My Favorite Christmas Movie

Last night, Jay and I had a great time hanging out with some of our good friends for a delicious, homemade Christmas dinner. I just love finding reasons to celebrate the holiday even more!

We were greeted with lots of snacks when we arrived.


Including a batch of Julie’s White Chocolate Peppermint Popcorn that Sarah made.


The popcorn was delicious, and just incase anyone was curious, the popcorn is just as delicious if you forget to add the extract to the melted chocolate and end up drizzling it over the top instead. Winking smile


For dinner, our friend Jim and his wife, Courtney, made us a full homemade Italian dinner, complete with Jim’s homemade sauce and meatballs. Everything was so, so good and I definitely went back for seconds of that garlic bread. I swear, I could eat Italian food


After dinner, the guys ended up playing poker while the girls sat and chatted, ate some amazing chocolate bark which is very similar to this recipe, and watched National Lampoon’s Christmas Vacation.


I really think that has to be one of my favorite Christmas movies, ever. That Chevy Chase is quite a character and he honestly makes me think a lot of my dad. Smile

This morning, I made myself a yummy wafflewich for breakfast, and now Jay and I are getting ready to head out for the day.

A little shopping, a little family time, a little hair revamping, and a little football. A perfect Sunday, indeed!

Time To Rock This Menu

Ooooooo baby! It’s Thanksgiving Eve!!

Seriously, where does the time go? If it wasn’t for the fact that my fridge is packed full of food, I probably would not believe that tomorrow is Thanksgiving. Luckily, I was able to get today off from work in order to get the preparations underway. I know I talk about To-Do lists quite a bit, but today’s To-Do is no joke; I’ve definitely got my work cut out for me!

So since I’ve got a full plate today, I figured I’d still stick with my usual schedule and start things out with a light workout. I wasn’t in the mood for anything overly strenuous today, so I decided to roll with my Walking Pyramid Treadmill Workout. Always a good one!

Post workout, I had to run out to the store quick to pick up a few last minute essentials for today…including coffee. We actually ran out yesterday (imagine the horror?!) so I solved that problem rather immediately.


Along with my fresh mug of brewed coffee (because the first batch after opening the bag is amazing) I enjoyed a yummy wafflewich.


I swear these taste 10x better after I take a day off from them. So so good.


Now, I’ve got my butter at room temp, my counters cleared, and my arsenal of recipes ready to go…

Out On A Weeknight

Okay, so I’m a tad sleepy this morning…

I guess that’s what I get for staying out until midnight to watch my beloved Jets lose in last night’s game against the Broncos. Ughh, talk about a disappointment.

But hey, ya know what? It was still an awesome way to spend my evening!


As soon as I got off of work last night, I picked up Jay and headed over to the Recovery Sports Grill to watch the Jets game (they weren’t on regular cable, so we wouldn’t have been able to watch it at home). The two of us grabbed a table and quickly ordered a couple of beers.



I was psyched to see that they actually had one of my favorite beers from one of my favorite local breweries on draft here, so there was no chance I was turning that down.

I mean, really, how can you turn down a beer with a cherry at the bottom, right?


It’s soooo delicious.

Oh yeah, and you like my scarf styling? I call it “The Courtney,” which is basically how to wear a scarf with no style at all.

Obviously, I really didn’t pay much attention to last night’s video that I posted. Winking smile


After about forty-five minutes of catching up on the day with Jay and watching the game from about eighty-seven different tv’s, we were greeted with some pretty fantastic company.

and our friends Ryan, Scott, and “little” bro Dan came to join us! They had just finished up bowling and came down to watch the game with us.


As soon as they got there, we ordered some snacks to share at the table.


The sweet potato fries were ahhhhhmazing. The plate wasn’t very big, which is probably a good thing because I most likely would have kept eating them if they were in front of me.


The spinach & artichoke dip was pretty good too, and I had my fair share of that.


As soon as the game was over, we packed it up and headed home. Despite the fact that they lost, it was still a super fun way to spend a weeknight…even if I didn’t get into bed until after midnight and am a bit sleepy this morning.


Thanks to last night’s late bedtime, I skipped out on a morning workout. I may end up squeezing something in later today, but I’ll cross that bridge when I come to it.

Breakfast this morning was another wafflewich (recycled photo) which was eaten rather quickly…


I’ve actually got an earlier morning than normal today because I’ve got somewhere super important to go today. It’s kind of exciting, too! Smile

Holy cow, what a morning. Whew! Luckily, it was nothing but a little inconvenient, but first, let me catch ya up to speed on this weekend.

Change of Pace

Now, back to this morning. In typical Monday-morning fashion, I rolled out of bed nice and early to head to BodyCombat. Today’s class seemed to focus a lot more on upper body than lower body, which I really enjoyed, and I have a feeling that my shoulders will be sore tomorrow.

After class was over, I left the gym and made a pit stop at the grocery store. I used to do this a lot over the summer and seemed to somehow get out of the habit; but honestly, grocery shopping at 6:45am on a Monday morning is fantastic. The store is empty, the shelves are freshly stocked, and there’s no waiting in line. It’s perfect!

