Make-Your-Own Tacos Night

**NOTE: This post was supposed to publish earlier this afternoon, but we came home to find our internet was not working! Now that it’s back, here ya go…just a little way late!**

Happy Labor Day weekend everyone! This weekend has been SO BUSY, I feel like I’ll be playing catch-up until the middle of next week! Let’s see what we’ve missed…

Friday night’s dinner was a Make-Your-Own Tacos night with our friends Joe & Kate. :)

Complete with all the fix-ins…lettuce, tomato, cheese, salsa, sour cream, seasoned ground turkey, soft & hard tacos

A delicious Fiesta Bean dip that Kate brought over. HOLY MOLY this stuff was fantastic!!

Of course, some homemade healthified guacamole was included devoured. ;)

And a few beverages to round out the meal. These seemed an appropriate match for the night. ;)

My plate: 2 soft tacos with a little bit of everything, guac & bean dip on the side, dipped with some Lime flavored Food Should Taste Good chips.

I actually ended up taking all the fillings out of the shells because they were kind of bland, so it was more like a taco salad which was perfectly fine with me!

I wish I had time for more, but we are headed out to celebrate with some friends and family on this beautiful September day. I love the crispness in the air today…it’s screaming FALL!! :mrgreen: So much so, that I just had to get myself a delicious pumpkin coffee while we were out earlier. It was fantastic.

Aaaand, I just made myself a quick veggie sandwich of lettuce, tomato, & cukes, spread with The Laughing Cow Light Swiss cheese, on the most amazing whole wheat bread. We picked it up earlier today on our trip to check out The Fresh Market.
