The Horror!

Oh my gosh…I seriously had no idea that so many people use ACV…and totally love it?! I’m so excited to try out some of your different ideas for using it in beverages, and I promise that I’ll be sure to share what I like and what I don’t. I think one of the first ones I’m going to attempt is Brittany’s idea, which she tells me tastes like liquid apple pie…

As far as food goes today, there hasn’t been much exciting happening over here. Around 12:30 this afternoon, I broke for a small lunch, which included another snack plate. I’ll tell ya, I can’t get enough of these things the past couple days.

Today’s plate included the rest of my deli turkey with a slice of provolone and mustard rolled up, celery + peanut butter, and a white nectarine. Lots of variety and good stuff happening there.

Immediately after lunch I also ended up eating two oatmeal raisin chocolate chunk cookies. I made a batch of these yesterday to share with a couple of our friends who came over to help Jay do some heavy lifting and clean up the back yard. Good help deserves good food as a thank you in my book. Winking smile

Later this afternoon, I had to make a quick run to Target…thanks to some sinus and allergy action happening between Jay and I this week (is anyone going crazy with allergy stuff?!?), we ran out of tissues…the horror!

(Fun Fact: I use a LOT of tissues)

So I went to snag some of those, some gum (also out – the horror!) and some apple juice to attempt that whole liquid apple pie thing mentioned above. Would you believe that I actually made it out of Target with the ONLY three things on my list AND spent less than $10.00?!?

I swear, that deserves a reward or something, right?

While I was out and about I also ended up eating this Blueberry Swirl Odwalla bar that I had stashed in the car (yes, I stash food in my car and purse for emergencies). I’d actually tried one of these before (it was in my swag bag from HLS) and it’s really good.

Once I got home, I was greeted with a nice little surprise waiting on my doorstep…

Later this evening, Jay and I have plans to meet up with some friends for drinks and dinner, but other than that, who knows? Either way, I’m looking forward to the weekend!

Peanut Butter Pumpkin Yogurt Dip

Yesterday, I spent a little time putting out some of my Halloween decorations, including these candy corn cuties. I ended up finding them at Kirklands a couple of years ago and they are easily one of my favorite Halloween decorations. I think I can totally relate to the cutie in the middle and definitely the one on the right.

I’m not quite sure what’s up with the appetite today; one minute I’m hungry, the next minute I’m not. I wasn’t in the mood to put together a full lunch, so I’ve been doing a little snacking throughout the afternoon.

Snack #1 – Odwalla bar

I received a small package in the mail a couple of weeks ago from Odwalla, including a few of their latest White Chocolate Macadamia chewy nut bars. I’ve recently sort of fallen in love with the Odwalla bars, and this one is just as tasty. My favorite part is definitely the white chocolate chips…no doubt.

Snack #2 – Apple with Peanut Butter Pumpkin Yogurt Dip

Despite the fact that my apple browned up in about .5 seconds, this was one fantastic snack. At first, I was just going to pair the apple with some PB, but then I decided I wanted a bit more volume. So I grabbed a few ingredients and got a little experimental…and it worked!

It may not be my creamy fruit dip, and I’m sure that others have probably come up with something like this before, but it sure is tasty and I liked it!

Peanut Butter Pumpkin Yogurt Dip for One

  • 1/4 cup yogurt (I used Chobani plain nonfat)
  • 1/2 tablespoon PB2 (I’m sure that regular PB would work just as well and probably give it an even creamier consistency)
  • ~3 tablespoons pumpkin
  • Dash each of Truvia (or any sweetener of choice), cinnamon, and pumpkin pie spice

Mix it all together and voila! You’ve got yourself a delicious, nutritious, pumpkiny dip for one.

I still had quite a bit left over after my apple was finished, so I scooped up the rest with some TJ’s’ cat cookies. Ummm, amazing!

Time for me to get back to my work…I’ve been pretty productive and don’t want to end up getting sucked into the vortex that is my Google Reader (since it’s definitely not difficult to do). Hope everyone is having a fantastic Monday!

Snacks and Studying at Starbucks

Lately, I’ve found my productivity dwindling a bit at home. Some days, I’m totally fine with staying inside and getting my studying done. Other days, I find it nearly impossible to actually sit down and get anything accomplished; I’m going down to switch the laundry, finding myself in the kitchen wanting to bake, or playing fetch with Cody.

Well, today felt like one of those days where I wasn’t going to get much accomplished at home…so I packed it all up and headed out to Starbucks.

Since my decision to head out was sort of last minute, I quickly grabbed some snacks to bring with me so I wouldn’t go hungry. I had my promised piece of banana raisin pumpkin bread before leaving the house, and plan on spacing out the rest of my snacks as I see fit.

I wasn’t sure how I’d feel about the bar, since walnuts are probably my least favorite nut out there, but it’s actually amazingly delicious. The walnuts are ground up pretty fine and the flavor is really, really great.

I’m currently snacking on the bar and sipping on my iced coffee (just plain, no pumpkin today…it’s too warm out) while getting ready to watch some study videos.

And then I’ll be going back to the flash cards, which are probably my favorite way to study. The actual process of re-writing the material has always helped me hold the information better, and I just really enjoy studying from cards rather than a whole page of notes.

I’m a very visual learner and will often recall information as I remember how it looked written (either on a card, on a page of notes, etc.). I’m almost sort of wishing my head was a little bigger right now to hold all of this information… Winking smile

Luckily, I’ve also got another little treat to “fuel” me through my afternoon study session…orange tic tacs!

Yes, that right there is what you’d call a “standing in line at Staples for too long and falling victim to the candy shelf” purchase. (Hey, at least I didn’t buy the 100 Grand that was staring me back in the face.) I’d always been a fan of orange tic tacs growing up, but I can’t even tell you when the last time was that I had them. I love how the orange ones are slightly chewy, unlike the rest of them. Mmmmm, they’re so good!
