Attempting To Be More Prepared

Well hello and good morning to all of my favorite readers! How’s everyone doing today?? Fun Fact: one month from today until my birthdayyyy!  But who’s counting?

SO I don’t know…maybe it’s from the extra sleep I got last night, but I am feeling pretty peppy, as if you couldn’t already tell. Last night included lots of wonderful sleep; I was in bed just before 10pm (Jay basically called me a party pooper – I didn’t argue that comment one bit), and spent about a half hour reading before giving in to the sleepiness. Nine hours later, and I was almost a new woman…until about 6pm tonight.

Before heading to bed though, the two of us did manage to have a nice coffee table dinner + movie night at home.

We decided to make another small dent in our Omaha Steaks order, so he cooked up a piece of chicken and I chose a piece of marinated salmon. The salmon was good, but it was actually pretty salty; I’d say I ended up eating about three-quarters of it. On the side, I had a mini bowl of veggie stew as my attempt to get some veggies in for the day.

Shortly after dinner I was hungry once again…my hunger was out of control last night.

And that tweet from Melissa totally struck me funny and literally had me laughing out loud. Maybe she’s right though…I guess we’ll find out tomorrow with a new update! Winking smile

So I wound up eating a bite-size leftover brownie, a small mug of cereal, and a handful of the most dangerous cracker slash cookies on the planet…and I probably could have kept going if it wasn’t for my strong desire to head to bed.

Breakfast

For the first time in quite a while, I woke up with a craving for oatmeal for breakfast. Besides the cup of hot oats I had a couple days ago, I haven’t really been feelin’ the whole “make my oats from scratch” thing lately.

But today’s bowl was GREAT. I made a bowl of custard oats the same way I make my pumpkin custard oatsjust minus the pumpkin – added in a few blueberries, and topped it with half of a crumbled piece of pumpkin bread. So good.

To go along with my oats, I brewed myself a chai latte in the Keurig, and I must say that it is pretty delicious.

Today we’re actually heading out of the house (we didn’t venture out at all yesterday with the snow) which will be nice, because I think my asthma is telling me I need some fresh air. This afternoon, we’re meeting up with a few of our cousins for lunch, and then I’m *hoping* I can convince him to stop at the grocery store with me quick to pick up some stuff for the week.

If you’ve been reading for any amount of time, then you probably know I’m not much of a meal planner. However, now that things have changed quite a bit over here, I’m going to attempt to be at least a little bit more prepared. My first area of inspiration was Pinterest – sometimes I like to check and see what recipes of mine people are pinning, and I came across a few this morning that are possible contenders:

We really only need meals for Tuesday, Thursday, and Friday (Monday is a NYE party, and Wednesday is our anniversary dinner) so those may just be my winners. We’ll see what the boy says. Winking smile

Fun News From Last Night

Well good morning! How’s everyone doing on this lovely Friday? Hey, I don’t know about you but TGIF! Who’s with me?!?

So last night, Jay and I knew that our good friends, Brian and Mal, were going to be in “the neighborhood” and we told them that they should stop on by to the house. Since we weren’t exactly sure when they’d be arriving, we kept dinner easy by working on some of the leftovers in the fridge.

I heated up another bowl of Vegetable Stew and paired it with a random piece of potato bread toast that I had suddenly gotten a craving for. Everything was great, especially the stew, thanks to the added shredded cheddar cheese. YUM!

Shortly after eating, our newly-engaged pals arrived!

We all had a couple of drinks (beer for the boys, Chardonnay for the gals) and grazed on a few last minute snacks that I was able to scrounge up (I was totally unprepared).

As we were sitting and chatting away, catching up on all of their wedding planning, we found out some very exciting news

We are both so, so excited and honored that they asked us to be a part of their wedding. It’s going to be a BLAST, to say the least!

Breakfast

After a short shift at work this morning, it was time to come home for some grub (<—I actually hate that saying, no idea where it came from?). Today’s first meal of the day isn’t going to look a whole lot different from yesterday’s, my friends…

When there’s pumpkin bread in the house, that pretty much always takes precedence over anything else. (Remember my week-long stint a few months back? I’m a creature of habit, I tell ya.)

BUT, that doesn’t mean that it can’t be enjoyed in moderation and paired with something healthy, right?

Right! So along with my sweet, peanut-butter topped pumpkin bread, I enjoyed two scrambled eggs with sautéed spinach and tomatoes. Savory + Sweet = Awesome.

Along with a hot cup of coffee (you should be proud Jay, I came home from work and made my own, thankyouverymuch!)…

…and my vitamins. As of late, my vitamin intake has consisted of one fish oil and one women’s multivitamin from GNC (sometimes I also take a probiotic, but I didn’t today).

I’ve decided that I like this combo much better than the Vitapaks I had tried out a couple of months ago; nice and simple.

On Air!

Good news…I didn’t stumble all over my words and sound like too much of a bumbling weirdo this morning. Score!

