One Of Our Favorite Dinners

Before anything else, I feel like I must address the events that unfolded at the Boston Marathon yesterday. My heart aches for all of those affected by the bombings that occurred. But I must say, I am so impressed with the current trend on social media which seems to be focusing more on the heroes from the tragedy in Boston, rather than try to point fingers. In the words of my friend Kate, thank you to all the first responders–YOU are newsworthy. Stay safe. Pray for Boston.


So after a weekend full of what seemed like endless, delicious carbs, it was actually nice to change things up a bit yesterday and reintroduce a bit of color into my meals. It’s so, SO easy for me to fall into the carb habit these days – it’s probably one of THE biggest cravings I have (besides Mexican) – so most days I do need to make a solid attempt at incorporating the good stuff. The key? Planning ahead!

Sunday night before going to bed, I made sure to make yesterday’s lunch and snacks. I didn’t snap photos of everything yesterday, but I did capture a few…including my lunchtime salad.


All sorts of veggies in there with plenty of avocado and roast turkey. And pickles. Duh.

This weekend, Price Chopper had BOGO strawberries, so I’ve been making sure to incorporate some everyday in an attempt to eat them all before they go bad. So far, I’ve already finished up the first 1lb. container (in 3 days, mind you) so I think I’m doing okay.

As a little sweet after-lunch snack, I munched on some strawberries and green grapes.

A little while later, I was surprised by one of my co-workers with a delicious piece of coffee cake…alllll for meeee.

Turns out, it’s actually a Raspberry Vanilla Coffee Cake from Chocolate Covered Katie, and OMG it was soooo good. She even included some chocolate chips in there which were a pleasant surprise. I snacked on about half of it later in the afternoon at work and then wound up eating the rest of it once I got home from work before starting dinner.

What? I thought it was a good pre-dinner appetizer. ;)

On the menu for dinner last night? One of our favorites over here…Tilapia Tacos with Roasted Corn Relish.


Each of us had two tacos (which were actually made on the smaller sized LaTortilla Factory Low-Carb tortillas – I’m really not a fan of corn tortillas) filled with lots of tilapia, relish, some cheese, and the very last of the leftover garlic aioli sauce (aka, we’ve been putting it on everything).

Dinner was super delish, and I even have leftovers which may wind up being my dinner tonight since we’re going to have to eat quick. We have plans after work to meet up with some pals to go see The Place Beyond the Pines, and I’m wicked psyched! Aaaaand, they even have $1.00 popcorn tonight…Sign. Me. UP.

I Must Tip My Hat

You know, I usually pride myself on being able to (somewhat) withhold urges to binge on crazy-good food.

I can usually abstain from downing a box of cereal in one sitting (90% of the time, my boxes of cereal get stale before I can finish them), shovel handfuls of granola one after the other (although I may be tempted), or eat cookie after cookie once they’re baked. Sure, I enjoy enough (and yes, sometimes a little more than enough) but nothing that I would tend to deem “overboard.”

That was…until these showed up at my door.



This afternoon, I received an unexpected package in the mail from Wild Harvest, who is actually the gold sponsor for this year’s Healthy Living Summit.


The box had all sorts of their organic goodies, including applesauce, peanut butter, raisins, salsa, black beans, spices, granola, and…animal crackers.


I seriously couldn’t stop. They aren’t like any other animal cracker I’ve had before; usually I find them to taste more cracker-like with a subtly sweet flavor, but oh no…these things were more like a sweet little butter cookie, which I’m assuming must have some sort of magic potion baked into them.


I think it’s called the “you can’t stop at just one half a bag.” Winking smile

I must tip my hat to these little fellas…they are one of the first goodies in a LONG time that has caused me to fall victim to the “I’ve started and I can’t stop” fiasco. Well done, Wild Harvest. Well done.

I give ‘em until tomorrow evening…tops.

Thankfully, I didn’t only subsist on animal crackers this afternoon.


I was starving by the time I got back from my doc appointment earlier, so I quickly put together a little salad duo: a simple salad of spring mix, sugar snap peas, carrots, and grape tomatoes with a serving of cheesy crab and shrimp salad on top.


No dressing needed…it was great on its own.

Shortly after that salad, I wanted something sweet so I put together a little bowl of fresh strawberries with a wedge of The Laughing Cow cinnamon cream cheese spread.


This was a great little afternoon snack for the sweet tooth.

Tonight, Jay and I have a softball game, which is most definitely going to be a scorcher…which means that this is probably going to be the first time this season where I’ll have to actually wash my uniform shirt. Is that gross? Ahh, oh well.

National Candy Month

Iiiiiiiiit’s…breakfast time?


You’d think so, by checking out that bad boy, but that is my delicious lunch from today. I was in the mood for eggs, what can I say?

This scramble was filled with lots of good stuff: broccoli, onions, diced tomatoes, deli ham, and a slice of provolone cheese.


The cheese got all melty throughout, making for one heck of a yummy meal.


Man, I’ll tell ya. When in doubt, go with an egg scramble. It never, ever fails me.

