Loving This Ice Cream

I loved hearing all of your feedback on yesterday’s fix choices! As one who hates to waste money, I ended up keeping the bicycle shirt and sent back all the rest (I was on the fence with that jacket still, but I just didn’t looooove it). I figure, hey, if anything it will wind up being a fun conversation piece. Or I’ll just be the butt of everyone’s jokes. Either way, I’m cool with it.

So I thought about putting together a WIAW post for you today, but I realized that I haven’t really taken pictures of a full day of eats in a while. Instead, I figured I’d share some recent yummy eats over the past few days, including some random photos I found in my phone. Like this one.

Okay, but back to the food…let’s talk about breakfast. Before the services for my 2 Nana’s on Monday, Jay and I stopped to grab some breakfast at Spillin’ the Beans.

One of their omelet specials was tomato, bacon, broccoli, and provolone with toast, and it just sounded too good to pass up. As usual, it was delicious. And the toast was doused in butter, making it 10,000x better…

As for lunches, I’m back on the salad train. And I’m totally loving it.

Yesterday’s salad was filled with the usual veggies, plus some rolled up deli ham, chunks of avocado (I wound up adding a little less than half of the avocado when all was said and done – SO good) and croutons. It’s funny how much I missed these. I guess it’s probably because we haven’t been doing the best at loading up on veggies at dinner, so it’s always nice knowing I’m at least getting a good amount of them at some point during the day.

I wound up purchasing them a while back when they were out of our favorite Inner Peas, and they were an awesome substitute. Jay would disagree, since he thinks they were gross, but don’t listen to him. Take my word (and Lucas’s)…they’re friggin’ awesome.

Now I don’t think I’ve mentioned this on the blog, but I did put it up on Instagram a while back…if you guys are looking for a fun snack for the kiddos (or yourselves, no judgment), you’ve gotta try these little frozen treats.

Often times, we’ll end up opening a food pouch for Lucas, only to have him decide that he doesn’t want it about two seconds later. At one point, I think we had about six opened, half-eaten food pouches in the fridge.

I got talking to his sitter and she said that she squirts them into little “drops” and freezes them…and it worked like a charm! I’ll pull them out ever once in a while for a snack for him and, boom, no food pouch goes to waste (because those things aren’t cheap!).

Finally, let’s talk desserts. For one, I bought a package of Twix eggs at the store the other day, and I have zero regret about that decision.

I know a lot of you guys go nuts for the Reese’s eggs that come out this time of year but, I don’t know, I guess they’re alright? Throw a Twix (or Snickers) egg at me though, and you’re immediately my best friend. Love, love, loooooove them.

Also loving? This flavor of ice cream from Ben & Jerry’s…

I spotted this at Price Chopper the other day (they were on sale for $2. something so of course I had to go look) and decided to grab it for me and Jay to share. Pretty sure it lasted all of two nights, but oh my, was it good while it lasted.

Finally, I’m going to leave you all with a couple non-food related photos taken of Lucas last night because I’m just in love with his new “do.”


I have his daddy to thank for that one after last night’s dinner, but I’m totally diggin’ it.

Weekly Meal Plan {2/22}

This was actually from when we made it about a month and a half ago and we froze our leftovers. Unfortunately, it wasn’t that great the second time around…super mushy and bland. We LOVED the recipe the first time around though, so I think we’ve just learned to either cut the recipe a bit or just keep eating it that same week!

Tuesday: Easy Crockpot Chicken and Biscuits + green beans a baby carrots

I absolutely love how easy that recipe is. I don’t totally love the condensed soups (they’re a bit salty) and I know there are recipes out there for homemade versions of it…but then it defeats the purpose of it being “easy” so whatcha gonna do? If you want a version of this without the condensed soups, my Chicken & Biscuit Casserole is a delicious one!

Wednesday: Brinner! We had omelets with hash browns, strawberries, and leftover biscuits from Tuesday night’s dinner.

Jay made the omelets because he always does them SO much better than me, and he filled mine up with loads of spinach, peppers, onions, broccoli, and cheddar cheese.

I absolutely love breakfast for dinner – I just wish I could get Jay to agree to having it more often. Although, I think if we always had bacon on hand, he’d be more inclined to agree. Winking smile

Friday: Jay ended up having to work late so on his way home, he picked us up from subs from DiBella’s.

I got the Chicken Philly (the same thing I got the first time we tried their subs after one of “Baby Tooth’s” last ultasounds!) on an everything roll with provolone, peppers and onions, lettuce, and tomatoes.

He got us “mediums,” and that there was only half of the sub! So I saved the other half for lunch on Saturday. Woop!