Even though we were only there for a short little while, we had SUCH a good time this morning. Myself and another trainer (who is training Darren, seen above) visited the B95.5 Breakfast Club this morning to talk a little bit about health, fitness, nutrition, and the fitness challenge that both Laura and Darren are in (they’re both competing against each other for their favorite charities).

All four of us had a few good laughs on air for our segment, even more good laughs OFF the air, and still stuck around for a little while after the segment was over just to hang out.

It was really fun to see all the “behind the scenes” stuff that takes place, and I’m not gonna lie…I felt pretty bad a$$ with my snazzy big headphones and microphone.

As a side note…funny story. Do you guys remember back in October when I made my Judging Debut? Well Laura was actually another one of the “celebrity” judges, and I had first briefly met her back then. Small world, right?!

So before I left the house this morning to head to the radio station, I made sure to give myself plenty of time for a good breakfast. Turns out, it was a good thing I did, because that was one of the questions that we were both asked while on air!

Today I had some scrambled eggs mixed with fresh spinach and a wedge of The Laughing Cow Light Swiss Cheese.

And, of course, since you know there’s pumpkin bread in the house right now, I most definitely had to incorporate a slice of that topped with some peanut butter (plus another sliver while my eggs were cooking).

Mid-morning, once I got home from my radio debut (haha), I changed quickly into my workout clothes and got in today’s Bootcamp workout. Today called for the same type of cardio as Tuesday did, so I did that same treadmill workout, minus 10 minutes. I was losing steam (and interest) toward the end, so I decided to just cut things a little short. No biggie. I’m excited to get back to some more weights tomorrow; seriously, I can’t get enough of ‘em!

Post-workout and shower, it was time for some lunch, and let.me.tell.you…this salad was top notch. Lots of veggies, some tuna for protein, and a little sweetness with some dried cranberries. YUM!

I think some of my most favorite salads are the ones that I prepare as a “chopped” salad, which I originally got the idea for from my first visit to Salad Creations; I simply toss all of the ingredients into a big bowl and then go to town on it with a pizza cutter.

It chops up everything nice and small and gets it all nicely incorporated so you get a little bit of everything in each bite.

Despite this salad feeling like a never-ending bowl, I’m still thinking that another piece of pumpkin bread is in order.

Yep, that’s enough thinking. Going to get that right NOW! Winking smile

Question for the Afternoon:

What Is Wrong With Me?

Oh.my.gosh.

Can we talk about perfection for a quick minute? Because I’m pretty sure that’s what tonight’s evening involved in the Horan kitchen.

First, things started with some delicious Chardonnay that I sipped on while preparing dinner (it has been WAY too long since I enjoyed a glass of wine while cooking).

Then there was this absolutely incredible dinner…along with another glass of Chardonnay.

But about this dinner…what we’ve got right here is a healthy chicken and broccoli alfredo. Absolutely delicious.

I initially came across this recipe in my Every Day with Rachel Ray magazine for Skinny Fettuccini Alfredo a couple of weeks ago, and Jay and I have been dying to try it ever since. Well…tonight was the night.

I followed the directions for the sauce almost exactly, only making a few minor substitutions, but then I also added in some grilled chicken and roasted broccoli for some added protein and nutrients.

I also still had some leftover spaghetti squash in the fridge, so I made my bowl a mix of spaghetti squash + regular spaghetti (because we actually didn’t have any fettuccini on hand).

Jay and I are both major alfredo fans (especially him), and for being a healthier version, this dish definitely hit the spot. If you’re in the same boat as we are, then I’d totally recommend giving it a try!

And as if that wasn’t enough, I even did a little baking all while in the midst of cooking dinner.

Would you believe that I hoard Trader Joe’s items? (You may also remember that I like to hoard gourmet English muffins too, but anyway…). So get this…

That right there is a loaf of Trader Joe’s pumpkin bread, that was made with a mix that has been in my pantry since October 24, 2010. Yes, 2010. I bought it when a group of us made a road trip out to the TJ’s is Massachusetts, and I’m actually almost a little embarrassed that I still hadn’t used it up until tonight.

Even worse? I also still have an unopened bag of Powerberries that have been in the pantry since March 27, 2011, when Jay and I made another road trip out to Massachusetts. Seriously, what is wrong with me?

Does anyone else hoard goodies from anywhere, or am I the only cool kid who caught that memo?

So far, I  must say that Santa has been very good to both Jay and I…starting last night on Christmas Eve. After a delicious dinner at Jay’s Aunt’s house,

This morning, Jay and I woke up bright and early to get a start on the day’s festivities. This was actually the first year for both of us that we spent Christmas morning together and not at our parents’ houses, so it was extra special. :)

We enjoyed some nice warm coffee and my mother-in-law’s homemade pumpkin bread while opening up some gifts.

Jay and I were only exchanging a few small gifts this year, since we’re pretty much considering our soon-to-be new kitchen as our Christmas present to each other. But he did such a good job of finding things he knew I would LOVE:
