After taking a few weeks off for the holidays, I’m excited to bring back my weekly meal plan posts!
This past week was still a bit in limbo, and didn’t really involve much in the sense of meal planning. I had remembered that we had a Blue Apron delivery scheduled (not sponsored, bought with our own money), so knowing that we had three nights covered, I sort of took stock of what we had in the house and made due with some of that. Which, in actuality, didn’t turn out half bad!
Sunday: Simple grilled chicken wraps on a LaTortilla Factory tomato basil wrap (they are one of my favorite wraps!) with lettuce, provolone, and bread & butter pickles.
We had had a heavier lunch at my parents’ house that Sunday while watching football, so we kept dinner simple.
Monday: Homemade chili (I’m totally sharing this recipe with you guys SOON!) topped with some freshly shredded cheddar (SO much better than the bagged stuff) and plain Greek yogurt w/ some leftover dinner rolls on the side.
Tuesday: Three Cheese Calzones with Kale & Tomato Sauce
These were really good and super filling, too. Plus, the recipe made 3, so Jay had another one to have for lunch the next day!
Wednesday: Chicken & Udon Noodle Soup with Napa Cabbage & Dried Lime + a glass of lemonade
This soup was definitely NOTHING like I’d ever attempt to make on my own but it was SO good. Jay and I both loved the recipe and agreed we need to try cooking more of a variety at home.
Thursday: My mom’s homemade mac & cheese
She makes some of the best mac & cheese, I swear! And it’s always different, depending on what kind of cheese she has on hand. Plus, the added tomatoes are totally my favorite.
Friday: The most delicious Cobb salad from Brown’s Brewing Co.!
Saturday: Juicy Lucy Burgers with Frizzled Onion & Romaine-Walnut Salad
Jay and I both agreed that out of all of the Blue Apron recipes we’ve had, we think that this one had to be one of the most decadent. The burgers were stuffed with fresh cheddar and topped with “frizzled” onions and a garlic aioli mayo. It was INCREDIBLE and definitely a bit of a treat for a Saturday evening!
For the coming weeks, we’re going to try to focus on having a couple meals be more veggie based, since we’ve still been lacking a bit in that department (coming off of the holidays is tough, right?!). So we’ll see what I come up with…since I still haven’t planned out this coming week yet.

We have our very first Blue Apron scheduled for delivery this Thursday. I am excited to try their meals and start cooking for ourselves again as well. We’ve been eating out too much since the holidays.

I love cobb salads and that Noodle Soup looks really good. It’s always fun to mix in different ethnic recipes like that. Helps add variety for sure. We’ve been doing pizza once a week and are actually getting bored with it so making a calazone would be a fun mix up. I’m looking forward to spaghetti squash and meatballs this week.

Now I want a calzone! Yum yum! When we got to try Blue Apron I loved that we always had leftovers, and that’s saying a lot for my hubby who I think eats like a horse!

Those calzones look absolutely delish!! I may have to try them this week. I don’t do much meal planning as its usually just cooking for me, but I like to have a couple ideas in my back pocket so that I don’t end up ordering takeout or eating out.

Love that you guys had Chicken & Udon Noodle Soup with Napa Cabbage & Dried Lime. I have never tried Blue Apron because I am currently living overseas in Japan. The Japanese truly heart Udon Soup! Much of the Udon noodles here are served cold and I am not a fan of cold noodles. My favorite is their ramen! It is NOTHING like what we think of as ramen.