Saturday: Out to dinner with friends – details coming on Monday! Smile

I’ve already got my menu prepared for the coming week and am planning on getting my grocery shopping done this morning. The past couple of weeks, we’ve tried to cut back a bit with the shopping in an effort to clear out some of our frozen stuff, so I’m ready to get back to some fresh cooked meals!

Weekend Recap: A Huge Weight Has Been Lifted!

Good morning to you all! How’s it going so far today?

I’m going to be honest…it’s almost 9pm on Sunday night as I’m sitting to type this out and I’m a little pooped AND trying to pay attention to the Grammy’s, so today’s post may go a bit quick. Then again, it may not…we’ll see where it takes us!

Let’s start with Friday night…basically a combination of all of the best things ever.


We ordered takeout from DeFazio’s, popped open a bottle of wine, and caught up on some TV, including Thursday night’s episode of The Blacklist. OMG, do any of you watch that show?! The suspense is killingggg meeee…what happened that night?!?

Saturday morning started with some delicious egg sandwiches for breakfast, and then we were off to soccer for the little one.

Jay and I decided to take two cars to soccer so I could just leave right from there to take care of the grocery shopping for the week (I knew once I got back home I wouldn’t want to go back out again!).


I think we should be good to go for the week!

A little bit of Saturday afternoon was spent in the kitchen…I whipped up a batch of my favorite Banana Oatmeal Chocolate Chip Cookies, and immediately put half in the freezer. For whatever reason, I love eating them frozen!

I modified mine slightly, subbing in almonds for the walnuts (hate walnuts…), and did about half raisins/half dates. They are super tasty, and I’ll be happy to have these for snacks during the week.

Saturday night was pretty tame, not much going on. We made dinner, and then ended up starting to watch Breaking Bad on Netflix.


I think the show will be pretty good, but I think I’m having a bit of a hard time totally getting into it. Any other thoughts on the series out there??

We were able to sleep in a bit on Sunday (til almost 8am!), and shortly after waking, there were some delicious omelets made, courtesy of the husband.


Mine was made with two eggs and filled with spinach, peppers, onions, tomatoes, and cheddar cheese. Gahhh, why don’t I make eggs more often?!

After breakfast, Jay went out to shovel the driveway in anticipation of the extra snow we’re getting (oh my god, make it stopppp) and Lucas was obsessed with watching out the window. He’d sit, stand, sit, knock and bang on the window shouting “Da DAAA!”


It was adorable.


While Lucas took his nap, I did my workout for the day (this old circuit workout – another good one!) and then Jay and I continued working on the basement that we had started on Saturday. I already told you guys that this was our main goal this weekend, and I am happy to report that we made some HUGE progress.

We got almost a solid hour and a half of working in before Lucas woke up, but thankfully, we had just about all of the crap out of the way at that point, so he was able to come down and hang out with us while we worked. Then again, he wanted right in on the action, too…

So do you guys remember what the basement looked like a few weeks ago? Well, here’s our “not totally done, but we’re getting there” after…


And we’ve even got a great little spot carved out for our workouts. So excited!

We still have a lot of stuff that we need to get rid of, but we’ve got most of that organized and to the sides so that the room is a bit more functional. And, we’ve got some of Lucas’s rotated toys set up down there, so it’ll be an extra spot for him to play.


I can’t even tell you how GOOD it feels to get so much accomplished down there this weekend! It’s like a huge weight has been lifted from my shoulders.

But for now…I think it’s about time for me to wrap things up so I can get to watching these Grammy’s. I’ll catch you guys later on – have an awesome week! Smile

Impromptu 4th Annual Fall Festival

Well, it may have been a bit more subdued and thrown together, literally, within a couple of hours, but yesterday we celebrated our 4th Annual Fall Festival.

If you were to check out our previous fall festivals…

…then you’d see that this year is hardly even close to the others. Unfortunately, there were a few last minute cancellations, combined with other friends having plans, so calling this Fall Festival may be a bit of a stretch. In actuality, it was more just like our Mexico crew hanging out for the day with lots of good food.

As you can see, we definitely had lots! And for having thrown this together within about 4 hours, I’d say we did pretty well, wouldn’t you?



I also wound up coming across a recipe on Pinterest for Candy Corn Popcorn Balls. I already had all of the ingredients on hand, so I quickly threw these together before heading over for the festivities.


They really were super easy to make – pretty much like a rice crispy treat, but with popcorn and candy corn. I think everyone liked ‘em!


Of course, there was also plenty of seasonal beverages…


I enjoyed a pumpkin beer towards the beginning of the afternoon but then just decided to stick to water. Oddly enough, I wasn’t really feelin’ it yesterday…crazy, right?