On the side, I snacked on some fresh strawberries from the Farmers Market.


They are literally the best strawberries I’ve had all season. So fresh and sweet.

After my breakfast-like lunch, I was still craving a different kind of sweet – preferably of the chocolate variety – so I decided to break into a new stash of chocolate I recently received.


And of course Cody photo bombed…but anyway.

I was recently sent this assortment of Belgian chocolate bars from Dylan’s Candy Bar and have been waiting patiently to dive right in.

Yoga DVD Giveaway Update

Thanks to an email from a reader yesterday (thanks, Seema!) it was brought to my attention that there was a small error in the yoga DVD giveaway. When I chose the two winners yesterday, my computer somehow pulled up an older, cached version of the post, so it only showed 182 entries when, in fact, there are 253.

I reached out to Acacia to see if we could somehow make good on my error, and they have graciously offered to throw in one more DVD pack! So this time, I chose one winner in entry #’s 183-253 and the winning entry is #241.

FYI – speaking of cached versions of my page. I’ve been working on the cache plugin that I have installed to make sure that this gets resolved and I *think* we may have it on lockdown. However, if you notice it’s still not working, try clearing your own browser cache (aka, history) and that should do the trick!

Cupcakes & Cody

Sorry for the not-so-exciting post title…I had nothin’.

Well, it’s been a fairly quiet morning around these parts today. I finished up a variety batch of cupcakes (6 cookie dough, 2 lemon-filled, and 4 raspberry filled with raspberry almond buttercream) to bring somewhere this afternoon,


and spent the rest of the time chillin’ with the Code-man. Can you guys spot his fetch toy? His food dish is actually his favorite spot to store it for some reason. He’s too funny.


And have I ever told you guys what a lazy bum my little man is? This is actually how he eats his food. He paws it out of the dish, a few cookies at a time, and then eats it off the floor.


Jay has tried numerous times to “train” him otherwise, but it just isn’t happenin’. He’s like an old man stuck in his ways. Smile

These berries right here make me so happy. I swear, I could eat these babies every day. I’m so happy they’re starting to taste really good right now.

Happy 1 Month Anniversary!

I just realized as I was sitting down for this morning’s post that today is the 1 Month Anniversary of me starting my blog!

I can’t believe a whole month has gone by…boy the time sure does fly!  But I’ll tell ya, I’m LOVING every minute of it, and can’t wait to keep the good stuff comin’! :-D  Thanks to everyone who’s been reading and supporting me so far in my journey!

Ok, so man, it is so chilly this morning!!  If the sun wasn’t shining, I’d think it was more like February than May…BRRRR!  Luckily, I got my heart pumpin’ & temperature risin’ this morning with a nice workout.  Yes folks, that’s 2 mornings in a row!  That doesn’t happen too often ;)  I decided to take a break from running, and did my 45 minute treadmill interval walk.  This is always such a good workout, and the incline really helps bump up the burn! :)

You’d think I’d’ be craving a warm bowl of oats this morning, but I was actually in the mood for some cereal!

I had a bowl of Quaker Oatmeal Squares (LOVE these things!) with 4 ginormous strawberries & some Silk Pure Vanilla Almond Milk.

I’m kinda bummin’ this morning, since hubby just left to go out of town for a few days for work. :(  Luckily I have a few things happening to keep me busy until he returns.  Looks like it’s just me and this guy for a couple days!

Green Monster Strikes Again

Good Morning!  I was up ‘n at em bright and early this morning to try to get my workout in early since my afternoon my include some visitors! :)  Boy, I’ll tell ya, I really have a love-hate relationship with early morning workouts.  For the first 15 minutes of getting up or attempting to get up, I hate them!  But then, once I’m up and moving, and especially once I’m finished, I feel like a million bucks!  And best of all, I’m DONE for the day and don’t have to worry about showering again, etc.  I can just come home from work and relax! :)  This morning’s workout consisted of a 3 mile interval run on the treadmill.  The legs were a little sluggish, but I kept truckin’ along! ;)

After being so WARM this morning after my sweaty workout, I knew I wanted something COLD for breakfast.  First thought – GREEN MONSTER! ;)

Today’s Green Monster was the same as the previous one I made, so if you want to check out the ingredients, check out this post!  I was feeling famished after the run and getting ready, so I also made myself half an Arnold sandwich thin with peanut butter & raisins.  The “monster” is doin’ it for me right now, so I think I’m going to bring it to work with me for a mid-morning snack.

Mmmmm, delicious!  I really wish I could get Jay to try this, because I truly do think he’d love it!  However, he is completely GROSSED OUT by the green color & idea of spinach in a smoothie.  Any suggestions on how to get him cave?? ;)

I snapped a couple photos of today’s lunch last night while I was making it (yes, I was on top of my game last night!)

Vanilla flavored Chobani (ahh, how I love my Chobani!  It’s been so long!) with fresh sliced strawberries and granola.  Also included is some carrot and celery sticks with hummus.  Not pictured, I also have so Kashi honey sesame crackers (BEST.CRACKERS.EVER) & an orange.