I got myself in and out of the store within a half hour (impressive for me) and then headed home. By this time I was pretty hungry, so I was ready to get back and make some breakfast. Well, wouldn’t ya know that traffic was backed up in every single direction that I could possibly take to get home. It was bumper to bumper for everrrr.

As it turns out, apparently there was a propane truck that had overturned, causing lane closures on a majorly busy highway, during morning rush hour. My usual 12 minute drive home took me 46 minutes today. Forty-six minutes…three times my normal commute…which is not easy to handle when you’re hungry and have to pee!

Luckily, me and my bladder made it back in time, and I whipped up a quick breakfast.


I stocked up on some more waffles this morning, so there was no question in my mind on what was going to be on the menu today.


I love me some wafflewiches. Smile


I also picked up another new-to-me item this morning: Silk Pumpkin Spice soymilk.


I’ve had my eye out for this for a while now and today is the first day I actually found it. It’s super creamy, has a great pumpkin flavor, and is tasting mighty delicious in this morning’s mug of coffee. I’ll bet it’d be great just heated up and enjoyed on its own. Yum!

I have a few things to do today, including a trip to the DMV. Hopefully it’s nice and quick like last time. Happy Monday!

Fun With Numbers

Today is 11-11-11; how fun is that, right? I think I’m feeling like I need to do everything in sets of 11 today or something. I’ve actually always been really into number things like that, especially when it comes to dates and times on the clock.

As soon as I realized the date of our wedding, I became slightly obsessed with it…

And all growing up (and still to this day), I try to come up with math facts when I look at a digital clock. For example, I would look at the clock below and think, “okay, 4 x 2 = 8, or, 8 / 2 = 4.”


I don’t know, I suppose I’m sort of weird with that stuff? Unless anyone else wants to tell me they do it too so I don’t feel bad that I’m not the only one?


Yesterday, I didn’t get much of a chance to show you my eats, but one thing in particular deserves a quick mention.

I made another salad which was, in one word, amazing. I used the other half of my grilled chicken breast from Wednesday and paired it with romaine, cukes, bread and butter pickles, diced pear, dried cranberries, and goat cheese.


I also packed up some Newman’s Own Light Caesar dressing to have with it (even though I wish we had balsamic right now) which was delish.


The combination of ingredients in that salad was perfect; I really need to put fruits in my salad more often!


Workout & Breakfast

I woke up this morning in the mood to move, but didn’t feel like doing anything too strenuous. That left me with two of my favorite, low-key options:

It was perfect for what I was craving today!

Breakfast was another repeat of yesterday


Boring? Maybe. Delicious? Abso-freakin-lutely! I also made sure to toast my waffles a bit longer today which made things 10x better. This gal will definitely be picking up some more waffles on her way home from work today. Winking smile


Along with wafflewich I had a banana, my steaming-hot coffee, and a side of pilgrims.


Today is my short day of work and then it’s time for the WEEKEND! Open-mouthed smile

It Makes Me Want To

Happy Thursday, folks! How’s everyone doing this morning?

Me? I’m a bit sleepy. Not enough sleep last night with too early of a morning wake up call. Nonetheless, I still managed to make it to BodyPump this morning, got in a great workout, and will hopefully be able to get to bed a little earlier tonight. Fingers crossed.


Hey, guess what? More egg cheese and jam sandwiches comin’ atcha today! But I did make a slight change with today’s by swapping the English muffin for two waffles.


I noticed the other day that the waffles were beginning to get a little freezer burned, and I definitely don’t want that to happen again.

After taking the first bite of my wafflewich, I wasn’t quite sure how I felt about it; it lacked the extra crunch that my English muffin gives me, but it had a subtly sweet flavor that I really liked.


Final verdict? I loved it more with each bits and I will definitely do it again…I’ll just be sure to toast my waffles a bit longer.


While I was waiting for my egg and waffles to cook this morning, I also ended up snacking on a few cinnamon sugar nuts.


I picked up this container of Emerald Sweet & Salty mixed nuts at the store over the weekend (FYI: These containers are 50% off at Price Chopper this week) and have been snacking on them a bit throughout the week. They’re pretty darn amazing, and my favorite are most definitely the sweet glazed almonds…you know, the ones that are most definitely the worst for ya, of course. Winking smile


On another note, there’s something that I’ve been meaning to mention this to you all for about a day and a half now; some of you already know or may have even noticed, BUT…

After months of putting it off, swearing that I would not allow myself to get sucked in, I have finally caved…and joined Pinterest.


To all of you that warned me about it being a total time suck, so far I’ll say that you’re about 75% right. I have definitely found myself pinning away, but I’m still not totally sure how the whole thing even works. I’m sure once I really get the hang of it, then I might be in trouble, but I don’t know.

So far, I’ve noticed that it,

  • makes me want to be crafty

But then again, it also kept me from eating a second snack last night after finding some amazing and motivational fitness pins…

So maybe it’s not all that bad of a thing? Winking smile