The boys, on the other hand, were having fun experimenting with all sorts of fun girly drinks martinis. All of a sudden, my husband became a skilled martini maker…who knew?


He was making pumpkin spice martinis, chocolate banana martinis, appletinis…I couldn’t believe it?!

The funny part was that the boys were the ones enjoying them all afternoon, while the girls were drinking beer.

Of course, even if it was impromptu, if it was even slightly dubbed Fall Festival, then that meant there was one mandatory component…


Mal’s Chili. It would never be the same without it…soooo, sooo good.

We all spent most of the afternoon just hanging out and snacking, and a little later in the evening we broke out the games.


A few rounds of Scattergories and Taboo are always surefire ways to get in some good laughs. We were all talking about how we really need to bring back game night. We used to have game nights so much more often, but we got out of the habit.

This winter, we’re bringin’ it back! (hopefully)



This morning, Jay and I slept in for a bit before getting up for some breakfast. I asked him if he’d “pretty please” make me one of his amazing omelets (<—old school post alert! Complete with a shot of the old kitchen), and after my incessant begging and pleading, he finally caved. Mission accomplished.


I ordered a one egg + 2 egg white omelet, filled with red peppers, onions, tomatoes, spinach, and feta cheese. He jazzed it up with all sorts of yummy spices and whatnot, but I have no idea what they were…all I know is that they were scrumptious.


On the side, I toasted us up some whole wheat English muffins – mine with half peanut butter, half raspberry jelly.


And then I also proceeded to leave the toaster oven on all during breakfast, so now our house smells like burnt toaster oven scraps and Jay is convinced that I was trying to burn the house down. Woops. Winking smile

How’s everyone else’s weekend going? Today Jay and I have to finish up some stuff house work (aka, raking leaves…shoot me now) and then we’re off to my parents’ house to watch the Jets game. Hey, at least I have something fun to look forward to after dealing with the leaves.

In Between All The Chaos

Well heyyyyy there! Is is really 6:00pm already?!? Yikes!

Today has been full of running around and taking care of last minute business, but between all of the chaos, I’ve actually had quite a few good-for-me things too.

Mid-morning, I snacked on this fantastic afternoon yogurt bowl, complete with plain Greek yogurt, a diced pear, and Kashi Go Lean with cinnamon.


Shortly after that, I also had another cara cara orange…had to work on finishing up that produce!


A little while later, I squeezed in a workout in the form of my Speedy Interval Run. I only had about 30 minutes, and that was a perfect way to spend it. Whew!

Cody, by the way, has been eyeballing me all day long. He knows something’s up.


The little stinker better behave while we’re away…we all know his track record of being left at home is not exactly the best. Disappointed smile


The afternoon had me out running some errands, so I made sure to grab a little pick me up for my travels…hazelnut coffee with skim. YUM.


Amongst those errands? A nice, relaxing mani-pedi. Nothing like a beach vacation to use an excuse to further pamper yourself even more, right? Winking smile


For dinner, Jay and I did our best to finish cleaning out the fridge, which turned out to be rather successful. My meal was basically an exact replica of last night


I finished up the last of the veggies – SCORE!


And made myself an enormous turkey and cheese omelet…three eggs worth, baby!


Now, it’s time to finish packing up these suitcases of ours!


Oh man, I am ridiculously excited to spend the next week with this crew.

WIAW–Eating All Day Long

Okay, I think I’m officially on board the WIAW bandwagon! I really enjoyed participating last week and seeing so many other WIAW’s, so I just had to do it again. This month, the focus of WIAW is actually on adding more veggies and/or fruits to your daily meals…

Let’s see how I did, shall we?

Breakfast – 8:45am


Yup, you guys already saw this one. But it was honestly so good that I may end up repeating it for dinner tonight. Just sayin’.

Mid-Morning Snack – 11:00am


Two Wasa crackers spread with a wedge of The Laughing Cow Light Swiss Cheese and topped with strawberry slices. The sweet + savory combo with these was awesome. Seriously, try it out.

Lunch – 1:00pm


Surprise, surprise…another lunch time salad. What can I say? I’m sort of hooked.


Yesterday’s salad was full of mixed lettuces, cucumbers, grape tomatoes, shredded carrots, leftover green beans and grilled chicken from Monday. All topped with my favorite dressing…again. Oh yes, it was deeeeeLISH.


Mid-Afternoon Snack – 2:45pm


I had to be to work at 3:00 yesterday, so I wanted to be sure to squeeze in my afternoon snack before I left. Two pumpkin protein bars spread with peanut butter was the name of the game.

