I little nervous to see how my arms would be feeling after Saturday’s workout. Luckily, I woke up only slightly sore, and knew I would be able to push through. Surprisingly enough, it actually wasn’t as intense as Saturday’s workout (I think it was the lower body recovery workout that killed me before) and I felt motivated enough to add in a little extra cardio.

20 minutes was the max that I wanted to spend on the treadmill, so I put together a quickie routine that looked something like this.


You’ll notice that the speeds stay the same, but the amount of time recovering in between sprints gets shorter as you go. It was quick, intense, and perfect for when you need to fill up just 20 minutes. As always, just adjust the speeds to suit you (4.5mph is a fast walk for me).


I’m actually working again this afternoon, so I had to pack up the lunch to go today.


Last night, I put together a salad made of spring mix, tomatoes, carrots, corn, black beans, and a slab ‘o goat cheese. I also have some pineapple salsa packed up separately to add on top.


To go along with my salad, I have a peach and a Chocolate Chip Cherry Torte Larabar, one of which will probably be my 3:00 snack.


Hopefully I’ll be able to get a little bit of studying done this afternoon, too. I barely had a chance to crack open my book this entire weekend! Disappointed smile