I also made sure to put together the ingredients for another work protein smoothie to bring with me.


2 scoops vanilla SunWarrior, 2 tsp chia seeds, half a banana, 6 strawberries


5:30pm – Snack #1


The strawberry-banana smoothie was later executed and enjoyed at work.

Snack #2 – 6:30pm

As good as my smoothie was, I was still missing out on that chew factor. Luckily, I had a pineapple SOYJOY bar in my bag that I was able to eat quickly before my next client. That photo is actually recycled from this summer, but you get the idea.

Snack #3 – 8:45pm


Seeing as though it was Valentine’s Day and all, and I even passed up on chocolate chip cookie cake AND chocolates at work (yes, I deserve a medal), I got home still craving a little of the chocolate stuff. To fulfill that craving, I added a dark chocolate Adora disk to my apple + PB plate.

I also decided to jazz up last night’s serving of Honey Cinnamon Peanut Butter by adding in a sprinkle of mini chocolate chips and Love Grown Foods granola.


It was the perfect little amount of sweet…not to mention, HOLY COW was it awesome.

As you can see, Tuesday nights are still a little odd on the “dinner” front, but I’m cool with it. I was basically eating all evening long, which I certainly have no problem with. Meals may not always be able to be conventional, but it doesn’t mean that you can’t make healthy snack choices!

A New Workout Partner?

Hey guys and gals! How’s the weekend going so far?

Things are going pretty great around here- nothing crazy, but just some overall good stuff. Gotta love that, right?

Last night, Jay and I headed out to run a few errands, which also ended up including a quick dinner out. After searching around a bit in my purse, I came across a leftover gift card to Moe’s, so you know what that meant…

I ordered a Homewrecker with chicken, black beans, and loads of veggies “streaker” style, only because I wanted the guac. Winking smile It was fantastic.


And because we hit up the Moe’s location with our favorite soda machine, we most definitely had to partake. Last night’s combo of choice? Sprite Zero Vanilla + Orange.

Dinner was actually chowed down after we did a little shopping at the mall. You know, it’s been a LONG time since Jay and I strolled the mall on a weekend evening and honestly? We don’t miss it one bit. Holy crap, did we feel OLD.

But there was some good news in our little shopping excursion…I found not one, but TWO new bathing suits at Victoria’s Secret for our upcoming trip to Mexico (even if they are the same suit, just in different colors).

I bought the suit shown in above in neon coral (on the right) and black and white stripe (not shown).

I absolutely fell in love with this suit because it actually fit perfectly (rare) AND didn’t make me feel like my a$$ was hanging out all over the place (I’m really not an itty bitty string bikini bottom type of gal). Mexico, here I come! Hot smile


This morning, Jay and I woke up without an alarm, which was amazing, and made ourselves a nice, lazy breakfast.


An omelet with sautéed broccoli, scallions, tomatoes, and ketchup for me.


On the side, I had another cara cara orange. I.am.in.love.with.these.things.


Once our breakfast settled, we both headed down to the basement for a workout.


Because I’m trying to stay away from upper body work, I stuck with some cardio + lower body for today:

Today was actually a little different than normal because Jay and I actually worked out together. Believe it or not, this never happens. For some reason, we both tend to do our workouts one after the other, but I must say that it was really nice having him down there with me today. It’s not that we even talked all that much, but I just really enjoyed having a workout partner for once. I think we may have to do this more often!

Side Notes

Today is off to a good start. I’ve already gotten some stuff done around the house, got a good workout in, and have a good breakfast in my belly. Holla!


This morning I was in the mood for some cardio, which is a good thing, since it’s what I had planned on doing anyways. I decided to do the running option on my latest Pyramid Treadmill Workout. I don’t know why, but that workout seemed extra hard today. Yikes!


I know I’ve told you all this before, but I really hate wasting food. For example, whenever I make a batch of my Crackled Sugar Cookies, you’ll see me with a big ‘ol whopper of an egg white omelet the next day because I don’t want them (the whites) to just get thrown away.

Well last night when Jay finished up the last of the pasta salad, I noticed that there was a lot of the cut up veggies left in the bottom of the bowl. So, rather than throw them away, I threw ‘em in a baggie and saved them for this morning’s breakfast!


I picked out the carrots and cucumbers from the mix because, while I’m all for different omelet combos (especially this amazing one), I didn’t think they would be very good.


So instead, this one ended up getting filled with green peppers, red onion, grape tomatoes, dried basil, salt, black pepper, and some added goat cheese, which gave it the perfect amount of creaminess. Oh yes, and ketchup. Definitely can’t forget about the ketchup. Winking smile


Along with my omelet, I ended up having a cherry pie Larabar after spotting it in the cupboard and getting an intense craving for it.


I also had a delicious mug of coffee, which I actually need to tell you about. The other day, I noticed that the lovely Tina had added some pumpkin pie spice into her coffee grounds, which made me realize that it’s been forever since I’ve done that with cinnamon. (I’d do the pumpkin pie spice, but Jay wouldn’t go for that.)


The cinnamon adds an awesome hint of flavor to the coffee, which I’ve done for the past two days now. I’d definitely recommend giving it a try (thanks for reminding me, Tina!) Smile

We’re a Friendly Breed

Waking up to work out at 6am on a Saturday is not a normal thing for this gal. However, when you’ve got a breakfast date with two fun ladies at your favorite breakfast spot, that’s enough to get your booty movin’!

This morning’s workout consisted of a mini date with Jillian and her six-pack abs, followed by a quick 2-mile run on the treadmill. Everything about today’s exercise felt extremely challenging…perhaps my body telling me to cool it with the way-too-early for a weekend workouts?

Whatever the reason, I was happy to have it done and got myself ready to meet up with these lovely ladies!


Katie and I have already met up numerous times, but this was my first time to meet the lovely Brittney! A few weeks ago, she mentioned that she was heading up this way for a wedding (she’s a lucky North Carolinian!) and asked if anyone was around to meet up. Us bloggers really are a friendly breed, aren’t we?

We met up this morning at Café Madison which, as you may already know, is home of my absolute favorite Red Raspberry Oatmeal Pancakes. Of course, I started off with a mandatory cup of coffee…


and then had another. Smile

I don’t know why I didn’t just stick with my gut on the pancakes, but I made a game-time decision and ended up going with a make-your-own-omelet.


I ordered an egg-white omelet with peppers, onions, tomatoes, and spinach. Alas, they did not give me my egg whites, and the omelet was actually pretty greasy. Total bummer. Sad smile


Luckily, they make some killer home fries,


and some amazing homemade honey whole wheat bread, so I ate most of these.


I can’t complain, since I was with some amazing company, and really spent the majority of the time chatting away anyways! Since Brittney is from Charlotte, she graciously offered to show Jay and I around if we were ever to make it down that way…

Once I got home, I got to work on some cupcakes that I’m making for a birthday party for Jay’s grandma tomorrow. I’ve got 4 dozen to bring…one dozen down, three to go!

Now Jay and I are headed out for the day to hang out with some good friends and family, with a possible dinner outing later this evening. It’s sure to be a fun day!

Special “Just Because” Breakfast

Wow, where did my Sunday go??? Seriously!

It’s now 8:45, and it’s the first I’ve been home since about 10:30 this morning. Sheesh. :shock:

I started my Sunday off on the right foot by getting my bootayy to the gym for a good sweat sesh, which looked a little somethin’ like this:

  • 30 minutes total body strength training
  • 30 minutes elliptical (interval course)
  • 10 minutes StairMaster (fat burning course)

It was a great workout, and definitely helped work up my appetite for a special breakfast date. :)

Jay and I headed down to one of our favorite spots, Spillin’ the Beans, for a special “just because” treat.

They’re usually pretty busy on a Sunday, but we must have gotten there just at the right time, because we were able to squeeze into a little table in the back corner of the room. Score! :-D

I immediately ordered myself a nice large coffee, with one pump of Maple Spice syrup (I wanted pumpkin spice, but they were OUT! Oh the horror…)


It may not have been pumpkin, but it definitely still provided that same “fall spiced” flavor that I love so much. Mmmmm.

While waiting for our food, Jay and I perused through the Sunday paper and clipped some coupons. It passed the time perfectly!


For my breakfast, I decided on the “Create Your Own” omelet, made with egg substitute and filled with spinach, onions, and tomatoes. I opted for no cheese, since I’m rather picky when it comes to cheese in my eggs. I only like a tiny bit, and I decided I’d be better off just nixing it, rather than being disappointed by it overtaking the eggs.


My omelet also came with a choice of toast, so I ordered the wheat…and let me tell you…some of the best wheat bread I’ve EVER had. Sooo good!


I’d say it was definitely the perfect post-workout meal. :)

After breakfast, Jay and I took care of some grocery shopping, then spent the afternoon at my parent’s house for a little Sunday Football. It wasn’t the normal spread today like it has been the past couple weeks, but it was still a great time.

Now I’m sitting down, watching my Jets, and snacking on a toasted Thomas’s bagel thin with some chunky peanut butter.


I can’t believe it’s time to go back to work already…this weekend absolutely FLEW by!!
